CURRY CRAB AND CASSAVA DUMPLING
Steps:
- Wash, peel and grate the cassava. Place grated cassava in a cloth and squeeze out the excess water. Retain the water. Add water to the "cassava water" to make 1 cup.
- Mix the cassava water and flour to form a firm dough. Divide into two and make long rolls. Slice and shape to make dumpling. When the dumpling floats to the top it is ready. Drain and set aside when cooked.
- Wash and clean the crab, then scald with hot water. Place in a large bowl and add green seasoning, 2 tablespoon curry, and half of the chopped pimento, chadon beni, garlic, pepper sauce mixture, and some of the lime pepper sauce. Cover and marinate overnight for about 3 hours.
- Mix up the crab and crack the gundy (claws). Mix saffron, geera, masala, 2 tablespoon of curry and the other half of the seasoning mixture in 1/3 cup water. Heat the oil over medium heat and add the garlic and onion.
- Add the curry; let it fry until it gets sticky. Add the crab. Allow to cook for about two minutes. Add the tomato and coconut milk to the crab.
- Continue to cook for about a minute. Then add 3 cups of water. (Note: If you're using the regular coconut milk then add 1 cup of water). Allow to cook until the crab turns red.

- Heat oil in a large pot.
- Add curry and saffron powder with a tbsp of water.
- Add onions, pepper, and fresh seasoning.
- Cook until most of the water evaporates.
- Add crab and cook covered for 10 minutes.
- Add coconut milk.
- Cover and cook for 30 minutes. Done

- Put butter in large skillet; sauté onion, chives and capsicums.
- Add crabmeat, Worcestershire sauce, salt and chili pepper.
- Toss in pan over low heat, with wooden spoon.
- Add bread crumbs, combining all ingredients in pan well.
- Divide mixture onto the 8 empty crab backs.
- Dot each crab back with butter.
- Place under hot grill until golden brown.
- SERVE IMMEDIATELY.

TRINIDAD BLACK CAKE
This is my absolute favorite cake for the Christmas holidays. I would always look forward to this season just to get a piece of this cake. The longer the fruit sits in the alcohol, the better it tastes; minimum 2 weeks, maximum 3 months. As for the cake, the longer it sits there, the better it tastes! But make sure you have it wrapped properly if you want to leave it sitting for a long time. Make at few days ahead of serving for good measure. Prep time is the minimum time required for the fruit to soak.

Steps:
- Place raisins, currants, prunes, and mixed peel in a food processor; process until finely chopped. Transfer to a large jar.
- Pour cherry brandy, 1/2 cup brown sugar, dark rum, and mixed spice into the jar; mix well and seal. Refrigerate, stirring occasionally, until flavors blend, 2 weeks to 3 months.
- Preheat oven to 325 degrees F (165 degrees C). Grease and line two 9-inch cake pans with parchment paper.
- Combine butter and 1 3/4 cup brown sugar in a bowl; beat with an electric mixer until smooth and creamy. Beat in eggs until smooth. Beat in raisin mixture until evenly incorporated. Fold in flour and vanilla extract gradually until batter is smooth and falls off the back of a lifted spoon.
- Divide batter between the prepared cake pans. Cover cake pans loosely with aluminum foil.
- Bake in the preheated oven until cakes are firm and spring back when lightly pressed, about 2 1/2 hours.
- Cool cakes in the pans, 8 hours to overnight. Wrap in aluminum foil to keep moist.

- Cut the crabs in small pieces and use the lime juice for washing them. Use the ginger, minced chive, garlic, thyme to season the crabs. Pour the oil into a preheated pot.
- Make a paste by mixing the curry, salt and the pepper and add it to the hot oil. Next add the crab meat along with the coconut milk when the mixture thickens.
- Next allow the curry crabs to simmer for about 25 minute covered. When the curry crabs are done serve them with cassava dumplings.

- Preheat the oven to 400 degrees.
- Melt 8 tablespoons butter in a wide, shallow saucepan or skillet. When melted, add the scallions, garlic and chili. Add the curry powder and blend. Add the crabmeat. Add the coriander leaves, if desired, and parsley. Add salt and pepper to taste. Add enough crab liquid to moisten properly. If you want a richer and better dish, add 2 to 4 more tablespoons butter. Add bread crumbs and blend well.
- Remove from the heat and use the mixture to fill 4 to 8 clam shells.
- Bake for 10 to 15 minutes, until nicely brown. Serve with lime wedges, slices or halves.

- Clean the taro leaves by removing the skin from the stalks, and removing the tip from the center rib. Rinse, and cut into bite size pieces.
- Place the taro leaves, okra, onion, thyme, garlic, salted pig's tail, pumpkin, water, habanero pepper (whole), and coconut milk into a large pot. Cover, and simmer over low heat for 30 minutes.
- Add the crab to the pot. Be careful not to puncture the habanero pepper. Cover, and continue to simmer for 30 minutes. Remove the habanero, and season with salt to taste. Puree the soup using an immersion blender until smooth. You could also puree in small batches using a blender. Serve over rice.

GALLETTE OF SWEET POTATO-CRUSTED TOBAGO CRAB CAKE
In Trinidad and Tobago, crabs are traditionally cooked whole and the meat picked out. This sophisticated dish combines American-style crab cakes with the island flavor of callaloo, a green stew that's the national dish of Trinidad. Here, the stew becomes a sauce, creating an elegant starter or light lunch.

- Form crab cakes
- In large sauté pan over low heat, heat 2 tablespoons olive oil. Add red, yellow, and green peppers; scallions; celery; and pimientos. Sauté until soft, 8 to 10 minutes. Transfer to large bowl and let cool.
- Add crabmeat, mayonnaise, mustard, salt, and pepper to vegetables and stir to combine. Form mixture into 16 patties.
- Place Wondra in large bowl. In second large bowl, whisk together eggs and remaining 2 tablespoons olive oil. In third large bowl, place panko. In fourth large bowl, beat egg whites until foamy. In fifth large bowl, place grated sweet potatoes.
- Carefully dip 1 patty in Wondra and dust off excess. Then, dip in beaten eggs, allowing excess to drip off, and then in panko. Next, dip in egg whites, allowing excess to drip off. Finally, dip in shredded sweet potatoes, gently pressing potato to patty. Transfer patty to large baking sheet and repeat with remaining patties, filling 2 baking sheets. Refrigerate 30 minutes.
- Make callaloo
- In medium saucepan, combine coconut milk, callaloo leaves, okra, onion, pumpkin, scallions, pimientos, Scotch bonnet, garlic, and thyme. Bring to boil, lower heat, and simmer 1 hour.
- Cook crab cakes
- In large skillet over moderately low heat, heat 2 tablespoons olive oil. Add 4 crab cakes and fry until potatoes are golden and crispy, 4 to 5 minutes per side. Drain crab cakes on paper towels and keep warm. Add 2 more tablespoons oil to pan and cook 4 more cakes. Repeat with remaining cakes, cooking in batches of 4 and adding 2 tablespoons oil before each batch. Keep warm in oven.
- Assemble dish
- Remove thyme sprigs and Scotch bonnet from callaloo and discard. Pour mixture into blender and purée until smooth. Season with salt and pepper. Divide among 8 soup plates, and top each with 2 crab cakes.
