CHUNKY BRANDIED CHRISTMAS FRUITCAKE
Handwritten from my grandma's recipe collection. This is from a friend of hers, no name dated 1984. In her notes she has stated "quite chunky due to all the nuts, looks very pretty when cut"

Steps:
- Day one.
- Coarsley chop all the dried fruit and place into a large glass or ceramic bowl.
- Pour over brandy, cover with cling wrap and leave overnight (at least 12 hours) on your kitchen bench. Don't refridgerate.
- Day two.
- Add in coarsley chopped nuts and sugar. Stir.
- In a seperate bowl, beat the eggs with the essence until thick. Add the flour and baking powder and stir.
- Mix the cake mixture in with the fruit and nut mix, stir well.
- Pour mixture into a greased and lined deep 20cm cake tin.
- Gently drop the filled cake tin on the floor 5 times to remove all air bubbles.
- Bake at 140oC for 2 1/2 - 3 hours, or until cooked.
- Cool completley in the tin.
- Serve in small slices.

DRIED NUT AND FRUIT CAKE

Steps:
- Preheat oven to 300 degrees.
- Grease the bottom and sides of an 8-cup souffle dish or a 9 by 5 by 3 inch loaf pan. Line with brown paper; grease paper.
- Combine walnuts, pecans, brazil nuts, dates, apricots, prunes, candied fruits, raisins and cherries in large bowl.
- Sift flour, baking powder and salt over nuts and fruits. Toss lightly until well coated.
- Beat eggs, sugar and vanilla in a medium-size bowl with electric mixer until fluffy and light. Pour over nut mixture. Stir gently to combine.
- Fill prepared dish or pan, pressing cake mixture firmly so it will hold its shape after baking.
- Bake for one hour and 45 minutes. (If fruits are browning too quickly, cover with buttered foil). Remove cake to wire rack.
- Spoon 1/4 cup brandy over cake. Let stand one hour. Invert; peel off paper; turn right side up; let stand on wire rack until cooled completely. Place wire rack in shallow pan; spoon remaining 1/2 cup brandy over cake.
- To store: Wrap in cheesecloth that has been soaked in brandy. Wrap in heavy duty foil or store in tightly covered container. If cheesecloth dries out, dip in brandy and rewrap cake.
CHUNKY FRUIT 'N' NUT FUDGE
Variations on this fudge are endless, but this recipe is my favorite. Besides five types of chips, it includes everything from dried fruit to nuts. Every bite is packed with flavor and crunch.

- In a large bowl, combine cherries and cranberries. Add enough warm water to cover; set aside. Line a 15x10x1-in. pan with foil and grease the foil with 1-1/2 teaspoons butter; set aside. , In a large heavy saucepan, melt remaining butter. Stir in the milk, chips and cream. Cook and stir over low heat for 15-20 minutes or until chips are melted and mixture is smooth and blended (mixture will first appear separated, but continue stirring until fully blended). Remove from the heat; stir in marshmallow creme and extract. , Drain cherries and cranberries; pat dry with paper towels. Stir the fruit, cashews and chocolate chunks into chocolate mixture. Spread into prepared pan. Let stand at room temperature until set., Using foil, lift fudge out of pan. Discard foil; cut fudge into 1-in. squares.

