I worked at Chili's for 2 1/2 years and just this year they came out with the most delicious guacamole I'd ever tried. This is the authentic recipe for it.

4 avocados
1/2 cup pico de gallo
1 -2 ear corn
1 -2 whole jalapeno
3 tablespoons lime juice
4 teaspoons cilantro
2 teaspoons salt

Steps:

  • Husk and wash corn, then deep fry for 1 minute.
  • Wash jalapeno(s) and deep fry for 1 minute.
  • Place corn on the cob and jalapeno(s) on gas grill and cook until slightly blackened on each side.
  • Remove corn kernels from cob and measure out 1 cup of kernels.
  • Finely chop jalapeno(s) after removing stem.
  • In a large bowl, mash the avocados.
  • Mix in pico de gallo, fire-grilled corn kernels, jalapenos, lime juice, cilantro, and salt.
  • Serve with tortilla chips and salsa.
  • Enjoy!

Oil (enough for deep frying)
1 - 2 ears Corn
1 - 2 whole Jalapeños
4 Avocados
1/2 cup Pico de Gallo (store bought or homemade)
3 tablespoons freshly squeezed Lime Juice
4 teaspoons Cilantro
2 teaspoons Salt (to taste)
Grated Cotija Cheese (to garnish)
Warm Tortilla Chips (to serve)
Salsa (store bought or homemade, to serve)

Steps:

  • In a deep fryer or on the stovetop in a large pot or Dutch oven, heat oil to 350°F.
  • Preheat grill to hot fire.
  • Husk and wash corn.
  • When oil is hot deep fry corn for 1 minute. Remove and set aside.
  • Place jalapeños in hot oil and deep fry for 1 minute. Remove.
  • Place corn and jalapenos on grill. Cook, turning, until lightly blackened evenly on all sides. Alternately, blacken under the broiler, turning frequently. Remove from grill (or oven) and allow to cool enough to touch.
  • Remove corn kernels from cob. Measure out 1 cup of kernels. Set aside.
  • Remove stem from jalapeño. Finely chop. Set aside.
  • When Ready to Enjoy Guacamole
  • Starting at the top, with a very sharp knife, cut down into each avocado until you hit the pit. Cut completely around the avocado, top to bottom, touching the pit the entire time.
  • Pull the two halves of the avocado apart and remove the pit with a spoon.
  • Use the spoon to scoop the avocado out of the skin. (Some people like to score the avocado with a knife before scooping.) Make sure to gently scrap the skin to get the dark, creamy "good stuff."
  • Place 2/3 to 3/4 of the softest avocados in a mixing bowl. Using a fork, roughly mash them.
  • Place the remaining firmest avocados on a cutting board or plate and chop into 1/4 to 1/2-inch pieces. Add these to the mashed avocado in the bowl and mix well.
  • Add pico de gallo, roasted corn kernels, roasted jalapeños, lime juice, cilantro and salt.
  • Sprinkle with cotija cheese.
  • Serve immediately with tortilla chips and salsa.

1 pound dried pinto beans, soaked according to package directions
1/4 cup plus 3 tablespoons corn oil
3 1/2 pounds plum tomatoes (about 18)
2 1/2 pounds medium yellow onions (about 7), stem ends trimmed, quartered lengthwise with skins left on
10 garlic cloves (skins left on)
4 mulato chiles
3 ancho chiles
1 can (14 1/2 ounces) low-sodium beef broth
1 cup water
5 pounds ground round or ground chuck
1 tablespoon coarse salt
2 ounces Mexican chocolate or semisweet chocolate, chopped
1/2 teaspoon freshly ground black pepper
Lumpy Guacamole

Steps:

