APPLE DANISH
Delicious! Always get 'ummm!' responses when I serve this. The Danish has apple filling and is topped with a browned butter glaze.

Steps:
- Combine 1 cup flour, 2 tablespoons brown sugar, 1 teaspoon salt, and instant yeast in a mixing bowl. Add the water and room temperature butter and beat for 1 minute. Stir in the remaining cup of flour and mix well. Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 10 minutes. Shape the dough into a ball and transfer to an oiled bowl, turning to coat the surface of the dough. Cover the bowl with plastic wrap and let the dough rise until doubled in bulk, about 1 hour.
- Meanwhile, make the filling. Place the chopped apples and 3 tablespoons butter in a medium saucepan. Combine 1/2 cup brown sugar, 1 1/2 tablespoons flour, 1/4 teaspoon salt, cinnamon, and nutmeg and mix well; add the mixture to the saucepan. Bring the mixture to a boil over medium-high heat and then reduce the heat to a simmer. Cook until the apples are tender, about 5 minutes. Remove from heat and allow the filling to cool.
- Transfer the Danish dough to a floured surface and punch the dough down. Let the dough rest, covered, for 15 minutes. Roll the dough out into a 13 x 8-inch rectangle. Place the dough on a greased or parchment-lined baking sheet.
- Turn the baking sheet so that you face the short side of the dough. Spread the apple filling down the center third of the dough. With a sharp paring knife, make cuts in the dough along the right side, starting each cut about 1/4 inch from the apple filling. Cut to the edge of the dough strip, with each cut angled to about 4 o'clock. Each strip of dough should be about 1-inch thick. Repeat on the left side of the dough, angling the cuts to 8 o'clock.
- Starting at the top, fold the dough strips across the apple filling, alternating left and right. The pastry will look like a long braid. Pinch the top and bottom ends of the braid to seal in the filling. Cover the pastry and let it rise at room temperature until the dough is puffy, 30 to 40 minutes.
- Preheat an oven to 375 degrees F (190 degrees C). Bake the braid for 20 minutes, covering it with aluminum foil during the last 10 minutes of baking to prevent over-browning. Remove the pastry from the oven and allow it to cool.
- To make the glaze, heat the 2 tablespoons of butter in a saucepan over medium heat. Swirl the pan occasionally and cook until the milk solids turn brown and give off a nutty fragrance, about 5 minutes. Remove from heat and transfer to a bowl to cool slightly. Stir in the confectioners' sugar and vanilla. Mix in the milk a teaspoon at a time until the glaze is thin enough to drizzle. Decorate the Danish braid with the glaze.

CINNAMON APPLE DANISH RECIPE

- Preheat oven to 375 degrees.
- In a medium nonstick skillet, melt butter over medium-low heat. Add in apples, cinnamon, and sugar. Stir and cook until tender, 10-15 minutes.
- While apples are cooking, in a small bowl, combine cream cheese, sugar, flour, and vanilla. Set aside.
- Pop open crescent roll dough and unroll, leaving crescents in rectangles. On an ungreased baking sheet, lay the crescent roll rectangles together, lining them up width wise. The dough should be almost the entire length of a half sheet pan. Press edges together to even out edges and seal any holes. Cut 1/2 inch diagonal strips up each side of the dough. Carefully spread cream cheese filling down the center of the dough to be about 2-3 inches wide. Top with cooked apples.
- Fold 1/2 inch dough pieces up over filling alternating sides to get a braided pattern. You may have excess dough once you reach the end of the danish, so fold them in as best as you can.
- Bake for 20 minutes or until filling is set and the crescent dough is golden in color. Cool at least 20 minutes before removing from baking sheet.
- Once danish has cooled, remove to a serving platter. In a small bowl, mix together powdered sugar, vanilla, and cream to create icing. You may need to add more cream to get the desired consistency. Drizzle icing over danish.
- Cut into pieces and serve.