CHUNKY CHOCOLATE FRUIT-AND-NUT BARK

- Set a heatproof bowl over a saucepan of simmering water, making sure the bowl doesn't touch the water. Roughly chop chocolate and place in the bowl to melt, stirring frequently, keeping the heat very low. Chop toasted nuts; using scissors, cut dried fruit into small pieces. Finely chop candied ginger and/or orange peel. Place fruit and nuts into a large mixing bowl.
- Once chocolate is melted and smooth, take it off the heat and stir fruit and nuts into the chocolate. Gently stir to combine so the fruit and nuts are all combined with the chocolate. Line a pan with parchment paper that's been sprayed with a little oil. Sprinkle cocoa powder over parchment and then add the chocolate mixture. Spread it out in an even layer. Dust with more cocoa powder and place another piece of parchment paper on top. Let it cool down and set in the refrigerator, 1 hour.
- When chocolate is set, run a knife around the edge to remove from the pan. Break or cut into pieces to make chunky chocolates.
DRIED FRUIT AND NUT CAKE
Steps:
- Line bottom of 9-inch springform pan with parchment paper. Butter parchment paper and sides of pan. Preheat oven to 300°F. Mix first 10 ingredients together in large bowl.
- Stir honey and 1/3 cup sugar in heavy large saucepan over low heat until sugar dissolves. Increase heat to medium and cook until candy thermometer registers 235°F. (soft-ball stage), stirring frequently, about 4 minutes.
- Remove pan from heat. Mix in nut-flour mixture. Spoon mixture into prepared pan. Press to even thickness using buttered palm of hand or spoon. Bake until top is no longer sticky, about 35 minutes. Cool. Sift powdered sugar over. (Can be prepared 3 weeks ahead. Store airtight at room temperature.)
RICH DARK FRUITCAKE
This is my mother's very old recipe, at least 60 years old. My mother baked this for my wedding, and it sure is delicious and also a great Christmas cake. This is a very long recipe, but well worth the trouble. You can substitute a cup of drained maraschino cherries for the candied cherries, if you like.

- Wash and dry the raisins and the currants. Wash, dry, pit, and chop the dates. Chop the raisins and the citrus peel. Slice the cherries. Blanch the almonds, and slice them lengthwise. Combine fruits and nuts in large bowl.
- Grease and line 3 standard Christmas cake pans (these round pans are at least 3 inches deep and come in a set of three sizes- 5, 7, and 9 inch across) with 4 layers of heavy waxed paper, or 3 layers of brown paper. Grease again. Preheat oven to 275 degrees F (135 degrees C).
- Sift together flour, baking powder, soda, salt, and spices onto a piece of waxed paper. Remove 1 cup of this flour mixture, and combine with fruit and nuts. Mix until fruit is well coated.
- Cream the butter until fluffy. Add extracts. Gradually add sugar, mixing until creamy. Beat egg yolks until light and lemon-colored, and beat into the butter mixture. Stir in the molasses, and beat together well. Add half of the remaining flour mixture, and blend thoroughly.
- Beat egg whites until stiff but not dry; fold into batter. Stir in lightly the remaining flour mixture alternately with grape juice and coffee. Add floured fruit and nuts, blending in until fruit is well distributed.
- Turn batter into prepared cake tins, filling each about 2/3 full and spreading batter evenly. Bake in center of oven. Bake small cake 2 1/2 hours, medium cake 3 1/2 hours, and large cake 4 to 4 1/2 hours. Remove from oven and allow to stand 5 minutes, then turn out on wire rack to cool.

- Preheat oven to 325 degrees F. Grease and flour a 10-inch tube pan; set aside. In extra-large bowl beat butter and shortening with electric mixer on medium speed for 30 seconds. Add sugar, baking powder, and 1/2 teaspoon salt. Beat until combined, scraping sides of bowl as needed. Beat in eggs, one at a time, beating well after each addition. Beat in almond extract. Alternately beat in flour and orange juice, beating on low speed after each addition until just combined. Stir in nuts and fruits until combined. Spoon batter into prepared pan, spreading evenly.
- Bake for 1-1/4 hours, or until a wooden skewer inserted in cake comes out clean. To prevent over-browning, cover cake with foil during last 15 to 20 minutes of baking. Cool in pan on wire rack 15 minutes. Remove from pan; cool completely on rack.
- Wrap cake in cheesecloth soaked in brandy or orange juice. Wrap cloth-wrapped cake in foil; refrigerate overnight. Store in refrigerator up to month, moistening cheesecloth with additional brandy or juice once a week. Makes 20 servings.
