TENDER TOMATO CHICKEN BREASTS

Tender Tomato Chicken Breasts image

This is a light, juicy, flavorful dish. Being a mom of a 7 month old, I've learned to take a lot of shortcuts and still be able to cook quality food. This is quick, easy, and tasty. If you absolutely must use fresh veggies, that's ok, but frozen veggies, in my opinion, work a little bit better. Serve with rice, if desired. To kick it up a bit, add chopped green peppers in with the tomatoes.

Time 45m

Yield 3

Number Of Ingredients 8

1 tablespoon olive oil
3 skinless, boneless chicken breast halves
1 tablespoon ground black pepper, or to taste
3 tablespoons onion powder, or to taste
1 (28 ounce) can chopped stewed tomatoes, 1/2 the liquid reserved
1 (14 ounce) can chicken broth
1 (10 ounce) package frozen mixed vegetables
¼ cup water

Steps:

  • Heat the oil in a skillet over medium heat. Season chicken breasts on both sides with pepper and onion powder, and arrange in the skillet. Cook 2 minutes on each side, just until browned. Pour tomatoes and reserved liquid over the chicken. Pour in broth. Cover skillet, and continue cooking 15 minutes on each side, until chicken juices run clear.
  • While the chicken is cooking, place the frozen mixed vegetables and water in a pot. Scoop about 3/4 cup liquid from the skillet, and mix into the pot. Bring to a boil, and cook 5 minutes, or until vegetables are tender; drain. Arrange chicken breasts over the vegetables, and drizzle with liquid from the skillet to serve.

CHICKEN BREASTS WITH BROWN BUTTER-GARLIC TOMATO SAUCE

Chicken Breasts with Brown Butter-Garlic Tomato Sauce image

Browned butter is the quick cook's best-kept secret: Less than two minutes in the pan caramelizes the milk solids in butter for a fragrant, nutty note in any dish. Try not to chop the tomatoes too finely; you want them somewhat chunky so they'll break down in the sauce faster, but you also want them to retain some shape. If your chicken breasts are larger than 6 ounces (some can be as big as 12 ounces), halve the two breasts horizontally instead of pounding them thin. Serve over a bed of whole-wheat couscous, whole-grain polenta, or brown rice.

Provided by Adam Hickman

Yield Serves 4 (serving size: 1 chicken breast and about 1/3 cup tomato mixture)

Number Of Ingredients 8

4 (6-oz.) skinless, boneless chicken breasts
3/4 teaspoon kosher salt, divided
3/4 teaspoon black pepper, divided
2 tablespoons olive oil, divided
2 tablespoons unsalted butter
6 garlic cloves, sliced
2 cups halved grape tomatoes
3 tablespoons fresh flat-leaf parsley leaves

Steps:

  • Place chicken breasts on a cutting board; pound to a 1/2-inch-thickness using a meat mallet or small, heavy skillet (all four breasts should fit in one large skillet). Sprinkle chicken with 1/2 teaspoon salt and 1/2 teaspoon pepper.
  • Heat 1 tablespoon oil in a large skillet over medium-high. Add chicken to pan; cook 4 to 5 minutes on each side or until done. Remove from pan; keep warm. Do not wipe pan clean.
  • Reduce heat to medium. Add remaining 1 tablespoon oil, remaining 1/4 teaspoon salt, remaining 1/4 teaspoon pepper, butter, and garlic to drippings in pan; cook 2 minutes or until butter just begins to brown, stirring frequently. Stir in tomatoes; cook 2 minutes or until tomatoes are wilted. Spoon tomato mixture over chicken; sprinkle with parsley.

Time 1h25m

Yield 3

Number Of Ingredients 17

1 teaspoon ground cinnamon
¾ teaspoon kosher salt
½ teaspoon ground black pepper
½ teaspoon dried oregano
¼ teaspoon cumin
⅛ teaspoon garlic powder
⅛ teaspoon onion powder
3 (5 ounce) skinless, boneless chicken breasts
2 tablespoons vegetable oil
1 onion, finely chopped
3 cloves garlic, minced
1 carrot, minced
1 stalk celery, minced
1 (8 ounce) package fresh mushrooms, sliced
½ cup dry white wine

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix together cinnamon, salt, black pepper, oregano, cumin, garlic powder, and onion powder in a bowl. Pat the seasoning onto all sides of chicken. Reserve extra seasoning for sauce.

