SALTED CASHEW OATMEAL COOKIES
My son absolutely loves cashews, so I loaded my oatmeal cookies with them at Christmas-he loved them! The mix makes a great gift for friends, co-workers and teachers; all they have to do is add butter, vanilla and eggs. -Richard Hatch, Glen Burnie, Maryland

Steps:
- Whisk flour, baking soda and cinnamon. In a 1-qt. glass jar, layer flour mixture, brown sugar, granulated sugar, oats and cashews in order listed. Cover and store in a cool dry place up to 3 months., To prepare cookies: Preheat oven to 350°. Beat butter and vanilla extract until light and fluffy. Add egg and yolk until well blended. Add cookie mixture; mix well., Drop by tablespoonfuls 1-1/2 in. apart on parchment-lined baking sheets. Bake until lightly browned, 10-12 minutes. Remove from pans to wire racks to cool. Store in an airtight container.

CHEWY OATMEAL-RAISIN COOKIES

- Combine the oats, flour, cinnamon, baking powder and salt in a large bowl. Beat the butter, sugar and molasses in a large bowl with a mixer on medium-high speed until fluffy, about 5 minutes. Beat in the egg and vanilla until smooth, about 2 more minutes. Reduce the mixer speed to low, add the flour mixture and beat until combined. Stir in the raisins by hand. For the best flavor and texture, cover the dough and chill at least 4 hours, or overnight.
- Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Form the dough into 12 balls, about 2 tablespoonfuls each, and arrange 3 inches apart on the prepared baking sheets. Flatten with the back of a fork. Bake until the cookies are golden, 15 to 17 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.
MAMA'S CHEWY OATMEAL COOKIES
Chewy and delicious. Everyone that tries my oatmeal cookies gets hooked! I recreated this recipe from memory from my childhood. They are so good, they have a place in every woman's cookbook in my family.

- Preheat oven to 350 degrees. Line 2 baking sheets with nonstick baking mats or parchment paper.
- In a small bowl, whisk together the flour, cinnamon, baking soda, nutmeg, and salt; set aside. Place butter, sugar, and honey in the bowl of an electric mixer fitted with the paddle attachment; beat on medium-high speed until light and fluffy, about 4 minutes. Add the eggs and vanilla, and beat to combine. With the mixer on low, gradually add reserved flour mixture and beat until incorporated. Stir in oats and cherries.
- Drop 1 tablespoon of dough at a time about 2 inches apart on prepared baking sheets. Bake until lightly golden brown, 10 to 12 minutes. Let cool on sheets for 5 minutes, then transfer cookies to a wire rack to cool completely. Cookies can be kept in an airtight container at room temperature for up to 3 days.
CHEWY SPICED OATMEAL AND CASHEW COOKIES
I try to pretend these cookies are healthy. Oats are healthy, right? Believe me on the black pepper. You won't taste it, but it leaves a slight (very slight) tingle in your mouth, and brings out the flavour of the other spices.

- Pre-heat oven to 190°C.
- Cream the butter and two sugars until fluffy.
- Beat in the eggs one by one and add the vanilla.
- In a separate bowl, mix together the flour, bicarbonate of soda, salt, cinnamon, ginger and pepper.
- Stir this mix into the butter mixture.
- Stir in the oats and cashew nuts.
- Chill for an hour in the fridge, then spoon golfball-sized balls of mixture onto a baking sheet and bake for 8-10 minutes.
- When ready, remove from the oven and allow to cool for 5 minutes before removing them from the baking sheet onto a cooling rack.

- Set oven to 350 degrees F.
- Generoulsy grease cookie sheet/s.
- In a large bowl mix together the butter with brown sugar, maple extract and eggs; beat using an electric mixer on medium speed until fluffy and no sugar granules remain (about 3 minutes).
- In a bowl combine the flour with baking soda and salt; add to the creamed mixture and beat until just combined.
- Stir in the oats until combined (the batter will be thick).
- Mix in nuts or baking chips (if using).
- Drop by heaping teaspoonfuls onto greased cooking sheet spacing about 2-inches apart.
- Bake for 8-10 minutes or until lightly golden (do not overbake).
- Cool for 2-3 minutes then remove to rack to cool completely.