  • Drain and rinse the soaked beans, and place in a large saucepan with water to cover by 2 inches. Bring to a boil, reduce heat, cover, and simmer gently until beans are tender, about 1 1/2 hours. (You can prepare beans 1 or 2 days ahead; let cool, cover, and refrigerate in their liquid.)
  • Heat 2 tablespoons oil in a 12-inch cast-iron skillet over medium heat; add tomatoes, and cook, turning occasionally, until skins begin to char, about 5 minutes. Cover pan, reduce heat to medium-low, and continue to cook, turning, until tomatoes have softened, 7 to 8 minutes more. Transfer to a large bowl. When cool enough to handle, peel and core tomatoes. Place tomato flesh in a clean bowl, and reserve.
  • While tomatoes cool, place two-thirds of onion quarters in same skillet with 2 tablespoons oil. Cover, and cook over medium heat, turning occasionally, until nicely charred and softened, 12 to 15 minutes. Transfer to a bowl to cool. Repeat with garlic cloves, remaining onion, and another tablespoon oil. When cool enough to handle, peel garlic and onion, cutting off and discarding roots and peels and adding flesh to bowl with tomato. Transfer vegetables and any juices to a blender in batches (fill no more than halfway), and puree until nearly smooth. Set aside in a large bowl.
  • Tear the chiles in half, and discard stems and seeds. In the same skillet over medium heat, toast chiles in remaining 2 tablespoons oil, turning with tongs, until smoky, about 3 minutes. Transfer to the blender. Bring broth and water to a boil, pour over chiles, and let stand until chiles are pliable, about 5 minutes. Puree chiles and broth, and stir into tomato mixture.
  • In a 7-quart Dutch oven over medium heat, cook one-third of meat, breaking it up with a spoon and stirring occasionally until nicely browned, about 8 minutes. While meat is cooking, brown another third of the meat in the skillet. Then add that batch to the first in the Dutch oven. Stir tomato mixture into meat in Dutch oven. Brown remaining beef in same skillet; add to Dutch oven. Drain cooked beans; add them to pot with salt.
  • Bring the chili to a boil, reduce heat, cover, and simmer gently, stirring, until heat is tender and sauce is thick, about 1 1/2 hours. Stir in chocolate, and season with the pepper. Serve with guacamole.

3 hot yellow chile peppers, finely chopped
1 lime, juiced
1 teaspoon garlic powder, or more to taste
5 drops hot pepper sauce (such as Tabasco®)

Steps:

  • Pit and spoon avocados into a small bowl and add cream cheese. Mash together until well blended.

1 large jalapeño chili
8 tablespoons fresh lime juice
1 large plum tomato, seeded, chopped
2 small green onions, finely chopped
1 teaspoon grated lime peel
2 large ripe avocados, peeled, pitted
2/3 cup finely chopped onion
1/2 cup (packed) coarsely chopped fresh cilantro
1/4 teaspoon ground cumin

Steps:

  • Char chilies directly over gas flame or under broiler until blackened on all sides. Enclose in paper bag at least 10 minutes and up to 1 hour. Peel, seed, and finely chop chilies. Mix chilies, 1 tablespoon lime juice, tomato, green onions, and lime peel in small bowl. Season with salt.
  • Puree next 4 ingredients and 7 tablespoons lime juice in processor until almost smooth. Season with salt. (Chili mixture and guacamole can be made 1 day ahead. Cover separately and refrigerate.)
  • Spoon avocado puree into wide shallow bowl. Spoon chili mixture into center.
  • Fresh green chilies, often called pasillas; available at Latin American markets and some supermarkets.

CHILE VERDE GUACAMOLE

Mexicans are split into two camps when it comes to guacamole: those who always add lime juice and those who absolutely do not. Many Sonoran friends shout "Never!" at the mere suggestion. Having grown up in the pro-lime camp in Mexico City, I was filled with skepticism before trying versions from the deep Mexican north, but what a pleasant surprise. The creamy and nutty avocado takes a deserving central role in Sonoran guacamoles. What won me over was the combination of two chiles: roasted Anaheim, with its tart, fresh, peppery flavors, and raw serrano, with its grassy taste and heat. (I hate to admit it, but this guacamole really needs no lime.)

1 fresh Anaheim chile
1 serrano chile, finely chopped
3 tablespoons finely chopped white onion
2 tablespoons coarsely chopped cilantro leaves and tender stems
1 teaspoon kosher or sea salt, plus more to taste
3 ripe avocados, halved and pitted, meat diced and mashed

Steps:

  • Place the Anaheim chile on a small baking sheet covered with aluminum foil. Roast it under the broiler, flipping a couple times, until the chile is wilted and its skin is completely charred and wrinkly, 9 to 12 minutes. (Alternatively, you can char the chile directly on a hot comal or a cast-iron pan set over medium heat, or on a grill set to high.)
  • Place the charred Anaheim chile in a plastic bag and close it well. Let it steam and sweat for 5 to 10 minutes.
  • As the Anaheim chile steams, add the serrano chile, onion, cilantro and salt in a bowl or molcajete, and mash until combined. Add the avocado and continue to mix and mash until you form a chunky purée.
  • Once it is cool enough to handle, remove the Anaheim chile from the bag, slip off the charred skin, make a slit down the side and remove the seeds and stem. You could rinse the chile under a thin stream of water, to help remove the seeds, or rinse it off by dipping it into a bowl of water.
  • Finely chop the Anaheim chile. Add it to the avocado mixture, and stir to combine. Season to taste with salt.
