Fresh Lasagna with Walnut Pesto image

Provided by Claire Thomas : Food Network

Categories     main-dish

Time 30m

Yield For 2 to 4

Number Of Ingredients 13

1 1/2 cups cherry tomatoes
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
1/3 cup walnuts
2 medium cloves garlic, crushed
1/3 cup freshly grated Parmigiano-Reggiano or Pecorino Romano cheese
1 cup packed fresh basil leaves
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 large zucchini or summer squash, thinly sliced lengthwise (about the thickness of lasagna noodles) into 9 slices
1 to 2 tomatoes, halved then sliced 1/4 inch thick
1/4 cup roughly chopped basil
Extra-virgin olive oil, for drizzling

Steps:

  • Roast the cherry tomatoes: Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment or a silicone baking mat.
  • Place the cherry tomatoes on the prepared baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast until the tomatoes are juicy and slightly caramelized, about 20 minutes. Set aside.
  • Meanwhile, make the walnut pesto: Combine the walnuts, garlic, cheese and basil in a food processor and process until smooth. Add big pinches each of salt and pepper. With the machine running, drizzle in the olive oil. Add more salt and pepper, to taste. Set the pesto aside.
  • To assemble: Place 3 slices of the zucchini, slightly overlapping them, on a large plate. Add enough pesto to coat the zucchini (2 to 3 tablespoons). Top with a layer of sliced tomatoes. Top with 3 more zucchini slices, some of the pesto and cherry tomatoes and 2 tablespoons of the basil. Top with another layer of zucchini, pesto, sliced tomatoes and cherry tomatoes. Sprinkle with salt and pepper and the remaining 2 tablespoons basil. Drizzle with extra-virgin olive oil and serve.

FRIED CHICKPEA POLENTA (PANELLE)

Yield Makes 8 servings or more

Number Of Ingredients 6

4 cups water
1 teaspoon coarse sea salt or kosher salt
1/2 cup extra-virgin olive oil, plus more for the baking sheet and for frying
1/2 pound chickpea (garbanzo) flour
Recommended Equipment:
A heavy-bottomed 3-quart saucepan or deep sauté pan, about 10-inch diameter; a stiff wire whisk; a rimmed baking sheet, 9 by 13 inches (a quarter-sheet), or a shallow baking pan of the same size, bottom and sides lightly brushed with olive oil; a stiff metal spatula

Steps:

  • Pour 4 cups water, the salt, and the olive oil into the saucepan, and gradually whisk in the chickpea flour until smooth. Set over medium heat, and whisk constantly as the batter slowly heats. It will thicken and eventually steam but does not need to boil. Cook and keep whisking, scraping the bottom and sides of the pan frequently, until the mixture is quite stiff and starts to pull away from the sides as you stir it, 15 to 20 minutes.
  • Turn the batter into the oiled pan, and spread it quickly with the spatula, before it cools and sets, so it fills the pan in an even layer. Wet the spatula with water, and smooth the top of the batter. Let cool for an hour or longer, until completely firm.
  • Cut pieces with a sharp knife, in whatever size or shape you like and in the amount you need. I cut 1 1/2-inch squares for appetizers and Sicilian-style sandwiches; 2-by-3-inch bars-at least two per person-to accompany a main course. Lift the cut pieces from the pan with a spatula (seal the remainder with plastic wrap and refrigerate for longer keeping).
  • To fry the panelle, pour enough extra-virgin olive oil into the heavy skillet to cover the bottom with 1/8 inch of oil, and set over medium heat. When the oil is hot, lay in the panelle, leaving plenty of space between them. Fry about 3 minutes, until the underside is crisp and golden, then flip them over and brown the second side, about 2 minutes more. Set the panelle on paper towels to drain and cool for a minute, but serve while they are still warm (though they taste good at room temperature too!).

POLENTA LASAGNA WITH SPINACH AND HERBY RICOTTA

Polenta Lasagna With Spinach and Herby Ricotta image

With a dense, creamy texture and sweet corn flavor, this hearty and unexpected variation on the usual lasagna uses layers of Parmesan-topped baked polenta in place of pasta. This meatless recipe is speckled green with baby spinach and lots of parsley and basil. Be sure to get a good brand of marinara sauce, preferably a chunky one with bits of tomato, for the richest flavor and texture. Or even better, if you have homemade marinara sauce tucked away in the freezer, use it here instead.

