ZUCCHINI BREAD (BREAD MACHINE)



Zucchini Bread (Bread Machine) image

This is a quick bread, not a yeast bread, for a bread machine with a quick bread cycle. From Cuisinart. Posted in response to a request.

1/3 cup vegetable oil
3/4 cup shredded zucchini
2 large eggs, room temperature
1/3 cup brown sugar, packed
3 tablespoons granulated sugar
1 1/2 cups all-purpose flour, unbleached
3/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup chopped walnuts
1/3 cup raisins

Steps:

  • Place ingredients in order shown in bread pan and select Quick Bread/Cake cycle. Select 1 1/2 lb loaf size. Press Start.
  • After 4 minutes, scrape down the sides and bottom of the bread pan with a rubber spatula. Allow cycle to continue.
  • When baking is completed, remove and turn out onto wire racki to cool.
  • Wrap in plastic wrap after completely cooled.
  • Note: Baking powder and baking soda lose their power faster than you realize. Unless your packages are new, test before using. To test baking soda, put a few tablespoons of white vinegar into a small bowl and add a teaspoon of baking soda. It should bubble up furiously, and the foaming should take several moments to subside. The more bubbles, the more potent the baking soda. If there is no reaction, or you only end up with a handful of small bubbles, you need to replace your baking soda.To test baking powder, baking powder, pour a teaspoonful of baking powder into a bowl or small glass.Fill the bowl with hot water to cover the baking powder (about 1/4 cup should do it).If the baking powder begins to bubble furiously, it's fine to use in your recipes.Tip: For best results, do not dip a wet spoon into the can of baking powder when measuring what you need. The moisture will activate the baking powder left behind in the can and it won't be as good to use next time. If you see lumps in your baking powder, that's usually a sign moisture has found its way inches.

1 cup chopped pitted dates
1 cup chopped dried figs
¼ cup unsalted butter, softened
1 ½ teaspoons baking soda
1 cup boiling water
½ cup white sugar
½ cup chopped walnuts
2 eggs
¾ cup all-purpose flour
¾ cup whole wheat flour
½ teaspoon baking powder
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch baking pan.
  • In a medium bowl, combine the dates, figs, butter and baking soda. Pour in the boiling water, stir well and let stand for 15 minutes.
  • Beat the sugar, walnuts and eggs into the date mixture. Combine the all-purpose flour, whole wheat flour, baking powder and salt; stir into the date mixture just until blended. Pour batter into prepared pan.
  • Bake in preheated oven for 55 to 65 minutes, or until a toothpick inserted into center of the loaf comes out clean. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

6 ounces fresh figs, stemmed, chopped and mashed
1 large egg
¾ cup granulated sugar
⅓ cup (about 2 1/2 ounces) unsalted butter, melted
½ teaspoon vanilla extract
2 cups (about 8 ounces) white whole-wheat flour
1 ½ teaspoons baking powder
½ teaspoon kosher salt
¼ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F. Spray an 8 1/2- x 4 1/2-inch loaf pan with cooking spray.
  • Whisk together mashed figs, egg, sugar, butter and vanilla in a large bowl until well combined. Stir together flour, baking powder, salt and cinnamon in a small bowl. Whisk flour mixture into fig mixture, stirring until just combined. Pour batter into prepared pan.
  • Bake in preheated oven until a wooden pick inserted in center comes out clean, about 50 minutes. Let cool in pan 10 minutes. Remove from pan; transfer to a wire rack to cool completely, about 1 hour.

3 eggs
2 1/2 cups sugar (may reduce to 2 cups)
2 cups ripe figs , mashed
3/4 cup vegetable oil
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup buttermilk , well shaken
1 cup pecans, chopped

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F/180 C/Gas 4. Grease and flour two 9 x 5 x 3-inch loaf pans (or 3 small loaf pans).
  • In a mixing bowl with an electric mixer, beat the eggs. Add the sugar and beat well.
  • With the mixer on low speed, add the mashed figs and vegetable oil.
  • Sift together flour, baking soda, salt, and cinnamon.
  • Add the flour mixture to the first mixture alternating with the buttermilk. Beat until well blended.
  • Fold in chopped pecans.
  • Bake in the preheated oven for about 50 to 60 minutes, or until a toothpick inserted into the center comes out clean. The center may sink slightly while cooling.

20 oz dried figs, stems removed
¼ tsp ground cinnamon
¼ tsp ground cardamom
3 Tbsp orange juice
½ cup walnut halves, lightly toasted

Steps:

  • Line a loaf pan (really any size in the area of 9-x-5-inch/2L) with plastic wrap.
  • Place the figs, cinnamon, cardamom and orange juice in the bowl of a food processor and pulse until the figs are roughly chopped and the juice is absorbed. Transfer this to a bowl and stir in the walnut halves. Spread this into the prepared pan (it will only fill just over an inch/25 mm), cover the top with plastic and press down firmly with a weight, such as another loaf pan. Let this chill for about an hour, then unwrap and slice thinly to place of a cheese board.

¾ tablespoon active dry yeast
1 ½ cups warm water
1 tablespoon white sugar, or more as needed
3 ¼ cups bread flour
¾ tablespoon salt
1 cup raisins
5 large dried figs, roughly chopped
1 teaspoon cornmeal for dusting, or as needed

Steps:

  • Dissolve yeast in warm water. Add sugar to activate yeast. Add bread flour; sprinkle salt on top. Pour in raisins and figs; mix well.
  • Knead dough for about 10 minutes. Place in a large glass bowl and cover with plastic wrap. Let rise for 3 to 4 hours.
  • Turn dough out onto a floured surface. Pick up the side of the dough that's farthest from you and fold it inward, about 3/4 of the way across. Fold the last quarter of the dough all the way back over the far side, creating batard, or torpedo, shape. Press down on the seam with the side of your palm to seal it.
  • Preheat the oven to 475 degrees F (245 degrees C). Sprinkle some cornmeal over the dough and cover loosely; let proof for 45 minutes. Sprinkle more cornmeal onto a baking sheet; flip dough onto the sheet so the seam side faces up. Use a scoring tool or serrated knife to cut a few slashes into the top of the dough.
  • Bake in the preheated oven until top is golden brown and bottom sounds hollow when tapped, about 20 minutes. Let the loaf cool for at least 30 minutes, as it will continue to cook when it comes out of the oven.

I had some fig preserves in the fridge that needed to be used and I thought they would go great in bread. I tried to make the recipe low in fat, but I do love a slice of this slathered in butter. Taste your preserves to see how sweet they are... you may find you can cut down on the sugar.
