My Foolproof Creme Anglaise is a sweet custard-like sauce, the name of which is French for "English cream," and my method truly is foolproof.

1 cup (8floz/225ml) cream ((any type of fresh cream will do))
1 1/2 cups (12floz/340ml) whole milk
1/2 cup (4oz/115g) sugar, (divided )
1 vanilla bean, (split lengthwise and scraped )
6 egg yolks

Steps:

  • In a medium heavy bottomed saucepan add the cream, milk, 1/4 cup sugar, vanilla pod and beans.
  • Simmer over medium heat until the mixture starts to bubble around the edge of the pan, for about 2 minutes, do not let it boil. Remove from the heat and let stand for 20 minutes.
  • While the cream mixture is infusing, whisk the egg yolks with remaining 1/4 cup of sugar in a medium bowl.
  • Ladle some of the hot cream mixture into the egg yolk mixture, then swiftly whisk to combine. Add another ladle of the infused milk to the eggs until the egg mixture is warm to the touch. This method is called tempering and it prevents the eggs from curdling.
  • Pour the tempered cream and egg mixture into the remaining cream in the saucepan, then return the pan to the heat.
  • Continue to cook over medium heat while constantly stirring until the custard coats the back of a spoon, this will take about 5 to 7 minutes.
  • Once the custard has thickened, remove from the heat and strain through a sieve into a medium bowl to remove any lumps and the vanilla pod.
  • Place the custard in an ice bath to cool it down quickly and prevent overcooking.
  • Once cooled, cover and store in the fridge in an airtight container for up 4 days. Serve with pies, crisps and cobblers.

Steps:

  • In a small, heavy saucepan, heat cream and vanilla until bubbles form at edges.
  • While cream is heating, whisk together egg yolks and sugar until smooth. Slowly pour 1/2 cup of hot milk mixture into egg yolks, whisking constantly. Gradually add egg yolk mixture back to remaining milk mixture, whisking constantly. Continue to cook, stirring constantly, until the mixture coats the back of a spoon.

1 1/4 cups whole milk
3/4 cup heavy cream
1/2 vanilla bean, halved lengthwise, seeds scraped and reserved

Steps:

  • Prepare an ice-water bath; set aside. Whisk egg yolks, sugar, and salt in a medium bowl until combined; set aside.
  • Put milk, cream, vanilla bean, and seeds into a medium saucepan. Bring to a simmer over medium heat. Reduce heat to low. Pour half of hot-milk mixture into reserved yolk mixture, whisking constantly. Pour mixture back into pan.
  • Cook over medium heat, stirring constantly, until mixture coats the back of a spoon. Pour through a fine sieve into a metal bowl set in ice-water bath; discard solids. Let stand; stirring occasionally, until cold, about 20 minutes.

Would she purée fresh apricots and stir the mush into the custard to make a sauce that was tangy and bright? The result is a dessert that takes a few hours of your time, but it rewards deeply. It's a familiar classic, brightened up.

1 and 1/2 tablespoons unsalted butter, softened
225 grams sugar (about 1 cup plus 2 tablespoons)
8 egg whites, at room temperature (about 1 cup)
1 gram fine sea salt (about 1/4 teaspoon)
1 gram cream of tartar (about 1/4 teaspoon)
1 teaspoon vanilla extract
75 grams almond flour (about 2/3 cup)
1 and 1/2 cups milk
4 egg yolks
100 grams sugar (about 1/2 cup)
Pinch salt
6 small apricots, pitted and roughly chopped
1 teaspoon vanilla extract
Sliced almonds and slivered apricots, for garnish, optional

Steps:

  • Make the meringue: Heat oven to 250 degrees. Butter the inside of a 2-quart soufflé mold or baking dish, at least 3 and 1/2 inches deep, then use 2 tablespoons sugar to coat butter, knocking out excess over the sink.
  • Using an electric mixer set on medium-slow speed, beat egg whites until they begin to froth. Add salt and cream of tartar, increase speed to fast, and continue to beat until whites hold soft peaks. Add remaining sugar a tablespoon at a time and beat until whites hold stiff peaks. Beat in vanilla. Using a rubber spatula, gently fold in almond flour.
  • Spoon mixture into the prepared dish and smooth the top. It might overfill the dish; that's O.K. Do not press mixture down. Bake until meringue has risen at least 1/2 inch and is very lightly colored on top, 30 to 40 minutes. Let cool at room temperature for 30 minutes, then refrigerate for at least 1 hour and up to 1 day.
  • Prepare the crème Anglaise: In a medium, heavy saucepan, bring milk to a simmer. In a bowl, vigorously whisk together yolks, sugar and salt until pale yellow and thick. Whisking constantly, dribble in about half of the hot milk. (Don't stop whisking or you risk curdling the eggs.) Pour yolk mixture into the pan with the rest of the milk and gently cook over low heat, stirring constantly and thoroughly, especially around the sides of the pan. When mixture starts to thicken enough to coat the spoon, about 5 minutes, add apricots and cook for 2 minutes longer, just enough to soften the fruit, while continuing to stir.
  • Transfer apricot mixture to a food processor or blender, add vanilla and purée until just smooth. Don't overdo it: you don't want a mousse-like froth. Chill until serving, at least 1 hour and up to 3 days.
  • Run a knife around the sides of the meringue to loosen it from the dish and unmold it onto a large platter or, even better, into a wide, shallow bowl. The sugar syrup that's formed will run down the sides of the meringue. Pour apricot crème Anglaise around the island, creating a pale orange sea. Serve garnished with sliced almond and apricots, if you like.