CHICKEN BREASTS WITH TOMATOES AND CAPERS

Chicken Breasts With Tomatoes and Capers image

This recipe was originally developed by Pierre Franey in 1991 for the 60-Minute Gourmet column, a weekly feature dedicated to Times-worthy dishes that were easy, quick and inexpensive. This recipe fit the bill perfectly, and it still does. Just sauté the chicken breasts until they are lightly browned. Then add shallots and garlic, tarragon, tomatoes, vinegar, capers, white wine and tomato paste. Stir well and cook for about 9 minutes more. That's it.

Provided by Pierre Franey

Categories     dinner, one pot, main course

4 teaspoons finely chopped fresh tarragon, or 2 teaspoons dried tarragon

1/4 cup red wine vinegar
1/4 cup drained capers
1 cup dry white wine
2 tablespoons tomato paste
1/4 cup chopped fresh parsley leaves

Steps:

  • Sprinkle the chicken with salt and pepper. Heat the oil and butter in a heavy-bottom skillet. Add the chicken breasts and saute over medium-high heat, turning the pieces often until lightly browned, about 5 minutes.
  • Add the shallots and garlic around the chicken. Cook briefly; add the tarragon, tomatoes, vinegar, capers, wine and tomato paste. Stir to dissolve the brown particles adhering to the bottom of the skillet.
  • Blend well, bring to a boil, and then cover and simmer for 9 minutes. Sprinkle with parsley and serve.

CRISPY ITALIAN CHICKEN BREAST WITH TOMATO SAUCE AND MOZZARELLA RECIPE (SIP BITE GO)

Crispy Italian Chicken Breast with Tomato Sauce and Mozzarella Recipe (Sip Bite Go) image

My version of crispy Italian chicken breast is seasoned with Italian herbs, Argo® Corn Starch, and flour. Once coated, the chicken is pan fried for a few minutes on each side. It's delicious served with a simple, but impressive marinara sauce made from crushed tomatoes (which I'll teach you how to make). To finish it off, the crispy fried chicken is broiled in the oven for a few minutes with marinara sauce and fresh mozzarella. Then topped with fragrant basil.

Provided by Jenna Passaro

Categories     Dinner     Main Course     Main Dish

Time 1h20m

Number Of Ingredients 20

28 ounces tomatoes (crushed)
1 tbsp garlic (diced)
1 medium yellow onion (diced)
2 tbsp olive oil
1/2 tsp oregano (dried)
1/2 tsp parsley (dried)
1/4 tsp red pepper flakes
1 bay leaf (optional)
salt and pepper to taste
1 tbsp fresh basil (chopped (optional))
1.5 lb chicken (breast, pounded 1/2" thin)
1 tsp oregano (dried)
1 tsp parsley (dried)
1/4 cup flour (all purpose)
1/4 cup Argo® Corn Starch
salt and pepper (to taste)
1 tbsp oil
1 tbsp butter
1/2 lb mozzarella (log cut in 1/2" discs)
1 tbsp fresh basil (optional)

Steps:

  • Make the garlic tomato sauce. In a deep saucepan on medium heat, combine the crushed tomatoes, garlic, onion, oil, oregano, parsley and red pepper flakes. Stir together. Once the sauce begins to boil, turn down to medium-low. Occasionally stir every few minutes while the sauce simmers for 30 minutes. Once it's done, turn off the heat and cover with a lid until the chicken is done. Remove bay leaf. Add fresh basil if desired.
  • Prepare the chicken. First, mix together oregano, parsley, flour, and corn starch, salt and pepper in a shallow bowl or plate. Coat both sides of the chicken with the mixture.
  • Heat a large pan on medium-high. Add oil and butter to the pan. Once butter melts, add chicken. Brown each side for 5-7 minutes, until golden brown. Note: do not flip the chicken until the side touching the pan is golden brown. Once each flat side is golden brown, use tongs to hold the chicken while searing the edges for a few seconds. Once the outside is golden brown and the internal temperature of the chicken is cooked (use a thermometer if you're not sure), turn off the heat. Set the oven broiler on high.
  • Transfer chicken to a baking sheet with parchment paper. Add sauce and mozzarella. Broil on high for 2-5 minutes, checking regularly until cheese melts. Keep an eye on the chicken and parchment paper so it doesn't burn. Top with fresh basil leaves. Serve over pasta or with your favorite side.

