6 bell peppers (any color)
5 tablespoons plus 1/2 teaspoon extra-virgin olive oil
Kosher salt
1 pound king oyster mushrooms, trimmed and finely chopped
Freshly ground pepper
8 ounces ground turkey
2 carrots, diced
1 large stalk celery, diced
1 shallot, diced
3 cloves garlic, minced
1 tablespoon Italian seasoning
2 tablespoons tomato paste
1 15-ounce can diced tomatoes
1/2 cup chopped fresh parsley
2 cups cooked white rice
3/4 cup panko
1/2 cup grated Parmesan cheese

Steps:

  • Preheat the oven to 400˚F. Cut off the tops of the peppers; pull out the seeds. Drizzle the insides with 1/2 teaspoon olive oil and season with salt. Arrange cut-side down in a 9-by-13-inch baking dish. Bake until softened but not collapsed, about 20 minutes.
  • Meanwhile, heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the mushrooms and cook, stirring, until browned, about 15 minutes; season with salt and pepper. Transfer the mushrooms to a bowl. Add 1 more tablespoon olive oil to the skillet. Add the turkey and cook, breaking it up with a wooden spoon, until browned and cooked through, about 6 minutes; season with salt and pepper. Remove to the bowl with the mushrooms and wipe out the skillet.
  • Heat 1 tablespoon olive oil in the same skillet over medium heat. Add the carrots, celery and shallot; cook until softened, 4 to 5 minutes. Add the garlic, Italian seasoning and 1 teaspoon each salt and pepper; cook 1 minute. Add the tomato paste and cook, stirring, 1 minute. Stir in the tomatoes and scrape up any browned bits with a wooden spoon. Add the parsley and cook until the sauce has thickened, 5 to 6 minutes.
  • Add the rice and mushroom-turkey mixture to the skillet and stir to combine. Season with salt and pepper. Stuff the filling into the peppers, being sure to pack it in. Stand the stuffed peppers upright in the baking dish. Cover with foil, return to the oven and bake until heated through, about 20 minutes.
  • Stir together the panko, Parmesan and remaining 1 tablespoon olive oil in a small bowl. Uncover the peppers and sprinkle evenly with the panko mixture. Return to the oven and bake until starting to brown, about 10 more minutes.

Steps:

  • Preheat oven to 350.

  • Spoon the filling into mushroom caps. Add just enough water to cover the bottom of the baking pan. Bake for 20 minutes. Serve hot.

From Ruth Van Waerebeek's "Everybody Eats Well in Belgian Cookbook." She uses it as the stuffing in her Christmas Turkey recipe, which I use on Thanksgiving. The stuffing takes a fair amount of prep (and those porcini mushrooms can be hard to find and expensive; I've started skipping them), but people absolutely love it. It's got a rich, complex taste completely different from the traditional bread-and-herb stuffing. (I looked it up: Forcemeat comes from the French "farce," to stuff. The forcemeat stuffing is more like a meatloaf.) This recipe is enough for a 12 to 14 pound turkey.

1 tablespoon dried porcini mushrooms
1/2 cup hot water
10 slices stale firm white bread, crusts removed
1 1/2 cups milk
1 turkey liver, trimmed of fat and discolored spots, rinsed and patted dry
3 tablespoons cognac
3 tablespoons port wine
4 tablespoons unsalted butter
1 large onion, finely chopped
6 ounces fresh white mushrooms, cleaned, trimmed, and thickly sliced
4 ounces fresh oyster mushrooms, cleaned, trimmed and thickly sliced
4 ounces fresh shiitake mushrooms, cleaned, trimmed and thickly sliced
1 lb ground veal
1 lb ground fresh pork butt
2 large egg yolks
15 fresh sage leaves, finely minced (or 1 tablespoon dried sage)
2 tablespoons finely minced fresh parsley
1 tablespoon dried thyme
1 tablespoon salt, plus additional to taste
1 teaspoon fresh ground black pepper, plus additional to taste
1 pinch of freshly grated nutmeg

Steps:

  • Soak porcini mushrooms in the hot water for 20 minutes. Squeeze the mushrooms dry and finely chop. Strain the soaking liquid and reserve. Tear the bread into pieces and soak in the milk. Coarsely chop the liver and marinate in the Cognac and port.
  • Melt the butter the in a large skillet over medium heat. Add the onion and cook, stirring, for 3 minutes. Add all the mushrooms and cook, stirring occasionally, until the mushrooms are nicely browned and dry, about 10 minutes.
  • Place the ground meats in a large mixing bowl. Squeeze the soaking bread by handfuls to eliminate as much of the liquid as possible, and add it to the ground meat. Add the turkey liver with the marinade. Add the mushroom mixture, the egg yolks, sage, parsley, thyme, salt, pepper, and nutmeg. Knead the mixture together with your hands until very well blended. Sauté a small bit of stuffing in a little butter; taste and adjust the seasoning.

