CHERRY VANILLA PROTEIN BARS

I love the flavor that the Arbonne Vanilla protein powder gives to these bars. They are a healthy snack that will satisfy anyone's sweet tooth.

Number Of Ingredients 10

2 cups Gluten Free Oats
1/2 cup Arbonne Vanilla Protein Powder
2/3 cup Almond Butter (I use Raw Almond Butter)
3 Tbsp Pure Honey
1 Tbsp Chia Seeds
3 Tbsp Water (For the Chia Seeds)
1/3 cup Dried Cherries (chopped into smaller chunks)
1/4 cup Enjoy Life Miniature Chocolate Chips
2 Tbsp coconut oil (melted)
1-2 Tbsp water to help mixture come together

Steps:

  • In a small bowl or cup, place 3 Tbsp water and 1 Tbsp Chia seeds. Stir chia seeds in water until all seeds are wet; set aside for at least 5 min. Take another small bowl and add Almond butter and honey. Place this in microwave for 15-20 seconds and stir. This should help to thin down the almond butter and help when stirring with other ingredients. Set aside. Chop the cherries into smaller chunks and have ready to add to the oat mixture.
  • Now, in a large mixing bowl; place oats, vanilla protein powder, honey & almond butter, chia seeds, chopped cherries and chocolate chips. Stir this mixture around and then add melted coconut oil. Stir well. Last, add in another 1-2 Tbsp water to help mixture come together and be sturdy enough to stick/hold together.
  • Spray an 8 x 8 pan lightly with cooking spray. Press mixture firmly into pan. Place bars in the freezer for 20-25 min. Take out and cut into bars. Wrap each in plastic wrap or into snack size bags for easy on the go breakfast or snack. Store in the refrigerator and enjoy for at least 6-7 days

Cherry Bar Ingredients:
* 3 cups flour
* 1 teaspoon salt
* 1 cup, 2 sticks, butter, softened
* 2 cups white sugar
* 4 eggs
* 1 teaspoon vanilla
* 2 cans, 21 oz each, cherry pie filling
Vanilla Glaze Ingredients:
* 1 cup powdered sugar
* 1 teaspoon vanilla
* 2 tablespoons milk

Steps:

  • Preheat oven to 350 and grease a 15" x 10" baking pan with nonstick cooking spray. Set aside.
  • Add flour and salt to a small bowl and mix well. Set aside.
  • Cream butter and white sugar together in a mixing bowl until light and fluffy. About 3-5 minutes. Add eggs and vanilla and beat well. Add flour to the bowl and slowly mix until combined.
  • Spread 2/3 of the batter into the bottom of the prepared pan. I like to cover my hand with a sandwich bag generously sprayed with nonstick cooking spray. Use the covered hand to press the dough into the bottom of the pan.
  • Top with cherry pie filling, spreading cherries in a single layer. Place teaspoon-sized dollops of remaining dough on top of the cherries.
  • Bake for 35-40 minutes or until golden brown. Cool completely in pan.
  • To make the Vanilla Glaze: Add powdered sugar, vanilla, and milk in a small bowl and mix well. Drizzle on top of bars. Cut and serve.

I ripped this recipe from a magazine a long time ago. I made it many times and it always turned out delicious as well as beautiful. Since then, I misplaced my box of recipes torn from magazines until the other day. I had previously tried to find this recipe on Zaar, but couldn't so I was happy to find the clipping so now I can share the recipe with all of you. Since the layers are baked separately, the cook time and the prep time overlap somewhat. Prep time does not include refrigeration time. I have used low-fat cream cheese and it turns out just as good. Enjoy!

1 cup walnuts, divided
1 1/4 cups flour
1/2 cup brown sugar, packed
1/2 cup butter flavor shortening
1/2 cup coconut
2 (8 ounce) packages cream cheese, softened
2/3 cup sugar
2 eggs
2 teaspoons vanilla
1 (21 ounce) can cherry pie filling

Steps:

  • Heat oven to 350°F.
  • Grease a 13x9x2-inch pan.
  • Coarsely chop 1/2 cup nuts for the topping. Set aside.
  • Finely chop remaining 1/2 cup nuts.
  • Combine flour and brown sugar. Cut in shortening until fine crumbs form. Add finely chopped nuts and coconut.
  • Remove 1/2 cup of this mixture and set aside.
  • Press remaining crumbs in bottom of pan. Bake at 350°F for 12-15 minutes until edges are lightly browned.
  • Beat cream cheese, sugar, eggs, and vanilla at medium speed until smooth. Spread over hot, baked crust. Return to oven and bake 15 minutes longer.
  • Spread cherry pie filling over cheese layer.
  • Combine reserved nuts and reserved crumbs. Sprinkle over cherries. Return to oven and bake 15 minutes more. Cool. Refrigerate several hours.

2 large eggs

1/2 cup chopped walnuts
ICING:
1 cup confectioners' sugar
1 tablespoon butter, softened

  • In a large bowl, combine flour and sugar. Cut in butter until mixture resembles coarse crumbs. Pat into an ungreased 13-in. x 9-in. baking pan. Bake at 350° for 18-22 minutes or until edges are lightly browned., Meanwhile, in a small bowl, combine the eggs, brown sugar, salt, baking powder and vanilla.   • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.

3 cups oats (quick or old fashioned, uncooked)
1 1/2 cups dried sour cherries
