- Preheat the oven to 400° F. Butter a 6-cup soufflé dish or an 8-cup gratin dish and coat it with the Parmesan. Heat the milk with the aromatics until it boils. Set it aside to steep for 15 minutes, then strain.
- Melt the butter in a saucepan. When foamy, stir in the flour and cook over low heat for several minutes. Whisk in the milk all at once and stir vigorously for a minute or so as it thickens, then add 3/4 teaspoon salt, a few twists of pepper, and the cayenne. Remove from heat. Beat in the egg yolks one at a time until well blended, then stir in the cheese. Don't worry about getting it smooth.
- Beat the egg whites with a pinch of salt until they form firm peaks, then stir a quarter of them into the base to lighten the mixture. Fold in the rest, transfer to the prepared dish, then put in the center of the oven and lower the heat to 375° F. Bake for 30 minutes or until golden and just a bit wobbly in the center. Remove, scatter the thyme over the top, and serve immediately.
EASY CHEESE SOUFFLES

I was actually working on something I was going to call 'cheesecake souffle,' and since I was adding cream cheese to the base, I decided to skip the classic white sauce, and simply smear everything together.

- Preheat the oven to 400 degrees F (200 degrees C).
- Brush butter on the bottom and up the sides of two 5 1/2-ounce ramekins. Scoop in some sugar; rotate ramekins to coat while pouring most of the sugar back into its container. Place ramekins on a shallow baking pan.
- Separate eggs between 2 bowls. Add sugar, flour, 1/4 teaspoon salt, vanilla extract, lemon zest, cream cheese, and Cheddar cheese to the yolks. Mix the souffle base with a spatula until sugar and flour disappear.
- Sprinkle a pinch of salt over the room-temperature egg whites. Beat with a whisk until soft peaks form; peaks should hold their shape but not be stiff or dry. Stir and fold 1/2 of the egg whites into the souffle base until combined. Gently fold the rest of the egg whites into the batter.
- Fill ramekins up to the lip with the batter.
- Bake in the preheated oven until puffed and browned, about 12 minutes. Serve immediately.

- Preparing the soufflé dish: Heat oven to 200C/fan 180C/gas 6 and place a baking sheet on the middle shelf. Butter a 15cm soufflé dish generously, then sprinkle in the breadcrumbs and rotate the dish to ensure the butter is evenly coated. Tip out any excess breadcrumbs.
- Making a thick white sauce: In a pan, melt the butter over a medium heat; stir in the flour and mustard. Cook, stirring, for 1 min. Take off the heat and gradually stir in the milk, mixing it in thoroughly before adding more. Return to the heat and stir continuously until very thick (around 10 mins). Transfer to a bowl and allow to cool. Crack the eggs, placing the whites into a clean bowl and stirring the yolks into the sauce. Stir in cheddar and season well.
- Adding the egg whites: Use a clean whisk to beat the egg whites until peaks form that just hold their shape (electric is best as it will make the job much quicker). Then take a metal spoon and gently stir the whipped whites into the white sauce in a figure of eight.
- Top-hatting: Spoon the mixture into the dish. Run a cutlery knife around the edge to create a 'top hat' effect; this ensures the soufflé rises above the rim and doesn't stick. Place on the baking sheet and bake for 25-30 mins until the top is golden and risen and has a slight wobble. Serve immediately.

BELTANE FARM CHEVRE SOUFFLED PUDDING WITH CARROT AND CUMIN SAUCE

- Preheat the oven to 350 degrees F. Butter 8 (4 by 2 1/2-inch) ramekins.
- Melt the butter in a medium saucepan over low heat. Add the flour, stirring constantly until completely incorporated. Slowly stir in the half-and-half. Cook for about 2 minutes whilst stirring with a wire whisk until thickened and smooth. Add the chevre and stir until melted. Remove from the heat and beat in the egg yolks, 1 at a time. Transfer to a large bowl and sprinkle with salt and black pepper (the mixture should be slightly over seasoned).
- In a medium bowl, beat the egg whites and cream of tartar with an electric mixer to soft peaks. Do not overbeat. Carefully fold the egg whites into the cheese mixture. Divide the mixture among the prepared ramekins, filling them to about 1/4 inch from the top. Carefully place the filled ramekins in a shallow roasting pan. Pour enough hot water into the pan to come 3/4 inch up the sides of the ramekins. Bake until the tops are set and brown, 40 to 45 minutes.
- Remove from the water bath and allow to cool to room temperature. At this point, the puddings can be kept at room temperature for up 2 hours, or covered in plastic wrap and refrigerated for up to 2 days.
- To serve, preheat the oven to 400 degrees F. Run a knife around the edges of the puddings. Gently unmold each one into the palm of your hand and place right side up on an ovenproof dish. Drizzle 1 tablespoon heavy cream over the top of each souffle. Bake until the cream is slightly brown and bubbly, 15 to 20 minutes.
- Ladle some of the Carrot and Cumin Sauce onto a dish and place a souffle on top. Garnish with any small crumbs of chevre and fresh chives and serve.
- For Carrot Sauce: Peel and coarsely chop the carrots, onion and garlic and place into a sauce pan along with the butter, salt and pepper and cumin. Fill with water to cover. Simmer until the vegetables are soft. Drain the excess water, reserving 1 tablespoon, and puree the vegetables in blender until smooth, adding reserved liquid if needed. If necessary, add more salt and pepper and cumin, to taste.

