Steps:
- Preheat Oven to 190°C /170°C fan/ 375°F.Add flour, salt and baking soda into a bowl
- Add sugar and mix dry ingredients together
- Rub butter into the dry mix using fingertips.
- Until it has a breadcrumb texture
- Add chocolate chips
- Stir through until evenly combined
- In a small bowl whisk milk, egg and vanilla extract together
- Add the whisked mixture to the rock bun mix
- Use a fork to stir well together until moist and sticky
- Separate into 9 even-sized buns use prongs on fork to rough up the buns a little.
- Cook in preheated 190°C /170°C fan/ 375°F oven for 15-20 minutes until golden.Remove from oven, allow to cool and firm up.
- Once cool enough to handle, transfer buns to a wire rack.
- Sprinkle with sugar. Eat whilst still warm!
- Or allow to fully cool then store in an airtight container until ready to eat.

- Heat the oven to 180C/160C fan/gas 4. Line a 12-hole bun tin with paper cases. Put the sugar and butter in a bowl and beat together until light and fluffy. Gradually mix in the eggs and vanilla until combined.
- Add the flour, cocoa powder and baking powder to the bowl and mix to make a smooth batter. Fold the milk through to loosen. Divide the mixture between the cases using a spoon. Bake for 20 mins, or until a cocktail stick poked into the centre of one of the cakes in the middle row comes out clean. Leave to cool in the tin for 5-10 mins, then transfer to a wire rack to cool completely
- While the cakes are cooling, make the icing. Beat together the butter, icing sugar and cocoa powder in a bowl for 5-10 mins, until you have a smooth, creamy consistency. Add the milk to loosen if needed. Pipe or spread on top of the cooled cupcakes.

CHOCOLATE CHIP HOT CROSS BUNS

- KIDS the writing in bold is for you ADULTS the rest is for you. Mix the bun ingredients. Put the strong flour, yeast, caster sugar and 1 tsp salt in a bowl with the spices and mix. Make a well in the centre and pour in the milk, egg and butter. Start mixing with a plastic or wooden spoon and finish with your hands. If the dough is too dry, add warm water, or extra flour if it's wet.
- Now stretch the dough - this is called kneading. Knead the dough on a floured surface for 10 mins until it becomes smooth and springy. This will be a bit too much work for children, so get them to start the kneading, then when they get tired, take over.
- Leave the dough to rise until doubled in size because of the yeast. Transfer to a clean, lightly greased bowl and cover loosely with a clean, damp tea towel. Leave in a warm place to rise until roughly doubled in size - this will take about 1 hr depending on how warm the room is.
- Add the chocolate chips and do some division. Tip the dough onto a lightly floured surface and flatten. Scatter over the chocolate chips (or dried fruit), and knead the dough a few more times. Divide it into 8 even portions - halve the dough, then halve each portion twice more, and explain the maths.
- Roll the dough into buns. Roll each portion into a smooth round and place on a greased baking sheet in 2 rows of 4, leaving some room between each bun for it to rise. Cover with a tea towel again and leave in a warm place to prove for 20 mins, until almost doubled in size again or just touching.
- Make the crosses on the buns and bake them. Heat oven to 200C/180C fan/gas 6. Mix the plain flour with 1 tsp sugar and 4-5 tbsp water to give you a thick paste. Spoon into a piping bag and pipe white lines on the buns to make crosses. Bake for 20 mins until they are light brown.
- Brush them with jam if you want them to be nice and shiny. If you want to enjoy the buns untoasted, gently heat the jam in a pan or the microwave, and brush over the buns using a pastry brush. If you are going to toast them, then don't glaze them as the jam will burn.

- Set oven to 210 C / gas mark 7. Grease a baking tray
- Sieve the flour into a mixing bowl
- Cut the margarine into cubes and then rub into the flour using your fingertips. The mixture should then resemble breadcrumbs
- Add the sugar and chocolate chips into the mixture. Mix using a wooden spoon
- Break egg into a small bowl and beat with a fork. Add egg to mixing bowl and mix. Add 1 - 2 tbsp of water if the mixture does not stick together. The mixture must be firm enough to stand alone on the baking tray in lumps.
- Place heaps of the mixture on the tray. Make sure that they are all an even size. Bake them for approximately 15 minutes, or until golden brown.