Categories     dinner, casseroles, main course

Time 2h30m

Yield 8 to 12 servings

Number Of Ingredients 14

4 tablespoons unsalted butter, plus more for greasing the pan
1 tablespoon plus 1/2 teaspoon kosher salt
2 cups polenta (not instant)
5 ounces baby spinach (about 5 cups)
2 cups grated Parmesan
1 pound whole-milk ricotta (about 1 2/3 cups), preferably fresh
3 tablespoons finely chopped parsley
2 tablespoons finely chopped fresh basil (or use more parsley)
1 large egg
1/2 teaspoon black pepper
1/8 teaspoon grated fresh nutmeg
1 (25-ounce) jar good-quality marinara sauce (3 cups)
Large pinch of red-pepper flakes, 1 pinch of dried oregano, 1 grated garlic clove or a drizzle of good extra-virgin olive oil, or a combination (optional)
1 pound shredded mozzarella (about 4 cups)

Steps:

  • Heat oven to 425 degrees and butter an 13-by-18-inch rimmed baking sheet pan. Grease a rubber spatula with butter.
  • Prepare the polenta: In a large pot, bring 6 cups water and 1 tablespoon salt to a boil over high heat. Reduce heat to medium, then slowly pour in polenta, whisking constantly. Cook, whisking often, until polenta thickens, 8 to 12 minutes. Whisk in 4 tablespoons butter until melted. Whisk in spinach until wilted, about 2 minutes. Remove from heat and mix in 1 cup grated Parmesan.
  • Scrape polenta onto the prepared baking sheet. Using the greased rubber spatula, spread the mixture into a thin, even layer to cover the entire pan, all the way to corners. Sprinkle 1/2 cup grated Parmesan on top. Bake until polenta is firm and cheese has melted, 12 to 18 minutes. Let cool in the pan on a wire rack until completely cooled, about 1 to 1 1/2 hours, or place in refrigerator until cool to touch, about 40 to 50 minutes. (Polenta can be baked the day before and refrigerated until needed.)
  • When ready to bake the lasagna, heat oven to 400 degrees. Butter a 9-by-13-inch baking dish.
  • Prepare the ricotta filling: In a small bowl, mix ricotta, parsley, basil, egg, black pepper, nutmeg and the remaining 1/2 teaspoon salt. Mix until well combined and set aside.
  • Taste the marinara sauce. If it needs some zip, stir in any or all of the optional ingredients.
  • Assemble the lasagna: Using a knife or pizza cutter, cut cooled polenta in half widthwise, creating 2 pieces roughly 9 by 13 inches each. Using a large spatula, gently place one half in prepared baking dish. (It is important for polenta to be completely cooled and firm; otherwise, the pieces may break when transferring to baking dish. If anything breaks, just reassemble it in the pan. It won't make much of a difference once it's covered in sauce and baked.)
  • Spread about half the ricotta mixture in an even layer on top of polenta. Pour about half of marinara sauce on top of ricotta, sprinkle with about half of the shredded mozzarella. Repeat with remaining polenta, ricotta, marinara and mozzarella. Once assembled, sprinkle the remaining 1/2 cup Parmesan on top.
  • Place baking dish on top of a rimmed sheet pan in case the lasagna bubbles over. Bake until cheese melts, about 30 minutes. If you like, you can broil lasagna for 2 minutes after baking until cheese starts to bubble and develop brown spots.
  • Remove from oven and let lasagna stand for about 15 minutes to firm up before serving. Leftovers can be refrigerated for up to 1 week or frozen for up to 3 months.

Yield Makes 8 servings

Number Of Ingredients 20

Sauce:
2 tablespoons (1/4 stick) unsalted butter
1/4 cup all purpose flour
2 1/2 cups reduced-fat (2%) milk
1/2 cup dry white wine
1 cup freshly grated Parmesan cheese
1/2 teaspoon salt
Spinach:
2 tablespoons olive oil
1/2 cup finely chopped shallots
4 large garlic cloves, finely chopped
3 6-ounce packages baby spinach
Lasagna:
15 no-boil 7 x 3 1/2-inch lasagna noodles (from two 9-ounce packages)
3 1/2 cups fresh ricotta cheese* (28 ounces)
1 cup freshly grated Parmesan cheese
1/2 teaspoon finely grated lemon peel
1 large egg
2 cups coarsely grated Italian Fontina cheese (8 to 9 ounces), divided
Herb Pesto

