1/2 cup olive oil
2 garlic cloves, minced
3/4 teaspoon dried basil
1/4 teaspoon kosher salt
1/4 teaspoon dried oregano
Dash crushed red pepper flakes
1 loaf (16 ounces) ciabatta bread, cut into 16 slices
1/3 cup chopped oil-packed sun-dried tomatoes
1/3 cup chopped roasted sweet red peppers
1/4 cup frozen chopped spinach, thawed and squeezed dry
1-1/2 cups shredded mozzarella cheese
1/3 cup pine nuts, toasted

Steps:

  • In a small saucepan, heat oil over medium heat. Add garlic; cook 1 minute. Remove from heat: stir in seasonings. Cool completely., Preheat oven to 400°. Place bread on ungreased baking sheets. Bake until golden brown, 5-7 minutes on each side. Spread with garlic oil. Top with sun-dried tomatoes, roasted peppers and spinach; sprinkle with cheese. Bake until cheese is melted, 3-5 minutes longer. Sprinkle with pine nuts. Serve immediately.

An authentic Italian recipe for ciabatta bread or slipper bread, originally from the Veneto made with an overnight starter and cooked just like pizza on a preheated pizza stone

2 c organic bread flour
1/2 tsp dry active yeast
1.5 tsp sea salt
11 tbsp filtered water
1 tbsp extra virgin olive oil
2 tbsp warm plant milk
1 c organic bread flour
1/3 c filtered water at room temperature
1/8 tsp active dry yeast
2 tbsp warm water

Steps:

  • Make your starter the night before you plan to bake the bread.Mix together the yeast with 2 tablespoons of warm water. Allow it to stand for a few minutes.
  • In a medium size mixing bowl stir together the yeast mixture with the flour and the water until combined. Cover with plastic wrap and allow it to sit at room temperature overnight. If preparing it in the morning then let it sit until evening and up to 24 hours.
  • Use your stand mixer and combine the yeast and the warm plant milk. Let it sit for a few minutes until creamy.Add the starter, olive oil, flour, sea salt and water and mix together for about 10 minutes until everything is incorporated.
  • Prepare a large bowl lightly oiled with olive oil. Transfer the bread dough to it and cover with plastic wrap. Allow it to sit until doubled in size, up to 2 hours.
  • Turn the bread dough onto a well floured surface and with floured hands cut it in half. Form 2 long loaves.
  • Transfer them to a parchment lined baking sheet.
  • Optional step: Flour your fingers well and create dimples in the top of the loaves. Sprinkle with some flour.
  • Lightly dampen a tea towel and cover the loaves. Allow them to rise again until doubled in size, up to 2 hours.
  • Meanwhile preheat your oven to 425" F with a Pizza Stone in the center for 1 hour before planning to bake the bread.Transfer one of the loaves to the preheated pizza stone (together with the parchment paper) and bake for about 25 minutes until golden brown to your liking.
  • Transfer to a wire rack and allow to cool completely before slicing it with a serrated knife.

⅛ teaspoon active dry yeast
2 tablespoons warm water (110 degrees F/45 degrees C)
⅓ cup warm water
1 cup bread flour
½ teaspoon active dry yeast
2 tablespoons warm milk (110 degrees F/45 degrees C)
⅔ cup warm water
1 tablespoon olive oil
2 cups bread flour
1 ½ teaspoons salt

Steps:

  • To Make Sponge: In a small bowl stir together 1/8 teaspoon of the yeast and the warm water and let stand 5 minutes, or until creamy. In a bowl stir together yeast mixture, 1/3 cup of the water, and 1 cup of the bread flour. Stir 4 minutes, then cover bowl with plastic wrap. Let sponge stand at cool room temperature for at least 12 hours and up to 1 day.
  • To Make Bread: In a small bowl stir together yeast and milk and let stand 5 minutes, or until creamy. In bowl of a standing electric mixer fitted with dough hook blend together milk mixture, sponge, water, oil, and flour at low speed until flour is just moistened; add salt and mix until smooth and elastic, about 8 minutes. Scrape dough into an oiled bowl and cover with plastic wrap.
  • Let dough rise at room temperature until doubled in bulk, about 1 1/2 hours. (Dough will be sticky and full of air bubbles.) Turn dough out onto a well-floured work surface and cut in half. Transfer each half to a parchment sheet and form into an irregular oval about 9 inches long. Dimple loaves with floured fingers and dust tops with flour. Cover loaves with a dampened kitchen towel. Let loaves rise at room temperature until almost doubled in bulk, 1 1/2 to 2 hours.
  • At least 45 minutes before baking ciabatta, put a baking stone on oven rack in lowest position in oven and preheat oven to 425 F (220 degrees C).
  • Transfer 1 loaf on its parchment to a rimless baking sheet with a long side of loaf parallel to far edge of baking sheet. Line up far edge of baking sheet with far edge of stone or tiles, and tilt baking sheet to slide loaf with parchment onto back half of stone or tiles. Transfer remaining loaf to front half of stone in a similar manner. Bake ciabatta loaves 20 minutes, or until pale golden. Cool loaves on a wire rack.