1 2-inch piece vanilla bean, split
3 large egg yolks
3 tablespoons sugar

  • Combine milk and cream in heavy medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring milk mixture to simmer. Remove from heat.
  • Whisk egg yolks and sugar in medium bowl to blend. Gradually whisk hot milk mixture into yolk mixture. Return custard to saucepan. Stir over low heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 5 minutes (do not boil). Strain sauce into bowl. Cover and chill. 1/2 cup unsalted butter, softened, plus more for pudding basin and parchment
4 ounces dried California apricots (1 cup)
1/2 cup Armagnac or other good-quality brandy
1 cup sugar
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1 1/4 teaspoons finely grated lime zest, plus 1 tablespoon fresh lime juice
2 large eggs
1/3 cup whole milk
Vanilla ice cream or Creme Anglaise, (optional), for serving

Steps:

  • Set a round wire rack in bottom of large stockpot. Set a 5-cup pudding basin or ovenproof bowl on rack. Fill pot with enough water to come about three-quarters of the way up the sides of the basin. Remove basin; dry, and butter inside. Set aside. Cover pot, and bring to a boil.
  • Put apricots, brandy, and 1/2 cup water into a small saucepan. Bring to a boil over medium-high heat. Reduce heat to medium-low, and simmer, partially covered, until apricots are very soft and most of the liquid has been absorbed, about 10 minutes. Reserve 1/2 cup apricots. Carefully puree remaining apricot mixture in a food processor (you should have about 1/2 cup); let cool 10 minutes.
  • Cut reserved apricots into 1/2-inch pieces; return to saucepan. Add 1/4 cup sugar and 1/3 cup water. Bring to a simmer; cook until liquid is nearly evaporated. Pour mixture into prepared basin, and set aside.
  • Butter a 10-inch round of parchment paper; set aside. Whisk flour, baking powder, and salt in a bowl; set aside.
  • Put remaining 3/4 cup sugar and the lime zest into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed 30 seconds. Add butter; mix until pale and fluffy, about 4 minutes. Add eggs, one at a time, mixing after each addition. Mix in lime juice.
  • Add flour mixture in 3 additions, alternating with the apricot puree and milk. Transfer batter to prepared basin.
  • Place parchment round, buttered side down, over basin. Make a pleat in center of parchment. Cover with an 11-inch round of foil. Make a pleat in the center of the foil to allow room for pudding to expand. Cut a piece of twine about 7 feet long. Wrap twine twice around basin over foil, just below lip. Knot to secure. Tie loose ends to twine on other side of basin, creating a handle.
  • Lower pudding into boiling water; cover pot. Return to a boil; reduce to a simmer. Steam until an instant-read thermometer inserted into pudding registers 180 degrees, about 1 1/2 hour, adding boiling water occasionally to maintain level.
  • Transfer pudding to a wire rack. Remove foil and parchment. Let cool 10 minutes. Run a knife around edge of bowl to loosen, and invert pudding onto a serving plate. Serve warm, with ice cream or creme anglaise if desired.

4 egg yolks
3 tablespoons sugar
2 cups heavy cream
1 1/2 tablespoons sour cream
1 vanilla bean, split lengthwise

Steps:

  • In a medium mixing bowl, using a whip, whisk together the egg yolks and sugar until they are very pale yellow and smooth.
  • In a medium saucepan, bring to a boil the heavy cream, sour cream, and vanilla bean with its scrapings. Whisk about half into the egg yolk mixture until well combined, then pour back into the saucepan. Over medium heat, stirring constantly with a wooden spoon, cook until the mixture heavily coats the back of the spoon. Don't scramble the eggs.
  • Strain into a clean bowl and set the bowl over ice cubes and cold water until chilled, stirring occasionally. Refrigerate, covered, until needed.
  • Note: To make coffee Creme Anglaise, substitute 1/4 cup crushed coffee beans (with or without caffeine) for the vanilla bean. Bring to a boil and let steep in the cream mixture, covered for about 10 minutes. When well flavored, whisk into the egg yolks. then continue with recipe
  • To crush coffee beans, place in a plastic bag, close the bag, and heavily press a rolling pin over the beans. Do not grind the beans because this will darken the Creme Anglaise.

