2 tablespoons cornmeal
2 tablespoons dry bread crumbs
1 tablespoon all-purpose flour
1/4 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon salt
CRAB CAKES:
1 egg, beaten
1/4 cup dry bread crumbs
2 tablespoons minced chives
1 tablespoon minced fresh parsley
1-1/2 teaspoons minced fresh thyme
1 tablespoon mayonnaise
1 tablespoon tartar sauce
2 teaspoons spicy brown mustard
1/2 teaspoon lemon juice
1/2 teaspoon Worcestershire sauce
1/4 teaspoon celery salt
1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
2 tablespoons canola oil

Steps:

  • In a shallow bowl, combine the first six ingredients; set aside. , In a large bowl, combine the egg, bread crumbs, chives, parsley, thyme, mayonnaise, tartar sauce, mustard, lemon juice, Worcestershire sauce and celery salt. Fold in crab. Shape into four patties; coat with cornmeal mixture., In a large skillet over medium heat, cook crab cakes in oil for 3-4 minutes on each side or until golden brown.

1 1/2 cups cornmeal
4 eggs
1/2 cup mayonnaise
2 tablespoons vegetable oil
1 teaspoon cayenne pepper
1 teaspoon season salt
1 teaspoon garlic powder
1 teaspoon dry mustard
2 tablespoons water

Steps:

  • In a bowl add the eggs, cornmeal, mayonnaise, and oil; mix well with a whisk.
  • Add water slowly until a batter forms (you may not have to use all the water); if its too thick add more water.
  • Whisk in pepper, salt, garlic, and mustard.
  • Chop crab meat into fine pieces, or shred and add to batter.
  • Spoon onto a hot griddle or pan and cook them like pancakes, flipping to cook both sides.

12 ounces fresh jumbo lump crabmeat, drained and picked over
12 ounces fresh lump crabmeat, drained and picked over
1 ¼ cups panko breadcrumbs
2 large eggs, beaten
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
¼ teaspoon salt
¼ teaspoon black pepper
1 tablespoon chopped fresh parsley, plus more for garnish
1 tablespoon grated lemon zest plus 2 tsp. fresh juice (from 1 lemon) and lemon wedges for garnish
2 tablespoons butter
2 tablespoons olive oil
Herbed Crème Fraîche
Spicy Pepper Sauce
Creamy Dijonnaise

Steps:

  • Combine crab, panko, beaten eggs, mayonnaise, mustard, Worcestershire sauce, salt, pepper, parsley, and lemon zest and juice in a large bowl. Using your hands or a rubber spatula, gently fold the ingredients until combined, being careful not to break up the crab. Cover and chill at least 1 hour or up to overnight.
  • Preheat oven to 200°F. Place a wire rack inside a large rimmed baking sheet; set aside.
  • Heat butter and olive oil in a large nonstick skillet over medium. Gently form the chilled crab mixture into 10 (2-inch) balls. Do not squeeze mixture. Place balls in skillet in batches. Do not overcrowd the pan. Cook until golden brown on one side, about 4 minutes. Flatten slightly with a spatula before gently flipping over; cook until golden brown, about 5 minutes. Transfer cooked crab cakes to the prepared rack, and place in preheated oven to keep warm. Repeat procedure with remaining crab mixture.
  • Transfer hot crab cakes to a serving plate; sprinkle with parsley. Serve with desired sauces, and garnish with lemon wedges.

1 cup mayonnaise
1/2 cup thinly sliced scallions, both green and white parts
1/4 cup finely diced red bell pepper
2 teaspoons peeled and grated fresh ginger
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup unsweetened shredded coconut, plus 1 cup more for dredging
1/2 cup panko bread crumbs, plus 1 cup more for dredging
About 6 tablespoons peanut or canola oil
Sweet chili sauce
4 lime wedges
1/4 cup fresh lime juice
2 tablespoons sugar
2 tablespoons Asian fish sauce

Steps:

  • Lime Dipping Sauce, recipe follows
  • Put the crabmeat in a large bowl and add the mayonnaise, scallions, bell pepper, ginger, salt, and pepper and gently combine using a rubber spatula. Add the 1/2 cup coconut and 1/2 cup panko and gently fold in. Divide the mixture into 8 mounds and form into patties about 3-inches in diameter and 3/4-inch thick. Put the patties on a large plate, cover with plastic wrap, and refrigerate 30 minutes or longer.
  • When you are ready to fry the crab cakes, combine the 1 cup of coconut and 1 cup of panko in a shallow container. Lightly dredge the patties in the crumbs, shaking off any excess. Put 2 large nonstick skillets with over medium high heat. Add about 3 tablespoons of oil to each pan. When the pans are hot, place 4 patties in each pan. Turn the heat down to medium and fry the cakes until golden and heated through, turning once with a spatula to brown both sides, about 4 minutes per side.
  • Transfer the crab cakes to plates, serving 2 to each person, accompanied by ramekins of sweet chili sauce and lime wedges.
  • Whisk together all ingredients in a small bowl.

1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 large egg whites
8 soft-shell crabs, (about 2 1/2 pounds)
6 tablespoons olive oil
1 bunch arugula, (about 6 ounces), washed and tough stems removed
Lemon-Red Pepper Confit

Steps:

  • Combine cornmeal, salt, and pepper in a shallow bowl or plate.
  • Whisk egg whites in a small bowl until just frothy. Dip crabs into egg whites to coat. Dredge them in the seasoned cornmeal, shake off excess, and set aside.
  • Heat 1 1/2 tablespoons olive oil in a large nonstick skillet over medium-high heat; arrange 4 crabs on their bellies in the pan. Cook until golden and crisp, about 5 minutes. Transfer crabs to a plate and add 1 1/2 tablespoons olive oil to pan. Return crabs to pan, on their backs, and cook until crisp, about 5 minutes more. Remove crabs from skillet and keep warm on a baking sheet in a 300 degrees oven. Repeat with the remaining olive oil and crabs.
  • Divide arugula among four plates. Arrange 2 crabs over each plate of arugula, spoon confit over or around crabs, and serve.

1 clove garlic, minced
2 large eggs, beaten
1 teaspoon old bay seasoning
2 teaspoons olive oil
salt, to taste
pepper, to taste
1 lb fresh lump crab meat
vegetable oil, for frying

Steps:

  • Over a large bowl, crumble the cornbread into fine crumbs until you have about 2 cups (200 g) worth.
  • Add the red pepper, green onion, mayonnaise, sour cream, parsley, cilantro, garlic, beaten eggs, Old Bay seasoning, olive oil, salt, pepper, and crab meat to the bowl.
  • Break up the crab meat into fine pieces until it is all uniform in size.
  • Mix all the ingredients together with your hands or a wooden spoon until evenly combined.
  • Form the mixture into small patties, about 2.5 inches (6 cm) in diameter and ¾-inch (2 cm) thick and set aside.