I follow it precisely, alternately basting with drippings and butter every 15 minutes. The result is a spectacular presentation-a beautiful, dark golden brown turkey that everyone ooh's and ahh's over. It's not that hard, just takes a little extra work. And the extras-making the forcemeat stuffing beforehand and the gravy at the end-are worth the trouble. Ruth says that the Christmas Turkey is traditionally served with Deep-Fried Potatoe Croquettes, Celery Root and Potato Purée, an assortment of green vegetables, and Baked Apples Filed with Berries, or Pears Poached in Spiced Red Wine.

1 (12 -14 lb) whole turkey, neck and giblets reserved
8 tablespoons unsalted butter, at room temperature
8 tablespoons unsalted butter, melted for basting
salt, to taste
fresh ground pepper, to taste
1 tablespoon paprika
2 carrots, peeled and quartered
1 celery rib, quartered
1 medium onion, peeled and quartered
1 cup water, if needed or 1 cup chicken broth
1/4 cup cognac, for gravy
1/4 cup port wine, for gravy
1 1/2 tablespoons all-purpose flour, for buerre manie for gravy
1 tablespoon unsalted butter, for buerre manie for gravy

Steps:

  • Place a rack in the bottom third of the oven. Preheat oven to 350°F.
  • Prepare the Mushroom-Flavored Forcemeat. (See separate recipe.).
  • Stuff the turkey with forcemeat and truss with kitchen string. Spread the softened butter evenly over the turkey. Season with salt, pepper and paprika. Bake any leftover stuffing in a small casserole, just like meat loaf.
  • Spread the carrots, celery, and onion the bottom of a flameproof roasting pan large enough to hold the turkey. Place the turkey on top of the vegetables. Add the neck and giblets and pour the reserved soaking liquid from the porcini mushrooms (see Forcemeat recipe) into the pan.
  • Roast the turkey for 1 hour. Reduce the heat to 300°F and roast until cooked through, 2-1/2 hours or more for a 12-14 pound turkey. An instant-read thermometer should register between 160 to 180°F when thrust into the thickest part of the thigh without touching the bone. Baste the turkey every 15 minutes the entire time that it is roasting. Baste with drippings, alternating with the melted butter. If necessary, add 1 cup water or chicken broth to the drippings in the bottom of the pan. If the turkey starts to get too brown, cover loosely with aluminum foil. Remove the foil for the last 20 minutes to crisp the skin.
  • Remove the turkey from the over to a platter. Let rest for 30 minutes before carving.
  • While the turkey is resting, prepare the gravy: Place the roasting pan over high heat. Add the cognac and port and bring to a boil while stirring with a wooden spoon to scrape up the little browned bits on the bottom of the pan. Add a little water if the gravy seems too dry. Remove from the heat and strain out all the vegetables. Pour the liquid into a degreasing cup (also called a gravy separator). Let stand for a few minutes to let the fat rise to the top, then pour out the pan juices at the bottom of the cup into a saucepan. (All the fat will be left behind.) Reheat and serve as pan juices with the turkey. If you prefer a thicker gravy, whisk the buerre manié into the juices and, stirring constantly, boil until the gravy is smooth and thick, about 2 minutes.
  • Untie the turkey and carve it as you would a chicken. Scoop out the forcemeat and serve it on the side.

Each Thanksgiving we all looked forward to my Mom's delicious turkey with Italian meat stuffing. When she got older and could no longer cook, I took over the Thanksgiving dinners. She is no longer with us but each year members of my family continue to ask for Grandma's recipe so they can make it for their own family. I would now like to pass it on to you.

1 pound ground beef
½ (1 pound) loaf day-old Italian bread
1 large onion, chopped
2 large stalks celery with leaves, chopped
½ cup chopped fresh mushrooms
4 cloves garlic, chopped, or more to taste
1 tablespoon chopped fresh flat-leaf parsley
½ cup freshly shredded Parmesan cheese
1 large egg
salt and ground black pepper to taste
1 (15 pound) whole turkey, neck and giblets removed
2 tablespoons olive oil
2 lemons, cut in half
2 cloves garlic, chopped, or to taste
2 teaspoons garlic powder, or to taste
1 cup water

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place the ground beef into a skillet, and cook and stir the meat until browned and crumbly, breaking it up into chunks as it cooks, about 10 minutes. Drain grease. Place the ground beef into a large mixing bowl.
  • Tear the bread into rough chunks, and place into a bowl; soak bread in water until moistened, and squeeze the water out of the bread. Crumble the wet bread into the bowl with the ground beef. Mix in the onion, celery, mushrooms, 4 cloves of garlic, flat-leaf parsley, Parmesan cheese, and egg until thoroughly combined. Season with salt and black pepper.
  • Rinse the turkey, and pat dry with paper towels. Lightly stuff the turkey with the ground beef mixture, and place into a roasting pan with a lid. Rub the turkey with olive oil, squeeze lemons over the turkey, and sprinkle 2 more cloves of garlic, the garlic powder, and more salt and black pepper over the bird.
  • Roast the turkey uncovered in the preheated oven until the skin is browned, about 45 minutes. Reduce heat to 350 degrees C (175 degrees C), and cover the turkey with the lid. Continue roasting until the juices run clear and an instant-read meat thermometer inserted into the thickest part of a thigh reads 180 degrees F (80 degrees C), about 5 more hours. Baste occasionally. If the bottom of the roasting pan looks dry, pour in water.

