- Preheat a baking sheet on the lower rack in a 450 oven. Blanch 1 head chopped broccoli in boiling water with salt and sliced garlic for 1 minute; drain. Toss with a splash of olive oil, a handful each of breadcrumbs and parmesan, salt and pepper. Place on the hot baking sheet and top with more cheese and breadcrumbs; roast until golden, 15 minutes.

- Coat a broiler pan with nonstick spray. Preheat the broiler.
- In a small food processor, pulse the garlic until finely chopped.
- Add the olives and pulse until chopped.
- Add the broth, Parmesan cheese and bread crumbs and pulsed until nearly smooth.
- Arrange the fish on the broiler pan in a single layer. Spread the paste over each fish fillet in a thin layer.
- Broil for 4 minutes, or until the fish flakes easily. Do not turn the fillets while cooking.

- Heat broiler.
- In medium bowl, stir together all ingredients except fish and lemon juice.
- Place sole fillets on broiler pan; sprinkle with lemon juice.
- Broil 3-4 inches from heat until fish flakes with a fork (about 3-5 minutes).
- Spread Parmesan mixture over fillets and broil until bubbly and golden brown (3-5 minutes).
CRISPY PARMESAN BROCCOLI
Steps:
- Preheat the oven to 400 degrees F.
- Combine the broccoli, garlic, 1 tablespoon oil and some salt and pepper in a medium bowl. Add the remaining tablespoon oil to coat the bottom of a large ovenproof skillet, preferably cast iron. Add the cheese in an even layer followed by the broccoli. Roast until the broccoli is slightly browned and the cheese is golden brown and crispy, about 15 minutes.
- Meanwhile, combine the ranch, sriracha, lime zest and juice in a small bowl. Remove the skillet from the oven and drizzle the sauce all over the broccoli.

- Heat oil in a skillet over medium heat. Add onion, garlic, thyme, parsley, bay leaf, and peppercorns and saute until garlic is browned, about 3 minutes.
- Pour wine into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Cook until liquid has reduced by half, 2 to 3 minutes.
- Add water and Parmesan rinds. Simmer until reduced by half, about 2 hours. Remove any solids before using.

- Slice tomatoes in half. Using a small spoon, remove seeds. Place tomato halves on a broiler pan coated with cooking spray. Combine the oil, garlic and pepper. Brush over tomatoes.
