8 celery ribs sliced 1/2" pieces
2 tablespoons oil
2 pounds stew beef cubed
2 onions chopped
3 cloves garlic crushed
2 bay leaves
1 tablespoon thyme
Salt to taste
Freshly-ground black pepper to taste
1 can chopped tomatoes - (15 oz)
1 carrot diced
1 potato diced
1 large handful brown rice
8 cups water - (to 9 cups)

Steps:

  • Brown beef in oil in skillet. Put in Slow cooker. Add onions, celery, and garlic to skillet. Cook, stirring, for about 8 to 10 minutes, or until celery is limp. Add to beef in Slow cooker. Put a little water in the hot skillet to remove any browned bits of beef or vegetable. Add this water to Slow cooker. Stir in bay leaves, thyme, salt and pepper, tomatoes, carrot, potato, and water. Cook 6 to 8 hours on LOW. One-half hour before serving, turn Slow cooker to HIGH and add rice. This recipe yields ?? servings.

1 beef soup bone
¼ cup barley
3 carrots, peeled
1 onion, peeled and left whole
3 stalks celery
salt to taste

Steps:

  • In a 6 quart soup pot, combine stew meat, soup bone, barley and carrots. Cover with water to within 2 inches of top of pot. Bring to a boil, then reduce heat and simmer 1 hour.
  • Place onion and celery in pot and continue to simmer 2 hours more.
  • Remove onion, carrots, bone and celery. Season with salt and serve.

4 tablespoons vegetable oil
2 onions, peeled and chopped
2 cups thinly sliced celery
1 ½ pounds beef chuck, trimmed and cut into thin 1 inch slices
½ teaspoon salt
½ teaspoon ground black pepper
2 tablespoons soy sauce
1 cup water
2 teaspoons cornstarch

Steps:

  • In a large skillet, heat 2 tablespoons of oil over medium heat. Slowly cook and stir onions and celery until golden brown; remove from heat and set aside.
  • In the same skillet, heat the remaining 2 tablespoons of oil. Place beef slices in the skillet and heat until well browned. Stir in salt, pepper, soy sauce and water.
  • Cover and simmer for 30 to 40 minutes. Return the onion and celery mixture to the skillet and simmer for another 10 minutes.
  • In a small bowl, combine the water and cornstarch. Pour the mixture into skillet. Stirring constantly, heat until thickened.

1 cup finely chopped onion
2 cups thinly sliced celery
2 tablespoons olive oil
2 teaspoons sugar
1 1/2 pounds beets, peeled and cut into 1-inch pieces
1 tablespoon red-wine vinegar plus additional to taste
3 cups low-salt chicken broth
ice water for thinning soup
sour cream, seasoned with bottled horseradish, and minced fresh chives for garnish

Steps:

  • In a heavy saucepan cook onion and celery in oil with sugar and salt and pepper to taste over moderately low heat, stirring, until softened and add beets, 1 tablespoon vinegar, and broth. Simmer mixture, covered, 35 to 40 minutes, or until beets are very tender.
  • In a blender purée mixture in batches until very smooth, transferring as puréed to a bowl. Chill soup, covered, at least 6 hours or overnight.
  • Thin soup with ice water and season with additional vinegar and salt and pepper.
  • Garnish soup with sour cream and chives.
