Steps:

  • Preheat oven to 400°F (200ºC).
  • Separate the crowns and snip off any leaves of the broccoli.
  • On a prepared baking sheet, combine broccoli and remaining ingredients. Mix evenly.
  • Bake for 35-40 minutes.
  • Allow to cool for 5 minutes.

1/4 cup chicken broth
1 ounce parmesan cheese, freshly grated (1/4 cup)
1 tablespoon plain breadcrumbs
16 ounces sole fillets (4 fillets)

Steps:

  • Coat a broiler pan with nonstick spray. Preheat the broiler.
  • In a small food processor, pulse the garlic until finely chopped.
  • Add the olives and pulse until chopped.
  • Add the broth, Parmesan cheese and bread crumbs and pulsed until nearly smooth.
  • Arrange the fish on the broiler pan in a single layer. Spread the paste over each fish fillet in a thin layer.
  • Broil for 4 minutes, or until the fish flakes easily. Do not turn the fillets while cooking.

1 head broccoli, cut into florets with the long stems attached
2 cloves garlic, minced
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 cup grated Parmesan
1 cup ranch dressing
1 tablespoon sriracha
Zest and juice of 1 lime

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the broccoli, garlic, 1 tablespoon oil and some salt and pepper in a medium bowl. Add the remaining tablespoon oil to coat the bottom of a large ovenproof skillet, preferably cast iron. Add the cheese in an even layer followed by the broccoli. Roast until the broccoli is slightly browned and the cheese is golden brown and crispy, about 15 minutes.
  • Meanwhile, combine the ranch, sriracha, lime zest and juice in a small bowl. Remove the skillet from the oven and drizzle the sauce all over the broccoli.

½ cup fresh thyme sprigs
10 sprigs fresh parsley, or to taste
1 large bay leaf
½ teaspoon whole black peppercorns
1 cup dry white wine
8 cups water
1 pound Parmesan cheese rinds

Steps:

  • Heat oil in a skillet over medium heat. Add onion, garlic, thyme, parsley, bay leaf, and peppercorns and saute until garlic is browned, about 3 minutes.
  • Pour wine into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Cook until liquid has reduced by half, 2 to 3 minutes.
  • Add water and Parmesan rinds. Simmer until reduced by half, about 2 hours. Remove any solids before using.
