BUFFALO CHICKEN DIP BITES
Adapted from Tasty BUFFALO CHICKEN DIP BITES are amazing! Deep Fried Balls of cheesy buffalo ranch chicken dip rolled twice in breading and deep fried to pop-able perfection. This is one of our favorite game day recipes for tailgating. Bring on the Buffalo Chicken Bites for Super Bowl or for any time you need a delicious and unique appetizer!

Steps:
- Line a 6x6 inch dish with parchment paper. Cut the parchment paper 2 inches longer and wider than the dish, so the parchment paper hangs over the edges.
- In a large bowl, combine all ingredients up through the ranch dressing mix until smooth and evenly mixed.
- Press the mixture into the prepared 6x6 inch dish, and smooth the mixture flat with an offset spatula or a rubber spatula.
- Cover and freeze until solid or at least 1 hour.
- Remove the mixture from the freezer and cut into 1x1-inch squares.
- Set up three shallow dishes; one dish for the flour, one for eggs/milk (beaten), and one for the breadcrumbs.
- Dip each mozzarella bite in the flour (shaking off excess), in the egg/milk mixture, in the breadcrumbs, back in the egg/milk mixture and back in the breadcrumbs. Add more breadcrumbs or egg mixture as needed.
- Set the prepared mozzarella bite on a small tray until all are ready.
- While preparing the Mozzarella bites, pour 3 inches of oil in a medium-sized, deep saucepan and bring the temperature to 350°F.
- When oil is ready, carefully place 4 mozzarella bites in the oil and stir to keep separated. The bites are ready when crispy and dark golden brown, approximately 1 minute. Transfer to a clean tray.
- Repeat until all mozzarella bites are fried.
- Serve hot with desired dipping sauces or dips such as Ranch dip, Buffalo Ranch dip, Honey Mustard, BBQ sauce.

- Preheat the oven to 350 degrees F.
- In a (9-inch) deep-dish pie plate add the cream cheese and stir with a fork until smooth.
- Stir in the dressing, hot sauce and cheeses. Mix in the canned chicken and bake for 20 minutes or until the chicken mixture is hot and bubbling.
- Stir before serving with crackers, chips, and/or veggies.

- In medium bowl, mix egg white and Buffalo wing sauce. Stir in chicken. Cover; refrigerate 30 minutes.
- Line cookie sheet with waxed paper. In large resealable food-storage plastic bag, place Bisquick mix, cornmeal, salt and pepper. With slotted spoon, remove 1/4 of chicken pieces from bowl and add to bag; seal bag and shake to coat. Repeat with remaining chicken pieces. Tap off excess Bisquick mixture and place chicken on cookie sheet.
- In small bowl, mix dipping sauce ingredients until well combined. Cover; refrigerate until serving time.
- In 10-inch nonstick skillet, heat oil (1/4 inch) over medium-high heat 2 to 4 minutes. Cook chicken bites in oil in batches, about 1/3 at a time, 3 to 4 minutes, turning once, until golden brown. Drain on paper towels. Serve chicken with dipping sauce.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix cream cheese, hot sauce, ranch dressing, onion, garlic powder, and onion powder together in a bowl; fold in chicken.
- Roll crescent roll dough onto a work surface, pressing dough into a thin layer without tearing. Cut 3-inch pieces out of dough using a biscuit cutter. BUFFALO CHICKEN BITES
Deli rotisserie chicken is the surprising start of this ridiculously delicious cocktail bite. Add as much or as little spicy as you like with bottled Buffalo wing sauce, and be sure to include a cooling touch of ranch dressing.

- Heat oven to 375°F. Spray 24 mini muffin cups with cooking spray.
- In medium bowl, mix chicken, cream cheese, 1 cup of the Mexican cheese and the Buffalo wing sauce until well blended.
- Place 1 wonton skin in each muffin cup. Spoon chicken mixture evenly into cups.
- Bake 6 minutes. Sprinkle 1 teaspoon of the remaining Mexican cheese into each cup. Bake 2 minutes longer or until wontons are lightly browned and cheese is melted. Garnish with green onion tops. Serve warm.

- Combine the cream cheese, buffalo sauce, blue cheese, shredded cheddar cheese, celery, scallions and chicken in a bowl. (Basically combine everything except the crescent roll dough in a bowl.) Mix together with a large spoon or spatula until fully combined and there are no clumps of cream cheese. Set aside.
- Unwrap the crescent roll dough and place each triangle onto a sheet pan. Take the long, skinny end of the triangle and fold it up towards the straight edge of the triangle, which should be directly across from it. Once the far point of the skinny triangle is touching the straight edge, press the dough down to combine with the underlying layer of dough. You now should have a square-like shape of dough. Scoop about 1 1/2 tbsp of filling into the center of the dough, making sure to leave at least 1/4 inch of a border around the filling.
- Pull one set of opposite corners towards each other and cinch above where the filling is sitting. Repeat this with the other set of opposite corners, meeting in the middle, on top of the other seam. The filling should be almost fully incased at this point. Gather any loose ends towards the middle seam and cinch fully with your finger tips until the ball is fully closed. Repeat with all of the balls. Place them seam side down onto a sheet pan.
- Brush each ball with buffalo sauce and bake according to the crescent roll instructions, or air fry for 8 minutes at 375 degrees F. Serve with chopped scallions and blue cheese dressing and enjoy!

- Heat oven to 375 degrees F. Lightly spray 2 mini muffin pans (48 mini muffins) with nonstick cooking spray.
- In a medium bowl, mix all the ingredients except the crescent rolls until well combined. Add more buffalo wing sauce if you want it spicier. Transfer to an oven safe dish and bake for 10 minutes. Remove and let cool on cooling rack while you prepare dough sheets.
- Unroll 1 dough sheet. Roll into a 12x8-inch rectangle. Cut dough sheet into 24 squares. Press a square in the bottom and up the side of each mini muffin cup. Spoon about one teaspoon chicken dip into each cup. Repeat with remaining dough sheet and filling.
- Bake for 8 to 12 minutes or until the edges of dough are golden brown. Remove from pan and let cool on a serving platter for 5 minutes. Serve warm.