- Place the butter in a mixing bowl with the caster sugar.
- Beat them together until they are light and creamy.
- While mixing slowly add the eggs one at a time until they are well combined.
- While mixing slowly add the flour and mix it until the batter is smooth and well combined.
- Stir in the sultanas until they are well combined.
- Preheat an oven to 180°C.
- Grease a loose bottomed 20cm cake tin.
- Spread half of the batter evenly over the base of the cake tin (the batter may seem quite thick).
- Place a layer of the apples over the cake mix and scatter over the almonds.
- Mix the remaining caster sugar and cinnamon together and sprinkle it over the apples and almonds.
- Spread the remaining batter over the apples evenly.
- Sprinkle over the coffee sugar or brown sugar over the cake mixture.
- Place the cake on the centre shelf of the preheated oven and leave it to cook for 45 minutes.
- The cake should be firm and light golden, a skewer when inserted into the centre of the cake should come out clear.
- Remove the cake from the oven and leave it to cool slightly then remove it carefully from the tin.

- In a bowl, combine flour and salt; cut in shortening until mixture resembles coarse crumbs. Combine egg yolk and milk; add to flour mixture. Stir just until dough clings together. Divide dough in half. , On a lightly floured surface, roll half of dough into a 15x10-in. rectangle; transfer to a greased 15x10x1-in. baking pan. Set aside. , In a bowl, toss together filling ingredients; spoon over pastry in pan. Roll out remaining dough into another 15x10-in. rectangle. Place over filling. Brush with egg white. - In a small bowl, dissolve yeast in warm water. In a large bowl, combine the flour, sugar, salt and lemon zest; cut in butter until mixture resembles fine crumbs. - Preheat oven to 350 degrees (F).
- Separate dough into eight rectangles. Seal perforations.
- Using a brush or spoon, spread melted butter all over crescent rolls. Sprinkle with cinnamon sugar mixture (2 tablespoons white sugar mixed with 1 teaspoon of cinnamon).
- Roll up from long side; pinch edges to seal. Holding one end, loosely coil each.
- Now you want to get in there with your fingers and spread out the dough some to make room for the filling. Just pull and stretch to make a nice dent in the middle.
- Open can of apple pie filling and using a knife, cut apple slices into smaller chunks. Just keep poking and slicing around until all your apples are cut into more manageable pieces.
- Place on cookie sheet that has been sprayed with nonstick spray. Top each coil with about 2-3 tablespoons of apple pie filling.
- Sprinkle the tops with a bit more cinnamon sugar mixture.
- Bake at 350(F) for 15-18 minutes, or until golden brown.
- For the glaze, in a bowl, combine powdered sugar, vanilla and milk. Stir until smooth and drizzle over each warm danish. These taste best when served warm.

- For the crème pâtissière, in a large heavy-based saucepan combine the milk, cream and vanilla. Bring to the boil.
- Meanwhile, add the sugar, egg yolks and cornflour to a large bowl and beat until smooth. As soon as the milk mixture comes to the boil, remove it from the heat and pour about a quarter over the egg mixture.
- For the apple filling, mix the orange juice and zest with the sultanas and set aside to soak.
- In a large bowl combine the apple slices with lemon juice, brown sugar, cinnamon, vanilla and butter. Cover and cook in the microwave on medium power for about 4 minutes, or until the apples have softened but still hold their shape.
- To make the pastry, set up a freestanding mixer with a dough hook attachment. Add the flour, then put the yeast to one side of the bowl and the salt and sugar on the opposite side.
- In a jug, mix the eggs, milk and 4 tablespoons water. Pour into the flour mixture and mix on a low speed for 2 minutes (you may need to push to dough down the hook occasionally).
- Transfer to a large, lightly oiled bowl and cover either with a clean tea towel or oiled cling film. Leave to prove for an hour or until doubled in size.
- Meanwhile, place the block of butter between two sheets of baking paper and bash with a rolling pin to flatten the butter into a rectangle about 1cm/½in thick.
- Turn the risen dough out onto a lightly floured work surface. Flatten it and roll it out to a rectangle about 40x15cm/16x6in and about 1cm/½in thick. Arrange the dough with one of the short edges nearest to you.
- Place the chilled dough on a lightly floured work surface with one of the short edges nearest you. Roll out the dough into a 40x15cm/16x6in rectangle and fold into equal thirds like folding a letter for a business envelope.
