- Mix vinegar, Worcestershire, oil, garlic, onion powder, salt, and pepper together in a small bowl.

BISON STUFFED PORTABELLAS

- Heat oven to 400°F. Line baking pan with sides with cooking parchment paper.
- Rub mushrooms with 1 teaspoon of the olive oil. Place on pan. Roast with tops down 20 minutes; remove from oven. Drain off any liquid that has accumulated on the pan, then pat mushrooms dry with paper towel.
- Meanwhile, in 10-inch skillet, heat 1 teaspoon of the oil over medium heat until hot. Add the bison, and cook 4 to 6 minutes or until browned. Transfer to small bowl, and set aside.
- Add remaining 1 teaspoon oil to the pan, and heat until hot. Add onion, bell pepper and salt. Cook 3 to 5 minutes or until softened. Add the garlic and greens, and cook until greens wilt. Remove from heat; cool 5 minutes.
- Beat egg in large bowl. Set aside.
- Stir bison, mustard, thyme and soy sauce into greens mixture in pan; transfer to bowl with egg, and stir to combine. Divide evenly among the mushrooms (about 3/4 cup each).
- Bake 15 to 20 minutes or until mushrooms are tender. Sprinkle with chopped fresh basil.

- Remove thick end of mushroom stem, leaving about 1/2 inch (1 cm) attached to cap.
- Place, smooth side up, in large, shallow glass dish.

- Preheat oven to 400°F. Place Reynolds® Oven Bag in 13x9x2-inch baking pan.
- Add flour and balsamic dressing to oven bag; gently squeeze bag to blend ingredients. Add mushrooms and onions; turn bag several times to coat vegetables with dressing.
- Close bag with nylon tie. Cut six 1/2-inch slits in neck of bag. Tuck ends of bag in pan.
- Bake 10 minutes or until mushrooms are tender when pierced with a fork. COMBINE salad ingredients in a large bowl while mushrooms are baking.

CHOCOLATE-DRIZZLED BROOKIES

- Make the brownie layer: Preheat the oven to 350˚ F. Brush a 9-by-13-inch baking dish with melted butter. Line the dish with parchment paper, leaving an overhang on the long sides. Whisk the flour, baking powder and salt in a medium bowl.
- Whisk together the granulated sugar and cocoa powder in a large bowl to remove any lumps. Whisk in the eggs and vanilla until well combined. Whisk in the melted butter in 2 additions until smooth. Whisk in the flour mixture just until smooth. Spread in the baking dish.
- Make the cookie layer: Stir the flour, baking powder, baking soda and salt in a bowl. Beat the butter and both sugars in a large bowl with a mixer on medium-high speed until fluffy, about 2 minutes.
- Add the eggs and vanilla to the butter-sugar mixture and beat just until smooth. With the mixer on low speed, beat in the flour mixture just until combined. Stir in the chocolate chips with a spoon or spatula.
- Flatten a handful of the cookie dough until 1/2 inch thick and place on top of the brownie layer. Continue to flatten pieces of dough and add to the top, using your fingers to smooth the dough into an even layer covering the entire brownie layer.
- Bake until the top is golden and puffed and the edges are crisp and just beginning to pull away from the sides of the pan, 40 to 50 minutes. Transfer to a rack and let cool completely, at least 1 1/2 hours.
- Make the glaze: Combine the chocolate chips and heavy cream in a microwave-safe bowl and microwave in 30-second intervals, stirring, until smooth. Drizzle over the bars and cut into squares.

- Preheat broiler.
- In a small bowl stir together bread crumbs, Parmesan, parsley, and salt and pepper to taste. Cut off and discard mushroom stems. Put mushrooms, gill sides down, on a baking sheet and brush tops with 1/2 tablespoon oil. Broil mushrooms 2 to 3 inches from heat until golden, about 3 minutes. Turn mushrooms over and season with salt and pepper. Broil mushrooms 3 minutes more. Mound bread-crumb mixture onto mushroom centers and drizzle with remaining 1/2 tablespoon oil. Broil stuffed mushrooms until stuffing is golden brown, 1 to 2 minutes.
PENNE PORTABELLA (COPYCAT OF PASTA POMODORO'S DISH)
I saw one of the owners of Pasta Pomodoro make this on a local tv show. The measurements are approximate as he only demonstrated the ingredients used, no measurements. But this dish is easy and pretty hard to mess up. Mine tasted just as good as the one from the restaurant (I just tried this dish about a couple of weeks ago). A couple of pointers to make it tasty: Be sure to salt your water for pasta, this gives your pasta some flavor. After adding the pasta to the sauce, cook it for a minute of two so the pasta soaks up the sauce. After this step, you can taste and adjust flavor, adding parmesan cheese to give it more flavor (optional). Note: I actually didn't use the entire package of porchini mushrooms, only a little more than 1/2 of the package because it's expensive, also I used baby spinach instead of arugula because my kids do not appreciate the "bite" of the arugula.