Steps:

  • For sauce:
  • Melt butter in heavy large saucepan over medium heat. Add flour and whisk 1 minute (do not brown). Add milk and wine and whisk until smooth. Cook until sauce thickens and comes to boil, whisking constantly, 4 to 5 minutes. Remove from heat. Whisk in Parmesan cheese and salt. Season sauce to taste with pepper. DO AHEAD: Sauce can be made up to 1 day ahead. Cover and chill.
  • For spinach:
  • Heat oil in large pot over medium-high heat. Add shallots and garlic. Sauté until shallots soften, about 2 minutes. Add all spinach (pot will be full). Cook spinach until wilted but still bright green, tossing often, about 3 minutes. Using tongs, transfer spinach to large sieve set over bowl; reserve pot. Press out excess liquid from spinach. Drain 10 to 15 minutes longer.
  • Return drained liquid from spinach to reserved pot. Boil until liquid is reduced to glaze. Return spinach to pot and toss 1 minute. Remove spinach from heat. Mix in 1 1/2 cups sauce. Season spinach to taste with pepper.
  • For lasagna:
  • Place noodles in large bowl. Fill bowl with hot tap water. Soak noodles until pliable, stirring occasionally to separate, about 15 minutes. Place large sheet of parchment paper on work surface. Transfer noodles to parchment in single layer, shaking off excess water.
  • Preheat oven to 350°F. Butter 13 x 9 x 2- inch glass baking dish. Mix ricotta, Parmesan, and lemon peel in medium bowl. Season to taste with salt. Mix in egg.
  • Spread 1/2 cup sauce thinly over bottom of prepared dish. Top with 3 noodles, arranged side by side and covering most of bottom of dish. Spread half of spinach mixture over (about 1 1/2 cups). Sprinkle with 1/3 cup Fontina. Top with 3 noodles and half of ricotta mixture (generous 1 3/4 cups). Drop half of pesto over by teaspoonfuls, spacing drops evenly apart. Continue layering with 3 noodles, remaining spinach mixture, 1/3 cup Fontina, 3 more noodles, remaining ricotta mixture, then remaining pesto. Top with last 3 noodles. Spread remaining sauce over; sprinkle with remaining Fontina. Cover dish with buttered foil.
  • Bake lasagna until heated through and bubbling at edges, 50 to 55 minutes. Remove from oven. Remove foil from dish.
  • Preheat broiler. Broil lasagna until top is browned in spots, turning dish occasionally for even browning, about 4 minutes. Let stand 15 minutes to set up.
  • Available at some supermarkets and at specialty foods stores and Italian markets.

SPINACH LASAGNA WITH WALNUT PESTO

Spinach Lasagna with Walnut Pesto image

A simple lasagna recipe that pairs the rich taste of spinach with a delicious walnut pesto.

Provided by California Walnuts

Categories     Vegetarian Lasagna

Time 1h30m

Yield 8

Number Of Ingredients 19

1 teaspoon A little olive oil for the pan
2 pounds fresh spinach, washed*
2 pounds nonfat ricotta cheese or nonfat cottage cheese
Walnut Pesto (recipe follows)
4 large cloves garlic, minced
½ teaspoon salt
1 pinch Freshly ground black pepper to taste
½ cup grated Parmesan cheese
⅓ cup minced walnuts, lightly toasted
1 (24 ounce) jar low-sugar tomato sauce (or your favorite sauce)
16 noodles fresh, uncooked green (spinach) lasagna noodles or, if using dried, no-boil noodles
½ pound low-fat mozzarella cheese, grated
3 cups packed fresh basil leaves
3 large cloves garlic
⅓ cup lightly toasted walnuts
⅓ cup extra virgin olive oil
⅓ cup grated Parmesan cheese
1 pinch Salt and pepper to taste
Additional extra-virgin olive oil (for storage)

Steps:

