1/2 pound Brussel sprouts, butt-end removed, halved
2 teaspoons olive oil
1 cup Red onion, sliced into thin strips
1/2 teaspoon Garlic, minced
3 Tablespoons Chicken or vegetable broth
1 Tablespoon white wine vinegar
2 cups Great Northern white beans, cooked
2/3 cup California Ripe Olives, halved
2 teaspoons Sage, chopped
1 1/2 teaspoons Lemon zest, chopped
1/2 teaspoon Salt
pinch Black pepper, ground

Steps:

  • 1 Bring water to a boil in a large saucepot. Add brussel sprouts and cook for 3-5 minutes until bright green and just tender.2 Drain well. 1 2/3 cups dried white beans such as Great Northern (about 2/3 pound)
1/3 cup lemon vinaigrette
4 celery ribs
4 scallions
1/2 cup packed fresh flat-leafed parsley leaves
3 large garlic cloves
1/4 cup chopped fresh chives
1 tablespoon chopped fresh tarragon leaves
fresh lemon juice to taste

Steps:

  • In a large bowl soak beans in cold water to cover by 2 inches at least 6 hours and up to 1 day. Drain beans. In a 3 x 4-quart saucepan cover beans with cold water by 2 inches and simmer until tender, 1 to 1 1/4 hours. After about 45 minutes, season beans with salt. Drain beans in a colander and transfer to a bowl. Gently stir vinaigrette into warm beans. Beans may be prepared up to this point 1 day ahead and cooled, uncovered, before being chilled, covered.
  • Thinly slice celery and scallions. Chop parsley and mince garlic. Add celery, scallions, parsley, garlic, chives, and tarragon to beans and stir in lemon juice and salt and pepper to taste. Serve beans warm or at room temperature.

3 cups canned Great Northern or pinto beans, rinsed and drained
1/3 cup olive oil
2 tablespoons fresh lime juice
2 garlic cloves, minced
2 tablespoons chopped scallions, white and pale green parts only
3 tablespoons chopped fresh cilantro leaves
1 teaspoon dried oregano
Salt and freshly ground black pepper

Steps:

  • Steaks: Brush the steaks with olive oil; sprinkle liberally with salt and pepper, to taste. Heat a heavy saute pan over medium-high heat. Add the steaks and cook for about 4 minutes per side for medium-rare. Remove the steaks to a cutting board and let rest for 10 minutes. Slice crosswise into thin strips. Set aside.
  • Bean salad: In a large bowl, combine the beans, olive oil, lime juice, garlic, scallions, cilantro, and oregano. Mix gently. Season with salt and black pepper, to taste.
  • Put the bean salad on a platter and arrange the warm steak slices on top.

5 1/2 pounds fresh white shell beans in the pod (about 1 pound shelled); fresh cranberry beans or 1 1/4 cups dried cannellini beans may be substituted
6 tablespoons extra virgin olive oil
2 carrots, peeled and finely chopped
4 small white onions, peeled and finely chopped
2 garlic cloves, peeled and crushed
1 small celery stalk, 1 sprig fresh thyme, 1 bay leaf, 2 fresh sage leaves and 1 sprig parsley, tied together
Coarse salt to taste
2 tablespoons sherry wine vinegar
Few drops good balsamic vinegar
Freshly ground black pepper to taste
1/2 bunch flat-leaf parsley, finely chopped

Steps:

  • Shell the beans. (For dried beans, rinse them, place in saucepan, cover with water to 2 inches, and bring to boil. Remove from heat; allow beans to soak for 1 hour.)
  • Heat 1 tablespoon oil in large, heavy pot. Add carrots, onions and garlic, and saute over medium-low heat, stirring, for about 5 minutes, until tender. Add fresh beans (or soaked and drained dried beans) and 8 cups water. Add tied herbs; bring to simmer.
  • Partly cover pot, and simmer fresh beans about 30 minutes, until they are tender. (Dried beans should be simmered for about 1 1/2 hours, and any foam on the water's surface should be skimmed off.)
  • When beans are nearly tender, about 10 minutes before end of cooking time, add salt to taste. When beans are tender (make sure they are not undercooked), drain them.
  • Remove garlic and herbs, transfer beans to large bowl lined with paper towels and toss them lightly to dry them. Cover to keep them warm.
  • Beat remaining olive oil and vinegars together in salad bowl. Season with salt and pepper. Add warm beans and parsley. Fold all ingredients together, and season to taste with salt and pepper. Serve while still warm.

1 (14 1/2 ounce) can cannellini beans, drained and rinsed
4 ounces thinly sliced prosciutto, cut into thin strips
1 tablespoon olive oil
1 teaspoon finely chopped fresh rosemary
1/2 teaspoon dried thyme
3 tablespoons red wine vinegar
3 tablespoons fresh grated parmigiano-reggiano cheese
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Saute prosciutto strips in olive oil until crispy. Add rosemary and thyme and continue sauteeing for 1 minute to release the fragrant oils.
  • In a medium serving bowl, combine vinegar, salt and pepper. Add beans and stir to combine. Add prosciutto and herb mixture with the olive oil and stir again to combine. The oil will complete your vinaigrette so that the vinegar will adhere to your beans. Then add your parmigiana and stir one last time to combine. Serve at room temperature.
