1 1/2 pound lean ground beef
1 onion, chopped
3/4 cup brown rice, uncooked
3 cup cabbage, coarsely chopped
1 (8-ounce) can no-salt added tomato sauce
2 cup water
1 (14-ounce) can low-sodium diced tomatoes, undrained
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • In a large skillet over medium heat, saute ground beef and onions 8 to 10 minutes, or until no longer pink. Drain excess liquid.
  • Add remaining ingredients, mix well. Bring to a boil, then reduce heat to low and cover. Simmer for 35 to 40 minutes, or until rice is tender.

10 oz. tomato sauce;
Cooking fat;
Sea salt and freshly ground black pepper;

Steps:

  • Melt some cooking fat in a large skillet placed over a medium-high heat. Cook the garlic and onion until fragrant and soft. Brown the ground beef in the skillet until no longer pink. Add the cabbage, tomatoes, tomato sauce, and season with salt and pepper to taste. Cover and let simmer for about 25 minutes or until the cabbage is soft.

1 lb lean ground beef
3 cups coarsely shredded cabbage
1 cup brown rice*
1 medium onion (chopped)
1 cup sliced mushrooms
2 tubs Knorr concentrated beef stock **
1 tsp garlic powder
2 1/2 cups water
1/2 tsp pepper
sour cream (optional)

Steps:

  • white rice may be substituted
  • **Rich stock in the amount of 2 1/2 cups may be substituted, however, OMIT THE WATER then. If you like a tomato base, you can substitute 1 can (8 oz) of tomato sauce and 1.5-2 cups of water for the stock/water. If you do this, you may have to add more water if the rice is not cooked-I did not test it with this.
  • Heat a large heavy skillet over medium-high heat.
  • Add the ground beef, onion and mushrooms. Brown meat well, draining off any excess fat.
  • Add the 2 tubs of stock gel and the water. Bring to a boil and add the rice, garlic powder and pepper; stir. Stir in the shredded cabbage.
  • Reduce heat to simmer. Cover and cook for 35-45 minutes or until rice is done and water is absorbed. I would caution checking the water periodically and adding water as necessary so that the rice cooks-brown rice can be tricky this way. Even if you add too much water, the brown rice will absorb it eventually. As I mentioned, white rice may be substituted, and it has a shorter cook time.
  • Dish is done when rice is cooked and all water is absorbed. Serve with a dollop of sour cream on top.

2/3 lb ground beef
2 tbs sesame oil (divided)
2 tbs tamari
2 tsp hot sauce (to taste)
1 tbs coconut sugar ((or other sweetener, optional))
1/2 tsp garlic powder
1/2 tsp ginger powder
1/2 tsp salt
6 cups shredded green cabbage (3/4 lb)
3 carrots (grated)

Steps:

  • Pour ½ tbs sesame oil into a large skillet. Brown the ground beef, stirring continuously to break it up while it's cooking.
  • In a small bowl, stir together the remaining 1½ tbs sesame oil, tamari, coconut sugar, hot sauce, garlic powder, ginger powder, and salt. Set aside.
  • In the large skillet, after the beef is cooked through, place the sliced cabbage and grated carrot on the cooked beef. Pour the sauce on top and stir. Cover the skillet and turn off the heat. Leave it for 5 minutes, or until the cabbage has wilted to your preferred texture. Serve warm.

I made up this recipe when I had a fresh cabbage to use and was craving stuffed cabbage leaves. This is basically stuffed cabbage done on the stovetop.

1 lb ground beef
1 onion, chopped
1/2 cup white rice
2 (15 ounce) cans diced tomatoes
1 (15 ounce) can beef broth
1 teaspoon italian seasoning (or to taste)
salt
pepper
1 head cabbage, cut into pieces

Steps:

  • Fry ground beef and onion in a large, high sided skillet until beef is no longer pink and onion is soft. Drain excess fat.
  • Add tomatoes, broth, Italian seasoning, and salt & pepper to taste. Bring to a boil. Stir in white rice. Add water if you think there's not enough for the rice to cook. Return to boil, reduce heat and simmer for 20 minutes, checking to make sure it's not getting too dry--the rice must absorb enough liquid. If necessary, add some more water. Excess liquid can be cooked off if you add a little too much.
  • Once beef/rice mixture is done, if you don't have much liquid left, add about 1/2-3/4 cup water. Layer cabbage over beef mixture and adjust temperature so the cabbage will steam. Allow to cook about 10-15 minutes, or until cabbage is cooked. Check occasionally to make sure there is enough liquid to maintain the steam and keep it from burning.

1 medium onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1 Tbsp worcestershire sauce
1 Tbsp my house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)
10 oz can diced tomatoes with green chilies, undrained
3 c chopped cabbage
10 oz beef broth
1 c shredded sharp cheddar cheese

Steps:

  • 1. Brown the ground beef in a skillet over med. high heat and drain off the grease. Add the onion, bell pepper, garlic, worcestershire and house seasoning. Combine well. Add the tomatoes and broth, stir and then add in the cabbage. Cover and reduce the heat to medium and cook until the cabbage is tender but not mushy, about 20-25 minutes. Uncover and stir in the cheese, cook until the cheese is melted. Serve over rice if desired.