1-1/2 pounds sliced baby portobello mushrooms
4 small onions, finely chopped

1 cup white wine or reduced-sodium chicken broth
1 cup reduced-sodium chicken broth
1/4 cup minced fresh parsley

Steps:

  • Place bread on a baking sheet; bake at 250° for 25-30 minutes or until lightly toasted., In a large skillet, saute the mushrooms, onions and celery in butter until tender. My mother-in-law was famous for her wonderful turkey stuffing, which my husband always looked forward to at holiday time. When my in-laws moved to California, he was bemoaning that he wouldn't have that stuffing anymore! I asked my mother-in-law how she made it, but she didn't have it written down, and told me "a handful of this" and a "handful of that". Needless to say, when I attempted to recreate it, it was a disaster. I started building a recipe from scratch, and ended up incorporating mushrooms, which I love. Ultimately, my husband ending up preferring my stuffing! As they say, necessity is the mother of invention!

1 lb bulk pork sausage
1/2 cup butter
1 cup sliced celery
2 cups chopped onions
8 ounces mushrooms, sliced
1 (13 3/4 ounce) can chicken broth (and additional broth, if necessary)
2 lbs loaf firm-textured white bread, cut in 1/2-inch cubes (stale or toasted, do not use fresh)
1 egg, lightly beaten
1 teaspoon poultry seasoning
1/2 teaspoon thyme leaves
1/2 teaspoon fresh ground black pepper
1/2 teaspoon salt

Steps:

  • Pan fry sausage over medium-high heat until crumbled and cooked well. Set aside.
  • In large fry pan, melt butter. Add celery, onion, and mushrooms. Saute until soft. Add chicken broth and bring to a boil. Cook down until about 1/3 of the liquid remains.
  • In large bowl, toss bread cubes with poultry seasoning, thyme, salt, and pepper. Add sausage and drippings to bowl and stir. Add vegetables and broth mixture to bowl and stir. Add egg and mix until fully combined. Mixture should be moist and bind together easily. (If not, add more chicken broth.).
  • Stuff neck and body cavities of turkey, or spoon into a greased 2-quart casserole and cover with foil. Truss turkey and roast as usual or, if baking, add casserole to oven about 30 minutes end of turkey roasting time and let bake for 45 minutes. I have also successfully made stuffing balls with this recipe, rolling the stuffing mixture into balls (I got about 15 of them), placing them on a greased, foil-lined baking sheet and baking in a 350-degree oven for about 25 minutes. They were moist and delicious!

2 cups hot water
1 ounce dried porcini mushrooms
1 ¾ pounds egg bread, crust trimmed
6 tablespoons unsalted butter
4 cups coarsely chopped leeks
1 cup shallots, chopped
1 ¼ pounds crimini mushrooms, sliced
½ pound fresh sliced shiitake mushrooms
2 cups chopped celery
1 cup chopped fresh parsley
1 cup chopped toasted hazelnuts
3 tablespoons chopped fresh thyme
2 tablespoons chopped fresh sage
2 eggs
¾ cup chicken stock
salt to taste
ground black pepper to taste
1 cup dried porcini mushrooms

Steps:

  • Combine the 2 cups hot water and the porcini mushrooms, let stand until the mushrooms are soft. About 30 minutes. Drain, reserving soaking liquid. Squeeze porcini dry and chop coarsely.
  • Preheat oven to 325 degrees F (165 degrees C). Divide cubed bread between two baking sheets. Bake until beginning to brown. About 15 minutes. Cool then transfer to a very large bowl.
  • Melt the butter in a heavy Dutch oven over medium-high heat. Add the leeks, shallots, crimini or button and shiitake mushrooms. Saute until golden and tender, about 15 minutes. Mix in the celery and porcini mushrooms and saute for another 5 minutes. Transfer mixture to the bowl with the bread crumbs. Mix in the parsley, hazelnuts, thyme and sage. Season with salt and pepper and stir in the beaten eggs.
  • To Bake The Stuffing In A Turkey: Fill the main cavity with the stuffing. Combine the broth and 1/2 cup of the reserved porcini soaking liquid in a large glass measuring cup. Add enough broth mixture to the remaining stuffing to moisten. Spoon remaining stuffing into a buttered baking dish. Cover with buttered foil. Bake stuffing in dish alongside turkey until heated through, about 30 minutes. Uncover and bake until top is crisp, about 15 minutes.
  • TO BAKE ALL STUFFING IN PAN: Preheat oven to 325 F. Butter 15x10x2-inch baking dish. Mix 3/4 cup reserved porcini soaking liquid and 3/4 cup broth into stuffing. Transfer stuffing to prepared dish. Cover with buttered foil and bake until heated through, about 1 hour. Uncover and bake until top is crisp, about 15 minutes.