This is my twist on a traditional blintz souffle. It's tender and delicious. Serve with strawberries in syrup, raspberry preserves, spiced peaches, and sour cream.

- Preheat oven to 350 degrees F (175 degrees C).
- Place the butter in 9x13 inch baking dish, and put into the oven until melted, about 3 minutes. Place the blintzes into the baking dish in a single layer on top of the melted butter.
- Whip the egg whites in a bowl until they form soft peaks, about 5 minutes, and set aside.
- Whisk together the egg yolks, sour cream, sugar, vanilla extract, and salt in a large bowl until smooth. Use a rubber spatula or wire whisk to fold 1/3 of the whipped egg whites into the sour cream mixture. Gently run the spatula through the center of the bowl, then around the sides of the bowl, repeating until fully incorporated. Add the remaining whipped egg whites, folding just until incorporated. Pour the mixture over the blintzes in the baking dish.
- Bake in the preheated oven until the eggs are set and puffy and the top is golden brown, about 45 minutes.

- Preheat oven to 350°F. Butter six 3/4-cup soufflé dishes. Place 1 tablespoon Parmesan in each dish; rotate dishes to coat with cheese, leaving excess in dishes. Place dishes on baking sheet. Whisk milk and yolks in bowl to blend.

- Preheat oven to 400 degrees on a conventional oven or 375 degrees in a convection oven.
- Butter a 7-inch round 3 3/4-inch high 9-cup souffle dish. Using a piece of parchment paper, form a collar around souffle dish so that it extends 3 1/2 inches above the top of the dish; using kitchen twine, tie to secure. Place on a rimmed baking sheet and set aside.
- In a large saucepan, whisk together flour and salt. Gradually whisk in half-and-half and place over medium-high heat, whisking constantly until thick and smooth.
- Transfer to a large bowl; scatter butter over top. Butter will melt and prevent a skin from forming on surface. Let cool until lukewarm.
- Stir in egg yolks and cheese; set aside.
- In the bowl of an electric mixer fitted with the whisk attachment, beat together egg whites and egg white powder until medium to stiff peaks form. Gently fold egg whites into bowl with cheese mixture. Transfer to prepared souffle dish.
- Transfer to oven and bake until souffle is risen and set, 40 to 45 minutes. Remove collar and serve immediately.
GRUYèRE AND CHIVE SOUFFLé

- Remove wire racks from oven and place a baking sheet directly on oven floor. Heat oven to 400 degrees. Generously butter a 1 1/2-quart soufflé dish. Coat bottom and sides with 3 tablespoons/15 grams Parmesan, tapping out any excess.
- In a small pot, heat milk until steaming. Meanwhile, melt butter in a large skillet over medium heat. Whisk in flour and cook until the mixture foams, about 3 minutes. Remove from heat and whisk in warm milk. Return to heat and cook until thickened, whisking constantly, about 3 minutes.
- Remove from heat and whisk in paprika, salt and nutmeg. Whisk in egg yolks one at a time, blending fully after each addition. Transfer flour and yolk mixture to a large bowl.
- Using an electric mixer, beat egg whites and cream of tartar at medium speed until the mixture holds stiff peaks.
- Whisk a quarter of the whites into the lukewarm yolk mixture to lighten. Gently fold in remaining whites in 2 additions while gradually sprinkling in Gruyère cheese, remaining 2 tablespoons Parmesan and the chives. Transfer batter to prepared dish. Rub your thumb around the inside edge of the dish to create a 1/4-inch or so space between the dish and the soufflé mixture.
- Transfer dish to baking sheet in the oven and reduce oven temperature to 375 degrees. Bake until soufflé is puffed and golden brown on top and center barely moves when dish is shaken gently, about 30 minutes. (Do not open oven door during first 20 minutes.) Bake it a little less for a runnier soufflé and a little more for a firmer soufflé. Serve immediately.

Alternatively, bake in a 7-cup soufflé at 375° for 45 minutes. Serve immediately.
