Crab, like all other seafood, supports your Kidney function. In addition to the benefits received from the vegetables in these crab cakes-the colorful peppers support your Heart, Stomach, and Spleen-the addition of zucchini gives your Liver an added boost.

Steps:
- Preheat the oven to 350°.
- After slicing the zucchini, use a spoon to scoop out the flesh and seeds. Set aside for use in another dish, such as Zucchini Scrambled Eggs.
- Brush 1 Tablespoon of olive oil over the tops and insides of the zucchini boats. Place the remaining 2 Tablespoons of olive oil in the bottom of the baking dish.
- Add the zucchini boats to the baking dish. If needed, slice a bit of the bottom off of each zucchini so it lies flat in the pan.
- Scoop 2 Tablespoons of crab cake mixture into each zucchini boat.
- Bake for about 20 minutes., or until the zucchini boat is soft.

- In a small bowl combine tomatoes, 3 tablespoons of basil, oil, 1 tablespoon of parsley, orange peel, lemon peel, 1/2 of the garlic, and salt and pepper to taste. Mix well and set aside for 1 hour at room temperature.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Cut the stem ends off of zucchini and slice a thin layer off the tops, lengthwise. If necessary, trim the bottoms so that the zucchini stand level; reserve trimmings. Scoop out the flesh, leaving 1/4 inch thick shells. Chop the reserved trimmings and flesh coarsely. In a large saucepan of boiling, salted water, cook the shells for 2 minutes. Drain and rinse in cold water; drain on paper towels.
- Heat oil in a medium skillet over medium heat; saute chopped zucchini for 5 minutes, or until tender. Stir in remaining parsley, basil and garlic; cook for 1 minute. Transfer to a medium bowl and stir in bread crumbs and egg. Season with salt and pepper to taste. Spoon mixture into shells and place in prepared baking dish. Pour chicken stock over zucchini.
- Cover and bake in preheated oven for 25 to 30 minutes, or until tender. Serve with the tomato salsa.

- Cook pasta according to package directions. , Meanwhile, in a small skillet, saute green pepper and onion in 1 teaspoon butter until tender; set aside., In a large bowl, combine crab, shrimp, egg, mozzarella cheese, mayonnaise, 2 tablespoons milk, 1 teaspoon seafood seasoning, pepper and green pepper mixture., Preheat oven to 350°. Drain and rinse pasta; stuff each shell with 1 rounded tablespoon of seafood mixture. Place in a greased 13x9-in. baking dish. , In a small saucepan, melt remaining butter over medium heat. Whisk in flour and coarsely ground pepper; gradually whisk in remaining milk. Bring to a boil; cook and stir 2 minutes or until thickened. Stir in Parmesan cheese., Pour over stuffed shells. Sprinkle with remaining seafood seasoning. Bake, uncovered, 30-35 minutes or until bubbly.

CRAB SALAD-STUFFED ZUCCHINI

- Fill a large pot with about 1 inch of water and fit with a steamer basket; bring to a boil. Meanwhile, scoop out the seeds from the zucchini, leaving a 1/4-inch-thick shell. Season the zucchini with salt, then arrange in the steamer basket; cover and steam until crisp-tender, 5 minutes.
- Combine the crabmeat, 1 tablespoon lemon juice, 2 tablespoons olive oil and 1/4 teaspoon salt in a medium bowl. In another bowl, combine the mayonnaise, mustard, 1 tablespoon lemon juice, the Worcestershire sauce, cayenne and 1/4 teaspoon salt.
- Blot the zucchini dry with paper towels and brush with the remaining 1 tablespoon each olive oil and lemon juice. Fill with the crab mixture and top with the spicy mayonnaise. Sprinkle with paprika, celery leaves and scallions.

- Heat the olive oil in a saucepan over medium heat. Stir in the onion and garlic, and cook until tender. Mix in zucchini and coat in the olive oil. Pour in tomato sauce and water. Season with oregano, basil, and red pepper. Dissolve sugar in the sauce. Reduce heat to low, and simmer 1 hour, stirring occasionally.

- Cook pasta shells, gently until al dente.
- Remove with a slotted spoon to drain.
- While still hot mix carefully with 1 tablespoon olive oil, 2.
- tablespoons lemon juice and 1 tablespoon parsley.
- Drain any juice from crabmeat, discard juice.
- Mix the crab with remaining olive oil, lemon juice, capers, nuts, parsley, salt and cayenne pepper.
- Stuff shells and refrigerate until shortly before serving.
- Arrange lettuce on salad places, add 2 shells per plate.
- Drizzle lightly with vinaigrette dressing.
- Garnish with watercress and lemon wedges.

CRAB-STUFFED ZUCCHINI FLOWERS WITH MUSTARD BUTTER SAUCE

- Combine the crabmeat, crème fraîche, lemon juice and zest, and chives in a mixing bowl. Season to taste with salt, white pepper and piment d'Espelette. Using a small spoon or a piping bag, gently stuff each zucchini flower three-quarters full with the crab mixture.
- Bring the water to a boil in a heavy small saucepan over medium heat and whisk in the butter 1 tablespoon at a time until the all of the butter is emulsified. Whisk in both mustards and season to taste with salt and pepper. Set the butter sauce aside and keep warm.
- Place a large pot filled with 2 inches of water over high heat and bring to a boil. Place the stuffed zucchini flowers in a steamer insert, then set the steamer in the pot. Cover and steam until the crab filling is hot, about 3 minutes.
- Place 3 zucchini flowers on each of 4 plates. Stir the chives into the mustard butter sauce, spoon the sauce over and around the stuffed flowers and serve immediately.

- Preheat oven to 375ºF.
- Cook pasta shells according to the package directions.
- Drain and rinse with cool water.
- Sauce: In a large skillet, heat the oil over medium-high heat.
- Add the garlic and sauté for 1 minute.
- Stir in the tomatoes, red pepper, and oregano and lower heat to medium-low.
- Cover the pan and simmer the mixture 15 min.
- Stir in the salt.

CRAB STUFFED ZUCCHINI WITH GRUYERE PANKO CRUST

- Preheat oven to 400F. Line a baking pan with foil. Slice the zucchini in half the long way, and scoop out the flesh using a melon baller leaving about 1/2-inch thick skins. Reserve the flesh and set aside. Drizzle the zucchini flesh side with 1 tsp olive oil and season with 1/2 tsp salt and 1/2 tsp pepper. Place on the foil, hulled side down. Bake for 10 minutes.
- While the zucchini is baking in a skillet add 2 tsp olive oil and heat over medium. Coarsely chop the zucchini flesh. Place the shallots in the pan with the zucchini flesh. Stir and cook for 5 minutes or until it begins to soften. Add in the garlic, remaining salt and pepper.
- Cook for 2-3 minutes until the zucchini is mixture is soft but not mushy. Add in the lemon juice and crab meat. Gently stir and cook for 30 seconds just to heat the crab.
- When the zucchini is done baking, remove from the oven and set aside leaving the oven on. Transfer the crab mixture to a bowl. Add in 1/3 cup of panko and 1 cup of gruyere. Gently combine. The mixture will be loose but will clump slightly if pressed together.
