2 Tbsp. butter
1 cup sliced fresh mushrooms
1-1/2 cups chopped OSCAR MAYER CARVING BOARD Flame Grilled Chicken Breast Strips
1-1/2 cups fat-free milk
1 tub (8 oz.) PHILADELPHIA Chive & Onion Cream Cheese Spread
2 Tbsp. chopped fresh parsley
1/3 cup sliced almonds

Steps:

  • Bake pastry shells as directed on package.
  • Meanwhile, melt butter in medium saucepan on medium heat. Add mushrooms; cook 6 to 8 min. or until tender, stirring frequently. Add chicken; cook 3 to 5 min. or until heated through, stirring frequently. Remove from heat; set aside.
  • Heat milk in large saucepan. Add cream cheese spread; cook and stir 2 to 3 min. or until cream cheese is completely melted and mixture is well blended. Add chicken mixture and parsley; cook 2 to 3 min. or until heated through, stirring frequently.
  • Remove center cutout from each pastry shell; set aside. Spoon chicken mixture into shells, adding about 1/2 cup chicken mixture to each shell; sprinkle with nuts. Top with pastry cutouts.

2 packages (10 ounces each) frozen pastry shells
2 celery ribs, finely chopped
1 medium onion, chopped
2 tablespoons chopped green pepper
6 tablespoons butter, divided
6 tablespoons all-purpose flour
1/2 teaspoon salt
3 cups milk
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
4 cups cubed cooked chicken
1 can (4 ounces) mushroom stems and pieces, drained
1 jar (2 ounces) diced pimientos, drained
1/2 cup grated Parmesan cheese
1/2 cup sliced almonds

Steps:

  • Bake pastry shells according to package directions; set aside. In a skillet, saute the celery, onion and green pepper in 1 tablespoon butter for 10 minutes or until tender. Remove from the heat and set aside., In a large saucepan, melt the remaining butter over medium heat. Stir in flour and salt until smooth. Gradually add the milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in soup until blended. Add the chicken, mushrooms, pimientos and sauteed vegetables; mix well., Transfer to a greased 3-qt. baking dish. Sprinkle with Parmesan cheese and almonds. Bake, uncovered, at 350° for 20-25 minutes or until bubbly. Spoon into pastry shells.

1 medium green pepper, chopped
1/2 cup broccoli floret

  • Braise chicken in chicken broth until cooked (about 20-30 minutes). Cut into cubes.

1 broiler/fryer chicken (3 to 4 pounds), cut up
8 cups water
1-1/2 teaspoons salt, divided
1-1/2 teaspoons pepper, divided
2 packages (10 ounces each) frozen puff pastry shells
1 cup sliced fresh mushrooms
1 medium green pepper, chopped
1/2 cup small fresh broccoli florets
5 tablespoons butter, cubed
6 tablespoons all-purpose flour
2 cups milk
1 jar (2 ounces) diced pimientos, drained
1/4 teaspoon paprika

Steps:

  • In a large kettle, bring the chicken, water, 1 teaspoon salt and 1 teaspoon pepper to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until chicken is tender. Easy, uses frozen dumplings. Makes a big potful, had to guess at number of servings. I adapted this from the basic recipe on the frozen dumpling box. I always use Anne's Dumplings in the red box (www.annesdumplings.com) but you could use any brand frozen dumpling strips.

1 whole chicken
1 -2 bay leaf
water
salt and pepper
1 (1 1/2 lb) box frozen dumplings, strips
1 can campbell cream of chicken soup

Steps:

  • Rinse chicken and discard giblets.
  • In a large pot boil the chicken with bay leaves, salt and pepper.
  • Remove the chicken to a platter to cool; once cool enough to handle, remove meat from the bones.
  • Skim the fat from the broth and add enough water to get 4 or 5 qts (I use a skimmer cup).
  • Bring broth to a rolling boil and drop the frozen pastry strips in a few at a time, stirring to separate and return to a boil before dropping in more.
  • When all the strips are in the pot, reduce heat to medium-low and let boil a few minutes.
  • Reduce heat to low and stir in chicken meat and cream of chicken soup, stirring until chicken soup is incorporated.
  • Season to taste with black pepper- should already be salty enough from the cream of chicken soup, but taste and add salt if necessary.
  • Remove from heat, cover and let stand 15 minutes before serving.
  • I serve this with cornbread; green peas are a good side dish.

4 slices bacon
2 chicken breasts, sliced
salt, to taste
pepper, to taste
2 teaspoons italian seasoning
1 teaspoon paprika
2 cloves garlic, minced
2 cups spinach
4 small tomatoes, diced
1 ½ cups cream
1 cup shredded parmesan cheese, plus more for serving
½ teaspoon red pepper flakes, plus more for garnish
10 oz penne pasta, cooked until al dente
3 tablespoons Chopped fresh parsley, for garnish

Steps:

  • In a deep skillet, fry the bacon until crispy. Remove to a paper towel to drain, then chop.
  • In the same skillet, add the chicken and season with salt, pepper, Italian seasoning, and paprika. Cook until no longer pink inside.
  • Add the garlic and cook until softened.
  • Add spinach and tomatoes and cook until the spinach is wilted.
  • Add the cream, Parmesan, an red pepper flakes and bring to a boil.
  • Add the penne and bacon, and stir until fully coated in sauce.
  • Serve with parsley, Parmesan, and red pepper flakes, if desired.

Steps:

  • cut the chicken breasts into bite sized pieces and fry them in a little oil until golden and sealed. Remove from pan and keep warm.
  • Chop the onion finely and fry with a little more oil.
  • chop the carrots and add to the onion along with the mushrooms which have been halved or quartered and return the chicken to the pan
  • add the condensed soup along with the milk and stir until combined
  • add the remaining vegetables, the tarragon, salt and pepper, cook for a minute of two and turn out into an oven proof dish. A dish about a dinner plate size that is quite deep is perfect. (I use a pyrex)
  • Add the mash or pastry topping, adding the cheese to the top of the mash if required and bake in the oven at 190 degrees for about half an hour
