- In a Dutch oven, heat oil over medium heat. Add carrots and shallots; cook and stir 12-15 minutes or until carrots are crisp-tender. Stir in garlic and thyme; cook 1 minute longer. Add water to cover carrots; bring to a boil. Reduce heat; simmer, uncovered, 20-25 minutes or until carrots are very tender., Drain; cool slightly. Place carrot mixture, salt and pepper in a food processor; process until smooth.

CURRIED CARROT AND COCONUT SOUP
There's a nice challenge in staring into a less than sufficiently stocked refrigerator. Last night we were down to not much more than carrots. Thus: them, an onion, grated ginger, a sort of curry mix. There was stock in the freezer, a can of coconut milk. A lime. Wish I'd had cilantro, but hey, it worked.

Steps:
- Heat the butter until the foam subsides. Add the diced chopped onions, sprinkle with salt, stir to coat with butter. Add the chopped carrots along with the spices. Stir and cook until softened, about 10 minutes.
- Add the stock; there should be enough to cover the vegetables. Bring the pot to a boil over high heat. Reduce the heat to medium and continue cooking until the carrots are cooked through, about 10 to 15 minutes.
- If you have an immersion blender, purée the soup in the pot. If not, wait until the soup cools slightly, and purée in a food processor. Add enough coconut milk (and a little more stock or water if necessary) to bring the soup to the consistency you want. Adjust the seasoning (depending on the stock you use, you may need more or less salt), and lime juice to taste. Garnish and serve.

- Boil or steam the carrots for 15 to 20 minutes until very tender. Drain well.
- Place the carrots in a blender, add the coconut milk and puree until very smooth.

- Preheat oven to 350 degrees. Peel carrots and cut into 1/2-inch slices. Place in an oven-proof saucepan, cover and bake until tender, about 15 minutes.
- Meanwhile, in a small bowl combine the yogurt, garlic, juice from 1/2 of the lemon, nutmeg, and salt and pepper to taste. Puree the carrots in a blender or food processor until smooth, adding the remaining lemon juice and olive oil. Season with salt to taste.
- Spoon the carrot puree into a serving dish, and top with the yogurt sauce. Garnish with the fresh mint.

- Mix the chia seeds with 6 tbsp water, then set aside for 5 mins until thickened. Blitz the orange juice and dates in a food processor until puréed.
- Put all the other ingredients, except the oil, in a large bowl and mix with the date purée. Drizzle over the chia seed mix and mix well. Oil a 1.2-litre pudding basin and line the base with a circle of baking parchment. Spoon in the pudding mix, pressing down firmly. Cover with pleated baking parchment and foil, and secure with kitchen string (see our how to video).
- Lower the basin into a large pan with an upturned saucer or scrunched-up foil in the base to stop the basin from touching the bottom. Fill the pan with boiling water so it's halfway up the side of the basin, then cover and simmer for 6-7 hrs, topping up the water as needed. It's ready when a skewer poked into the centre of the pudding comes out with only moist crumbs - there should be no wet mix. Leave to cool. Will keep in a cool, dry cupboard for up to a year.
- On the day, re-steam as above for 2 hrs. Leave to rest for 10 mins before carefully turning out. Serve with coconut custard (see below).

CARROT PURéE

- Steam the carrots above 1 inch of boiling water for 15 minutes or until soft. Remove from the heat and transfer to a food processor fitted with a steel blade.
- Pulse the carrots in the food processor and scrape down the sides of the bowl. Turn on the food processor and while the machine is running pour in the olive oil and lemon juice. Process until the carrots are pureed. Stop the machine and scrape down the sides of the bowl with a spatula. Add the cumin seeds, caraway seeds, Aleppo pepper or chili powder, and salt to taste and process until incorporated. Taste and adjust seasonings. Transfer to a serving bowl or platter.
- If using the seasoned yogurt, combine all of the ingredients and mix together well. Make a well in the middle of the carrots and spoon in the yogurt.
- Serve the carrot puree with pita triangles, croutons, or crudités.