5 large egg whites
1/4 teaspoon cream of tartar
Accompaniment:
Vanilla rum crème anglaise
2 cups half-and-half
1/2 vanilla bean, split lengthwise
5 large egg yolks
1/4 cup sugar
1 tablespoon dark rum, or to taste

Steps:

  • To make the apricot soufflé:
  • In a heavy saucepan simmer apricots, water, and 1/2 cup sugar, covered, 20 minutes. Transfer hot mixture to a food processor and purée until very smooth. Force purée through a fine sieve into a bowl and stir in lemon juice, rum, vanilla, a pinch salt. Cool purée completely. Purée may be made 2 days ahead and chilled, covered,. Bring to room temperature before proceeding. Transfer purée to a large bowl.
  • Preheat oven to 350°F. Generously butter 7-ounce (3 1/2- by 1 3/4 - inch) ramekins and coat with additional sugar, knocking out excess.
  • In another large bowl with an electric mixer beat whites with pinch of salt until foamy. Beat in cream of tartar and beat whites until they hold soft peaks. Beat in remaining 1/4 cup sugar, a little at a time, and beat meringue until it just holds stiff peaks. Whisk about one forth meringue into purée to lighten and fold in remaining meringue gently but thoroughly. Ladle batter into ramekins and bake soufflés on a baking sheet in middle of oven 20 to 25 minutes, or until puffed, golden brown, and just set in center.
  • Remove ramekins from oven. With 2 forks pull open center of each soufflé and pour some crème anglaise into each opening. Serve soufflés immediately.
  • To make the vanilla rum crème anglaise:
  • In a small heavy saucepan bring half-and-half just to a boil with vanilla bean and remove pan from heat. Scrape seeds from bean with a knife into half-and-half, reserving pod for another use if desired.
  • In a bowl whisk together yolks, sugar, and a pinch of salt and whisk in hot half-and-half in a stream. Return custard to pan and cook over moderately low heat, stirring constantly with a wooden spoon, until thickened (170°F. on a candy thermometer), but do not let boil. Pour sauce through a fine sieve into a bowl and cool, stirring occasionally. Stir in rum. Chill sauce, covered, until very cold, at least 2 hours and up to 2 days. Makes about 2 1/4 cups.

1 (16 ounce) can apricot halves in light syrup, drained, with syrup reserved

1 (8 ounce) container creme fraiche
½ cup white sugar
4 large eggs
1 lemon, zested

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9-inch square baking dish.
  • Whisk cinnamon and brown sugar together in a small bowl; set aside.
  • Butter both sides of bread slices with softened butter. Layer in the prepared baking dish with apricot halves.
  • Combine milk, creme fraiche, sugar, eggs, lemon zest, and apricot syrup in a large bowl; whisk until combined. Pour over bread and apricots and sprinkle cinnamon-sugar mixture over top. Let stand until bread is saturated with liquid, about 20 minutes.

These dessert crepes are truly scrumptious! Nice and light, they are perfect after any main meal, and I make them all through the year! The preparation time does not include the time it takes to make the crepes--though they don't take VERY long to make.

125 g plain flour
3 tablespoons brown sugar
2 eggs
1 1/4 cups milk
3 teaspoons butter, melted
1 teaspoon vanilla extract
2 (450 g) cans apricot halves
1/4 cup sultana
1 tablespoon Galliano or 1 tablespoon apricot brandy
70 g almonds, slivered
2 teaspoons butter
250 ml milk
2 egg yolks
30 g caster sugar (superfine)
vanilla extract

Steps:

  • Combine the CREPE ingredients and allow the batter to stand for at least 1 hour.
  • Using a crepe pan, make the crepes in the usual way.
  • This recipe makes 10-12 crepes.
  • Roast the slivered almonds in the butter until golden brown.
  • Drain the apricots and cut into large pieces.
  • Place in a bowl and combine with the sultanas, Galliano (or Apricot Brandy) and roasted almonds.
  • Reserve 1-2 tablespoons of roasted almonds to use as garnish.
  • Lie the crepes out flat and divide the filling evenly among them.
  • Spread the apricot filling along one edge of each crepe.
  • Roll each crepe up and place firmly side by side in a lightly greased baking dish.
  • If making this recipe in advance, then it is now that the crepes can be covered and refrigerated for several hours or even overnight and can be re-heated to serve.
  • Before heating or re-heating, make the CREME ANGLAISE: whisk together the sugar and yolks.
  • Bring the milk to the boil, remove from the heat and pour into the whisked sugar and yolks.
  • Stir, and return to the saucepan and place on LOW heat.
  • Stir until the mixture coats the back of a spoon.
  • DO NOT BOIL!
  • Pass the mixture through a fine sieve and add the vanilla extract to taste.
  • Bake the apricot and almond crepes at 180'C for 15-20 minutes.
  • Pour the CREME ANGLAISE over the top of the crepes and serve garnished with the remaining roasted slivered almonds.
  • NOTE: If necessary, the CREME ANGLAISE can also be made in advance.
