CRANBERRY-HAZELNUT GREEN BEANS
Cranberry and hazelnut add a distinctive flavor to this easy green beans side dish - ready in 20 minutes!

Steps:
- In 3-quart saucepan, heat 8 cups water to boiling. Add green beans; cook 6 to 8 minutes or until crisp-tender. Drain.
- In 12-inch skillet, melt butter over medium-high heat. Cook shallot in butter 2 minutes, stirring constantly. Add green beans; cook 3 minutes, stirring occasionally, until tender and beginning to brown. Sprinkle with salt and pepper.
- In serving bowl, toss bean mixture with hazelnuts and cranberries. Serve warm.

GARLIC ROASTED GREEN BEANS WITH SHALLOTS AND HAZELNUTS
Steps:
- Preheat oven to 425 degrees F.
- Toss together green beans, shallots, garlic, oil and salt and pepper in a medium roasting pan. Roast in the oven until the beans are cooked through and light golden brown. Remove from the oven and stir in the lemon zest and hazelnuts. Transfer to a platter and serve.

- Preheat oven to 325°F with rack in middle.
- Toast nuts in a small baking pan until centers are golden, 15 to 20 minutes (cut one open to test for doneness). Cool to warm, then rub off any loose skins in a kitchen towel. Coarsely chop nuts.
- Cook beans in a 6-quart pot of boiling salted water (1 1/2 tablespoons salt for 4 quarts water) until just tender, 4 to 6 minutes. Transfer to an ice bath to stop cooking. Drain and pat dry.
- Whisk together mustard, vinegar, and sea salt in a bowl, then add olive, flaxseed, and hazelnut oils, whisking. Add beans, nuts, and onion and toss well. Season with salt and pepper.
- Do Ahead
- Beans can be cooked 1 day ahead and chilled (once cool) in a plastic bag lined with paper towels. Dressing can made and chilled up to 5 days ahead.

- Bring a large pan of salted water to a boil. In a small skillet, toast hazelnuts over medium heat until golden brown, tossing occasionally, about 5 minutes. Transfer to a bowl; set aside.
- Cook beans in boiling salted water until crisp-tender, 4 to 6 minutes; drain. Return to pan; toss with butter and half the hazelnuts. Season with salt and pepper. Transfer to a serving dish, and sprinkle with remaining hazelnuts.

- Beat eggs and sugar in bowl until thick.
- Beat in peel and vanilla.
- Slowly beat in flour, baking soda and salt.
- Beat in cranberries and nuts.
- Using floured hands, divide dough into 2 balls.
- Flatten each to 1 inch thickness.
- Brush beaten egg whites.
- Sprinkle with additional sugar.
- Bake for 20 minutes or until golden brown, reduce heat to 320° and cut on a diagonal line every 3/4 inches.
- Arrange cut sides down on baking sheet.
- Bake until bottoms are brown about 7 minutes.

Here’s how you tell if they’re cooked: Pull one out and throw it into a large bowl filled with ice water; if you don’t like the texture, let them cook a few seconds longer. When they’re ready, transfer beans to ice bath to cool. Congrats, you just blanched veggies—go have a wine. Drain beans and transfer to paper towels; pat dry.
- Heat oil in a medium skillet over medium. Cook garlic until golden brown and crisp, 2–3 minutes. Using a slotted spoon, transfer garlic chips to paper towels; set aside.
- Cook shallots and hazelnuts in same skillet over medium heat, stirring, until shallots are tender and hazelnuts are beginning to brown, 4–5 minutes. Scrape into a large bowl.