3 ½ cups white bread flour
½ cup whole wheat bread flour
1 ½ teaspoons salt
¼ teaspoon active dry yeast
2 cups water
1 tablespoon olive oil
2 tablespoons cornmeal

Steps:

  • Place white and wheat flour in a large bowl. Add salt, yeast, and water. Mix until a wet sticky dough comes together, about 5 minutes. Scrape down sides of bowl. Cover with foil. Allow dough to rise for 18 hours at room temperature. It should not be too warm.
  • Punch dough down with a spatula and fold it over a few times.
  • Lightly grease a heavy-rimmed baking sheet with olive oil. Sprinkle generously with cornmeal.
  • Lightly spray a work surface with water. Place a long sheet of plastic wrap on the damp surface to hold it in place. Sprinkle plastic wrap with flour. Scrape the dough onto the floured surface. Sprinkle flour on top of the dough. Gently stretch and pull dough into a long, flat rectangular shape, 12 to 15 inches long. Bring plastic sheet to edge of prepared pan and flip the dough into the prepared pan. Reshape the dough, if necessary. Dust with flour. Cover with a light dry towel. Let rise about 2 hours.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Bake dough in preheated oven until loaf is nicely browned, 35 to 45 minutes.

3/4 cup mayonnaise
2 tablespoons oil-packed sun-dried tomatoes, drained and chopped
2 tablespoons extra-virgin olive oil (recommended: Colavita)
1/2 cup finely chopped white onion
1/2 cup finely chopped red bell pepper
1 cup chopped white mushrooms
1 1/2 cups thinly sliced fresh spinach leaves
2 1/2 pounds ground sirloin
1/2 cup crumbled feta cheese
2 teaspoons salt
2 tablespoons extra-virgin olive oil (recommended: Colavita)
1 1/2 cups thinly sliced prosciutto
Vegetable oil, for brushing on the grill rack
6 slices (1/4-inch thick) fresh mozzarella cheese
6 ciabatta rolls, split
4 tablespoons extra-virgin olive oil (recommended: Colavita)
1 garlic clove, peeled and cut in 1/2 lengthwise
6 tablespoons freshly grated Parmesan
3 cups mesclun greens

Steps:

  • Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
  • Combine the mayonnaise and sun-dried tomatoes in a small bowl and mix well. Cover and refrigerate until ready to use.
  • For the patties: Place the oil in a 12-inch fire-proof skillet and set on the grill rack. When the oil is hot, add the onion, bell pepper, and mushrooms. Cook, stirring frequently, until tender, about 5 minutes. Add the spinach leaves and cook until the spinach is wilted, about 3 minutes. Transfer to a large bowl and add the sirloin, feta cheese, and salt. With your hands or a large spoon, gently mix well, handling the meat as little as possible to prevent compacting it. Form into 6 equal-sized patties.
  • For the prosciutto: Pour the oil into the same skillet and place on the grill rack. When the oil is hot, add the prosciutto. Cook until well crisped, about 5 to 8 minutes. Transfer to a paper towel-lined plate to drain; set aside.
  • When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook until the bottoms are brown, about 4 minutes. With a spatula, turn over the patties and cook an additional 4 minutes, or until done to your preference (internal temperature of 160 degrees F). During the last few minutes of grilling, top each patty with a slice of mozzarella cheese until melted. Lightly brush the cut sides of the rolls with the 4 tablespoons olive oil. Rub the cut sides of the garlic over the insides of the rolls, then sprinkle and press with the Parmesan. Place the rolls, cut sides down, on the outer edges of the grill rack to toast lightly.
  • To assemble the burgers: Spread the mayonnaise mixture on the insides of the warm toasted rolls. Layer the bottom rolls with divided greens, the patties, and divided frizzled prosciutto. Top with the remaining rolls, serve, and enjoy!

