KENTUCKY BOURBON ONION DIP
Bourbon-lovers rejoice--here's a dip you're going to flip for! Start by mixing your favorite bourbon, McCormick® Onion Gravy Mix and water in a bowl. Add melted butter and caramelized onions--plus sour cream and mayo for a creamy texture. It's sweet, tangy, and the perfect dipping partner for chicken fries or chips.

- Mix water, bourbon and Gravy Mix in small bowl until well blended. Set aside.
- Melt butter in large skillet on medium heat. Add onions; cook and stir 10 minutes or until softened and golden brown. Stir gravy mixture into skillet. Bring to boil. Reduce heat and simmer 5 minutes or until thickened. Remove from heat. Let cool.
- Mix sour cream and mayonnaise in medium bowl. Stir in cooled onion mixture. Sprinkle with green onions. Refrigerate at least 1 hour. Serve with chicken fries or chips.

- In a thick bottomed pan over medium-low heat caramelize the onions with the olive oil, stirring often (saute for a long period of time to release the natural sugars). This will take about 15 to 20 minutes so be patient. Use small amount of water to help release the sugars that will stick to the bottom of the pan. Add all other ingredients and bring up to a warm temperature*. Remove from the stove and puree with a hand blender or food processor. Season with salt and pepper.
- *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

Bourbon and caramelized onions make this dip a winner for game day or any occasion, and Greek yogurt and ricotta cheese lighten up this usually mayonnaise heavy party favorite.

- In a wide heavy-bottomed pot, heat the olive oil over high heat. Add the sliced onions and the teaspoon of salt. Saute the onions, stirring often until they begin to soften, 5 to 6 minutes. Reduce the heat to medium and continue to stir and cook the onions until they begin to color, about another 15 minutes. Add 1/2 cup Maker's Mark to the pan and stir in. Reduce the heat to low and cook the onions for another 30 to 40 minutes, stirring occasionally, until the onions have colored and caramelized. Remove the onions from the pan and spread on a plate or baking sheet to cool in the fridge.
- Using a food processor or blender, combine the ricotta, yogurt and remaining 1 tablespoon Maker's Mark, and process until smooth. Transfer the mixture to a bowl. Fold in the sour cream. Once the onions have cooled, rough chop them briefly. Fold into the mixture and season to taste with lemon juice, sugar, salt and pepper. Serve the dip cold with crudite and chips.

BEST EVER FRESH ONION DIP
A lighter onion dip that tastes fabulous. Serve it with pretzels or raw veggies. Since I only make this dip with the fabulous Texas 1015 sweet onions, this recipe must be a Southwestern U.S. recipe.

Steps:
- Stir cream cheese and sour cream in a medium bowl until blended.
- Heat oil in a medium skillet.
- Add onion, salt and pepper and cook, stirring occasionally, 8 minutes or until onion is soft, but not browned.
- Let cool completely.
- Stir into cream cheese mixture along with sliced green onion.
- Cover and refrigerate at least 30 minutes for flavors to blend.
- It's best if chilled over night.