CHICKEN BREAST WITH TOMATO SAUCE AND MOZZARELLA

Chicken Breast With Tomato Sauce and Mozzarella image

I developed this, and the great thing about this recipe is that you can coat the breasts, brown them in oil and then refrigerate for up to 8 hours before continuing with the remainder of the recipe, which makes this a great recipe to serve to dinner guests, 30 minutes before serving just drizzle with the marinara sauce and bake! I use recipe#136292 that I make and freeze to use in recipes or recipe#71273 can also be used, your own favorite marinara or pasta sauce can also be used. If you are using more than 7 chicken breasts you will need a larger baking dish and breadcrumb mixture and marinara sauce will need to be increased. It is best to use fresh not frozen thawed breasts for this, with previous experience cooking frozen thawed breasts sometimes tend to create a soggy crust, if you are using frozen thawed make certain that your chicken breasts are completely thawed with no extra moisture left in them. You will love this dish!

Categories     Chicken Breast

Time 55m

Yield 8 chicken breats

Number Of Ingredients 10

7 boneless skinless chicken breasts
2 large eggs, slightly beaten
2 cups dry breadcrumbs (use dry breadcrumbs only!)
1/4 cup grated parmesan cheese
1/2-1 teaspoon garlic powder
1 teaspoon dried Italian seasoning
1 -2 teaspoon seasoning salt
1/2 teaspoon black pepper (or to taste)
2 -3 cups marinara sauce (use about 1/3 cup sauce for each breast, but can use more)
7 -14 slices mozzarella cheese (or to taste)

Steps:

  • Grease a 13 x 9-inch baking pan.
  • In a shallow dish mix together the breadcrumbs with the next 5 ingredients.
  • In another small shallow dish whisk the eggs.
  • Heat oil in a skillet over medium-high heat (use enough oil to coat bottom of the skillet).
  • Dip the breasts first in the egg (shaking off any excess egg) and then coat in the breadcrumbs mixture.
  • Place in oil and cook on both sides until browned (about 3-4 minutes on each side, do not cook the breasts completely just until the outside breadcrumb coating is lightly browned).
  • Place the browned breasts single layer in the greased casserole dish.
  • At this point you can cool and refrigerate until ready to bake.
  • Spread about 1/4 to 1/3 cup the marinara sauce over the browned breasts (not too much sauce or it will cause the outside breading to turn soggy and soft, if you do not mind that then use as much sauce as you like!).
  • Set oven to 350 degrees, oven rack set to bottom position.
  • Bake for about 35 for smaller thin breasts and 45 minutes for thicker-sized breasts or until the chicken is done (if you are baking the chicken from refrgerated then cooking time might take a little longer, cooking time will vary depending on the size of the chicken breasts).
  • Remove the chicken and place 1 or 2 slices of mozzeralla cheese on top of each cooked breast then return to oven for anout 4-5 minutes or until cheese is hot and bubbly or place under the broiler to melt cheese.
  • Delicious.

  • CHICKEN: Sprinkle the chicken with a pinch of salt and pepper on both sides. Heat a large nonstick skillet over medium-high heat with the olive oil. Add the chicken to the skillet and cook for about 3-5 minutes per side or until the chicken is completely cooked through, remove to a plate. If you are planning on serving this with pasta, get the water going and cook the pasta according to package directions.
  • TOMATO SAUCE: Preheat the oven on the broiler setting. Add the onions to the oil remaining in the pan. If there isn't any, add in about ½ teaspoon and sauté the onion for 2-3 minutes until they soften, add the garlic and let cook for 30 seconds. Add the crushed tomatoes, Italian seasoning, red pepper flakes, dried basil, and pesto and stir to combine. When the sauce reaches a simmer, add a ¼ cup of water, lower the heat, cover and allow to simmer for 10-12 minutes or until the sauce thickens a bit. Season with salt and pepper to taste.
  • ASSEMBLE: Nestle the chicken breasts into the sauce and using a spoon, cover the chicken with sauce. Top each breast with a slice of cheese. Place under the broiler for 1-2 minutes or until the cheese gets nice and bubbly and just melts. Top with chopped parsley or basil ribbons. Serve with pasta or crusty bread and a salad.