  • Preheat the oven to 350 degrees F. Lightly oil a 9 x 13-inch baking pan. If using fresh spinach, chop it fine. If using frozen, chopped spinach, make sure it is thoroughly defrosted and squeeze out all of the excess water.
  • Place the ricotta or cottage cheese in a large bowl. Stir in the spinach, pesto, garlic, salt, pepper, half the Parmesan, and the walnuts. Mix well. Spread half the tomato sauce in the bottom of the pan. Place a layer of uncooked noodles over the sauce. Spoon about 1/3 of the ricotta or cottage filling in dabs over the noodles (you can spread it a little, but not too much) and sprinkle with 1/3 of the grated mozzarella. Follow with another layer of sauce, then noodles, followed by another 1/3 of the filling, and another 1/3 of the mozzarella. Repeat one more time, and then finish up with a final layer of noodles. You will have some Parmesan left over.
  • If you are using fresh noodles, bake uncovered. If you are using dried noodles, cover the pan tightly with foil.
  • Bake for 50 minutes, uncovering the pan (if applicable) during the last 15 minutes, during which time you can sprinkle on the reserved Parmesan. (In the case of the uncovered pan, if the top of the lasagna becomes as brown as you like it before the full baking time is up, cover loosely with foil and continue baking, so it wont get too dark.) Remove from the oven and let cool for about 10 minutes before serving.
  • Walnut Pesto: Place the basil leaves and garlic in a food processor or blender, and mix well.
  • Add the walnuts, and continue to blend until the walnuts are finely ground.
  • Keep the machine running as you drizzle in the olive oil. When you have a smooth paste, transfer to a bowl, and stir in the Parmesan. Season to taste with salt and pepper.
  • If you are not going to use the pesto right away, place in a container that has a tight-fitting lid. Smooth out the top surface of the pesto, and pour on enough olive oil to cover it completely. This creates an air-proof seal that helps preserve it well. Cover tightly and store in the refrigerator.

This is from allrecipes.com, where at the moment I read it, it had 24 glowing reviews. I can hardly wait to make it. Vegetarians and meat eaters alike loved it; so did those allergic to wheat. CHICKPEA POLENTA LASAGNA WITH SPINACH WALNUT PESTO

Chickpea Polenta Lasagna With Spinach Walnut Pesto image

Make and share this Chickpea Polenta Lasagna With Spinach Walnut Pesto recipe from Food.com.

Provided by Chef Johnny Ringo

Categories     < 4 Hours

Time 1h30m

Yield 8 serving(s)

Number Of Ingredients 17

4 cups water or 4 cups broth
1 teaspoon kosher salt
1/2 cup extra-virgin olive oil
1/2 lb garbanzo flour
24 ounces spinach (Thawed and drained frozen is fine)
3 garlic cloves, halved
3 tablespoons walnuts
1/2 teaspoon dried leaf basil
1/4 cup extra virgin olive oil
1/3 cup grated parmesan cheese
1/8 teaspoon salt
2 cups marinara sauce
1/2 yellow onion
1 tomatoes
1/2 cup ricotta cheese
1 cup mozzarella cheese
1/2 cup parmesan cheese

Steps:

  • Polenta:.
  • Combine water, salt, and the olive oil in a saucepan, and gradually whisk in the chickpea flour until smooth. Cook over medium heat, whisking constantly, until the mixture is stiff and starts to pull away from the sides as you stir it, 15 to 20 minutes.
  • Spoon into a lightly oiled 9x13 pan, and spread it quickly with the spatula in an even layer. Let cool for one our until completely firm. Can be made the day before.
  • Spinach Walnut Pesto: Combine all incredients in a food processor and process until smooth. Depending on the texture you like you may need to add more oil and / or water. By the way, this makes WAY more pesto than you'll need, but it's delicious so use it for something else.
  • Putting it all together:.
  • Slice the Polenta to fit whatever pan you're going to make the lasagna in, you'll need two layers. I made mine in a bread pan, so had about 1/3 left over to use for something else.
  • Brown the Polenta in a little oil on a non-stick grill.
  • Slice the tomato and cook the slices in a little oil on a non-stick grill until nicely carmelized.
  • Chop the half onion into the size pieces you like and cook in a little oil on a non-stick grill until nicely carmelized.
  • Place the first layer of polenta in a buttered baking dish.
  • Spread as much pesto as you like on it.
  • Spread with Marinara sauce.
  • Place tomatoes on top.
  • Place carmelized onions on top.
  • Place small spoons full of Ricotta on top to form an even layer.
  • Put a layer of Mozzarella and Parmesan.
  • Top with the next layer of Polenta and cover all with marinara sauce.
  • Bake in a 375 degree oven for about 25 minutes, until hot and bubbling.
  • Remove from the oven, set oven to broil, top with remaining Mozzarella and Parmesan and broil until the cheese is nicely browned.
  • Let cool for a few minutes before slicing and enjoying!
