CHERRY PIE
Bake an all-American Cherry Pie recipe from Food Network using fresh or frozen cherries and a buttery pie dough crust for a fruity summer dessert.

Steps:
- Place cherries in medium saucepan and place over heat. Cover. After the cherries lose considerable juice, which may take a few minutes, remove from heat. In a small bowl, mix the sugar and cornstarch together. Pour this mixture into the hot cherries and mix well. Add the almond extract, if desired, and mix. Return the mixture to the stove and cook over low heat until thickened, stirring frequently. Remove from the heat and let cool. If the filling is too thick, add a little water, too thin, add a little more cornstarch.
- Preheat the oven to 375 degrees F.
- Use your favorite pie dough recipe. Prepare your crust. Divide in half. Roll out each piece large enough to fit into an 8 to 9-inch pan. Pour cooled cherry mixture into the crust. Dot with butter. Moisten edge of bottom crust. Place top crust on and flute the edge of the pie. Make a slit in the middle of the crust for steam to escape. Sprinkle with sugar.
- Bake for about 50 minutes. Remove from the oven and place on a rack to cool.
THE BEST CHERRY PIE
This is a delicious pie filling. It's also a great recipe if you have a helper. If any juice bubbles over, it tastes really good on top of ice cream.

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil. Place bottom pie crust into a 9-inch pie pan; made pricks along the bottom with a fork.
- Bake in the preheated oven until pie crust is lightly browned, about 8 minutes. Remove crust from oven and cool for 5 minutes.
- Combine cherries, sugar, cornstarch, and almond extract together in a bowl. Pour cherry mixture into the prepared pie pan; dot with butter. Cover with top crusts, crimp the edges to seal, and cut vents into the top with a sharp knife. Place the pie on a foil-covered baking sheet.
- Bake in the preheated oven for 30 minutes. If it is browning too fast cover the pie with an aluminum foil tent. Continue baking until crust is golden brown and filling is bubbly, 10 to 20 minutes. Place on a wire rack to cool, about 15 minutes.

CHERRY CORDIALS
You can make classic Cherry Cordials at home. Cherries, Kirschwasser, and dark chocolate come together for the ultimate candy treat.

- Drain the maraschino cherries, reserving 2 tablespoons of the liquid. Place the cherries back in the jar and pour the Kirschwasser over the cherries. Close the jar and set it aside for at least 12 hours, or overnight.
- Have a food processor set up near the stove. Combine the sugar, reserved maraschino cherry liquid, water and corn syrup in a saucepan. Bring the liquid to a boil over high heat. Do not stir the syrup once it begins to boil. Reduce the heat to medium high. Dip a pastry brush in water to clean any splatters from the inside of the pan. Place a candy or probe thermometer into the syrup and boil until the temperature reaches 240°F.
- Remove the pot from the heat and immediately pour the syrup into the food processor. Rinse the thermometer to remove any sugar crystals and set the thermometer into the syrup. Do not disturb the syrup as it cools.
- Allow the syrup to cool to 120°F. Remove the thermometer. Process the syrup for 3-4 minutes until it thickens and becomes opaque.
- Pour the fondant into a microwave safe container. Sprinkle 2 teaspoons of water over the fondant to cover the surface. This will prevent it from forming a crust. Cover the container and set aside for several hours or overnight.
- Line 2 sheet pans with parchment paper or a silicon baking mat. Drain the cherries and blot them dry with paper towels.
- Warm the fondant in 20 second increments until it is a little warmer than body temperature and loosens up enough to thickly coat the back of a spoon. Don't let the fondant get warmer than 160°F or you'll loose the crystals.
- Use the stem to lift a cherry and dip it into the fondant, covering the cherry up to the stem. Hold the cherry over the bowl to allow the excess fondant to drip back into the bowl. Set the cherry onto one of the lined sheet pans. Continue dipping all the cherries. You may need to rewarm the fondant if it becomes too thick to dip. You can sprinkle a few drops of water to loosen up the fondant if needed. Don't add too much water or the fondant won't stick to the cherries. - Lift a cherry by the stem and dip it into the chocolate, covering all the fondant and going a little up the base of the stem. Hold the cherry over the bowl to allow the excess chocolate to drip back into the bowl.
- Set the cherry onto the other lined sheet pan. Continue dipping all the cherries. Allow the chocolate set completely before packing the cherries into a covered container. Store at room temperature. The fondant layer needs a couple of days to melt and become the cordial syrup. Wait at least 2 days before serving

- In a heavy saucepan mix together sugar, flour, and cornstarch.
- Stir in some of the milk until a heavy paste forms.
- Gradually stir in remaining milk.
- Cook over medium heat, stirring until nicely thickened, aroound 8-10 minutes.
- Whisk together egg yolks and egg until slightly frothy.
- Stir in 1 cup of the thickened milk mixture whisking well.
- Pour into remaining milk mixture in pan.
- Cook over medium heat, stirring constantly until bubbles JUST appear.
- Remove from heat.
- Stir in butter, vanilla and almond extracts, continuing to stir until the butter is melted and well incorporated.
- Press a piece of plastic wrap on the surface and cool completly.
- In the top of a double boiler over simmering water melt the chocolate morsels with water.
- Spread evenly over the bottom of the pre-baked crust.
- Arrange cherries over chocolate layer.
- Pour filling slowly around the cherries and over crust.
- In a medium saucepan heat cream until small bubbles appear around edge of pan.
- Remove from heat.
- Stir in chocolate morsels until well combined and glossy.
- Stir in butter.
- Pour into a bowl, cool until slightly thickened.
- Pour frosting over pie smothing the top evenly.
- Chill.

- Mix together and press into pie dish. Bake at 325* for 20 to 25 minutes. Remove from oven, cool, and set aside.
- Cream Cheese Bottom Filling:.
- Cream together the confectioners sugar, cream cheese, liqueur, and whipping cream. Spread 3/4 of the mixture onto the bottom of the cooled crust. Refrigerate the remaining 1/4 of the mixture. Clean, pit, and drain the fresh cherries. Fill each cherry with remaining refrigerated cream cheese mixture. Stach the filled cherries on top of the mixture on the crust.
- Cherry Liqueur Filling:.
- In a saucepan, mix the sugar and cornstarch; add water and bring to boil. Remove from heat; add Jell-O and several drops of red food coloring. Add desired flavoring and cherry Amaretto liqueur, stirring after each addition. Pour 1/2 of warm mixture over stached cherries. Place pie and saucepan with remaining cherry filling in refrigerator. Refrigerate for about 1 hour or until mixture thickens, then remove. Spoon remaining thickened mixture over cherries. Let chill for several hours until firmly set. Garnish, if desired, using pastry bag filled with pink tinted whipped cream. Sliced almonds may also be used.

- Stir together cherries, sugar, water, cardamom pods, orange zest, cinnamon sticks, and ginger in a medium saucepan; bring to a boil over medium-high, stirring occasionally. Reduce heat to medium; simmer, stirring occasionally, until cherries are tender and liquid is a thin syrup consistency, 20 to 25 minutes. Remove from heat.