TOASTED CIABATTA WITH BALSAMIC SYRUP

12 (1/2-inch) thick slices ciabatta bread
2 tablespoons butter

Steps:

  • Boil the balsamic vinegar and 3 tablespoons of sugar in a heavy small saucepan over medium-high heat until reduced to 1/2 cup, stirring occasionally, about 20 minutes.
  • Toast the bread slices. Spread the butter over the toasts. Arrange the toasts on a platter. Drizzle the reduced balsamic syrup over the toasts then sprinkle with a little more sugar, and serve.

50g salted butter
50g light muscovado sugar
50g golden syrup
50g plain flour
50g glacé cherries, chopped
75g flaked almonds
50g pistachios, chopped
2 oranges, zested
175g dark chocolate

Steps:

  • Heat oven to 180C/160C/gas 4. Line two baking sheets with baking parchment.Melt the butter, sugar and golden syrup in a small saucepan over a low heat, stirring frequently. Remove from the heat and whisk in the flour then add the cherries, flaked almonds, pistachios and orange zest.
  • Scoop 10 flat tbsp of the mixture onto the baking sheets, leaving room for them to spread. You will need to do these in batches. Bake for 10 mins until golden. Leave to cool for 2 mins until firm enough to lift onto a wire rack. Cool completely. Repeat with the remaining mixture.
  • Melt the chocolate in a bowl over a simmering saucepan of water or in the microwave in 30 second bursts. Turn the florentines over on the wire rack. Spoon chocolate onto the base of each florentine and gently spread to the edges. When the chocolate is firm enough to hold its shape, use a fork to draw wavy lines across the chocolate. Leave to set and then store in an airtight container.

1/4 teaspoon active dry yeast
1/4 cup warm water
3/4 cup tepid water
2 1/2 cups unbleached flour
1 teaspoon active dry yeast
5 tablespoons warm water
1 tablespoon olive oil
1 cup plus 3 tablespoons tepid water
3 3/4 cups unbleached flour, plus flour for dusting work surfaces
1 tablespoon salt
Cornmeal

Steps:

  • To make the starter, stir the yeast into the warm water and let stand until creamy, about 10 minutes.
  • Stir in the tepid water. Then add the flour, a cup at a time.
  • Beat by hand, in an electric mixer or in a food processor, to form a sticky dough. Place in a lightly oiled bowl, cover with plastic wrap and set aside in a cool place to rise until tripled in volume, 6 to 24 hours. Starter can be made in advance and refrigerated until ready to use.
  • To make the dough, mix yeast with warm water in the bowl of an electric mixer. Set aside 10 minutes.
  • Add oil and the prepared starter and a little of the tepid water. Start mixing at very slow speed, adding the rest of the tepid water gradually until these ingredients are well blended. Mix flour with salt, add them, and mix for 2 to 3 minutes.
  • Attach a dough hook to the mixer and mix for 2 minutes at slow speed, then 2 minutes at medium speed. Scoop the dough out onto a floured work surface and knead briefly. The dough should be very moist and elastic.
  • Place dough in a lightly oiled bowl, cover with plastic wrap and set aside to rise until doubled, 1 1/2 to 2 hours. The dough should still be sticky but full of air bubbles.
  • Place dough on a well-floured work surface and cut into four equal portions. Roll each into a cylinder, then stretch the cylinders into rectangles about 4 by 10 inches.
  • If you can bake the bread on stones, generously flour four pieces of parchment paper and place each shaped loaf on a sheet of the paper, seam side up. Otherwise, oil a baking sheet, dust it with flour and cornmeal and place the loaves on the baking sheet. Cover loosely with damp tea towels and allow to rise about 2 hours, until doubled.
  • Preheat oven to 425 degrees with a baking stone in it if you have one. Dust the stone with cornmeal. Gently roll the breads from the parchment onto the stone so the seam is down and the floured side is up. Otherwise, simply place the baking sheet with the breads in the oven. Bake until the breads are golden brown, about 30 minutes, spraying them with water a few times during the first 10 minutes. Cool on racks.
