Cranberry-Port Gelatin with Crystallized Ginger and Celery image

Number Of Ingredients 9

2 1/4-ounce envelopes unflavored gelatin
1/2 cup tawny Port
3 1/2 cups 100% cranberry juice
4 whole cloves
3 whole cardamom pods, lightly crushed
1 celery stalk, strings removed with vegetable peeler, finely diced
1/4 cup matchstick-size strips crystallized ginger (about 1 ounce)
Nonstick vegetable oil spray
Celery leaves

Steps:

  • Place gelatin in large mixing bowl. Pour Port over gelatin; let stand 5 minutes. Bring cranberry juice, cloves, and cardamom to boil in heavy medium saucepan over medium-high heat. Pour hot cranberry juice mixture over gelatin. Stir until gelatin is completely dissolved, about 4 minutes. Let cool 30 minutes. Strain into medium bowl; discard spices.
  • Chill gelatin mixture until beginning to set (mixture will fall from spoon in soft clumps), about 30 minutes. Stir in diced celery and ginger. Lightly spray 1-quart mold with nonstick spray. Pour gelatin mixture into mold; cover surface with plastic wrap. Refrigerate until set, at least 2 hours. (Can be made 3 days ahead. Keep refrigerated.)
  • Remove plastic wrap. Invert gelatin onto plate. Garnish with celery leaves.

2 cups boiling water

Steps:

  • Combine the gelatin and boiling water; stir until gelatin is dissolved. Mix in cranberry sauce and pineapple.
  • Transfer to glass serving dishes. Sprinkle with chopped nuts. Chill until set and serve.

2 packages (3 ounces each) strawberry gelatin
3/4 cup cold water
1 can (14 ounces) jellied cranberry sauce
1/3 cup chopped pecans
1 tablespoon butter
1/2 cup cold whole milk
1/2 cup heavy whipping cream
1 package (3.4 ounces) instant vanilla pudding mix
3 ounces cream cheese, softened

Steps:

  • Preheat oven to 350° . Drain pineapple, reserving juice in a 1-cup measuring cup. Add enough water to measure 1 cup. Set pineapple aside. , In a small saucepan over medium heat, bring pineapple juice mixture to a boil. Remove from the heat; stir in gelatin until dissolved. Stir in cold water; transfer to a bowl. 4 Granny Smith apples, peeled and sliced
3/4 cup of leftover cranberry sauce or canned whole cranberry sauce
2 Tablespoons flour (if your cranberry sauce is runny)
1 cup all-purpose flour
1/2 cup old fashioned roll oats
1/3 cup white sugar
1/3 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup butter, melted (1 stick)

Steps:

  • Preheat oven to 350*F Combine apples and cranberry sauce. Mix well. If cranberry sauce is runny, add 2 Tablespoons Flour and mix well. Place sliced apples in a 8x8 casserole dish. In a separate bowl, mix 1 cup flour, oats, white sugar, brown sugar, cinnamon and salt. Add melted butter and mix well. Crumble oat mixture on top of apples. Bake for 35 - 40 minutes or until apples are cooked through and tender to a toothpick. Remove from oven and allow to cool for 5 - 10 minutes then serve.

This Cranberry Jello Salad is delicious and festive looking! Raspberry jello, cranberry sauce, apples and pineapple make for a delicious and easy side dish to your Thanksgiving or Christmas dinner!

1 can (20 oz) crushed pineapple, undrained
2 packages (3 oz) or 1 package (6 ounce) raspberry flavored gelatin
1 can (14 oz) whole berry cranberry sauce
1 medium apple chopped (Any will do. We like honey crisp.)
2/3 cup chopped walnuts (optional - tastes great if you choose to use them)

Steps:

  • Open can of pineapple and drain pineapple, reserving juice. Pour juice into a 4 cup liquid measuring dish.
  • Remove 1 Tablespoon of the crushed pineapple and set aside for garnish {if desired}
  • Add enough cold water to pineapple juice until it measure 3 cups; pour int a large saucepan.
  • Bring juice to a boil then remove from heat immediately.
  • Add gelatin. Whisk mixture at least 2 minutes until completely dissolved.
  • Add cranberry sauce and stir. {Gelatin mixture should be thick}.
  • Pour mixture into a large bowl. Refrigerate 15 - 30 minutes or until slightly thickened.
  • Remove from fridge and stir in pineapple, apples and walnuts; stir gently.
  • Pour into a medium serving bowl. & refrigerate for 4 hours or until completely firm.
  • Top with reserved crushed pineapple just before serving.
  • Store leftover gelatin in refrigerator.

4 envelopes (1/4 ounce each) unflavored gelatin
3 cups cranberry-juice cocktail
3/4 cup sugar
6 oranges, separated into segments, 1/2 cup juice reserved

Steps:

  • In a small saucepan, sprinkle gelatin over 1 cup cranberry juice. Set aside to soften, 5 minutes. Place over low heat until gelatin has dissolved, 4 to 5 minutes. Add sugar; stir gently until dissolved (rub mixture between your fingers to make sure it's smooth), 2 to 3 minutes. Remove from heat.
  • Transfer gelatin mixture to a medium bowl; stir in orange juice and remaining 2 cups cranberry juice. Skim any foam from surface, and refrigerate until just thick enough to hold a line drawn by your finger, 30 to 40 minutes.
  • Arrange orange segments in the bottom of a 1 1/2- to 2-quart gelatin mold or Bundt pan; pour gelatin mixture over oranges. Refrigerate until firm, at least 2 hours.
  • To unmold, dip bottom of mold briefly in hot water, invert onto a plate, and shake firmly to release.

2 cups very hot water
2 cups ginger ale
1 (20 ounce) can pineapple tidbits, drained
1 cup chopped walnuts, toasted if desired

Steps:

  • Pour hot water over Jello, and stir until dissolved.
  • Add ginger ale.
  • Stir in all remaining ingredients.
  • Chill until it starts to jell, and stir to combine; repeat several times until thoroughly set.
  • Serve as a salad on a crisp lettuce leaf or as a dessert, with whipped topping or drained low-fat vanilla yogurt.

What a great and easy dish to prepare for the holiday season. It's simple enough for every day but impressive enough for guests. Don't limit yourself to just major holidays though. This can be made year round! **ADDING** If I were to make this again, I would definately go a little easier on the sugar, maybe to 3/4 cup. I may also use 2 cans of cranberries just for height/presentation out of the oven. Really good though!