- Soak the dried porchini mushrooms in the hot water (about 10 minutes), then squeeze the liquid out of the mushrooms and chop it up. Be sure to reserve the tasty soaking water for the sauce!
- Prepare the sausage according to package directions (cooked throughly and browned), drain.
- Cook the pasta according to package directions as well, however, minus one to two minutes to finsh "cooking" in the sauce. Meanwhile start the sauce:.
- Heat up a large pan (large enough to fit the pasta in), add a tablespoon of extra virgin olive oil, sautee garlic just until fragrant, add in cooked sausage, portobello mushrooms and porchini mushrooms, and (first add 1/4 cup) of the reserved porchini soaking water as well as the wine. Let this cook for a few minutes. If the portobello mushroom is still dry, add more of the reserved soaking water (add all if possible), cook until the portobello is browned and tender.
- Add cream and heat through, stirring to incorporate the flavors together. Next add the cooked pasta and arugula or spinach leaves, cook for a minute or two to let the pasta soak up the sauce and wilt the arugula or spinach.
- Taste and adjust seasoning, adding parmesan cheese then salt and pepper if desired.

- Preheat your oven's broiler. Clean mushrooms, and remove stems, reserving them for later. Marinate the mushroom caps in Italian dressing for 15 minutes. Remove from marinade, and place into a baking dish.
- Broil at least 6 inches from heat for about 10 minutes. Check occasionally to make sure they do not burn. Turn off the broiler, and preheat the oven to 400 degrees F (200 degrees C).
- Melt butter in a skillet over medium-high heat. Chop reserved mushroom stems. Sautee onion, garlic, mushroom stems and celery until tender. Add the crabmeat, and heat until cooked through, about 5 minutes. Transfer the skillet mixture to a medium bowl, and mix in crackers, 1/3 cup of the cheese blend, and mix until well blended. Use some of the Italian dressing marinade to hold the mixture together if necessary. Pack the crab mixture into the cavities of the mushrooms. Season with salt and pepper to taste.
- Bake for 10 minutes in the preheated oven. Remove from the oven, and sprinkle remaining cheese over the tops, then return to the oven for 3 minutes, or until cheese has melted.

BROOKE'S PORTABELLAS
So delicious! These go perfectly with a nice Steak and another fresh side veggie (I like yellow squash or Corn on the mini-cob). Yellow veggies seem to work nicely with this. However, feel free to pour the mushrooms and juices over white or wild rice. It's still plenty delicious either way.

- Take the Portabello caps, wash them, and let dry for about 10 mins or blot dry with towel. You want them dry enough to absorb all of the flavors.
- I make separate pouches with foil and toss them in the oven or straight onto the edge of the grill outside. If you do this, use 2 sheets of foil per pouch and after you've stuffed them, fold them up like a burrito. You can put it all into a baking dish though. Just make sure that the dish is small enough that the mushrooms are at least part of the way covered in liquid after they get hot. I would line the dish with foil and cover with foil as well though. You do not want the liquid to burn off.
- I do this on the stove top with great results all of the time too. So, grab a pan if you wanna. Just be sure to cover it and stir often until the Mushrooms are done to your desired tenderness.
- First, slice the mushrooms thickly, about as thick as your ring finger (beside your pinky). Put into your pouch or dish and set aside.
- Cut your onion whichever kind you like. I love Yellow with this. I use large chunks but, chop as desired. Then, top your mushrooms with it.
- Depending on how spicy you like your food, cover Mushroom and Onion with the McCormick's Seasoning. I use A LOT . I mean A L O T! :).
- You can sub. McCormick's for coarse black pepper, but it won't do it justice.
- Next, put on your garlic. I use about 1/2 of a teaspoon minced for 2 mushroom caps. It seems like a lot but, keep in mind, that it has to "stand up" to the sauces that you are about to add, which are all powerful by themselves.
- In a bowl, mix 10 shakes of Soy sauce ( use low sodium soy sauce or reduce the amount if you aren't a salt lover), 5 shakes of Worcestershire sauce, 5 shakes of Kitchen Bouquet, and 2-4 tablespoons of margarine or butter. I use 3 teaspoons per cap. Then, add about 1/4 cup of water and microwave until melted.
- Stir well and pour mixture over the mushrooms, cover with foil or close pouches, and bake in the oven for about 15-20 mins at 350°F If you like them firmer, go 10 or 15.
- If you like wetter and softer like me, go 20.
- *If you do foil pouches on the grill, check them every 5 minutes or they will shrivel into nothing!
- *Everyone in my house is ADDICTED to these and we never EVER grill without them. So, let me know if you like them too. =).
- If you don't like them MY way, after you try it, experiment with adding more or less of any item to find your perfect flavor. Though I've never seen anyone scrape this to the side of the plate. hehehee.
