For the Marinade:
1 orange (zested)
1 lime (zested)
1/2 cup orange juice (fresh)
1/4 cup lime juice (fresh)
1/2 cup olive oil
1/4 cup fresh cilantro (chopped)
6 cloves garlic (smashed)
Optional: 1 jalapeno pepper (sliced)
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon salt
1/4 teaspoon ground black pepper
For the Chicken:
1 whole roasting chicken
Optional garnish: orange and lime slices

Steps:

  • Gather the ingredients.
  • In a large bowl, combine the orange zest, lime zest , orange juice, lime juice, olive oil, cilantro, garlic cloves, jalapeno (if using), oregano, cumin, salt, and black pepper.
  • Place the chicken into the marinade , cover with plastic wrap, and refrigerate for at least 4 hours or overnight. You can also do this in a large zip-top bag, but be sure to place the bag into a large bowl to safeguard against drips.
  • Preheat the oven to 400 F. Remove the chicken from the marinade and place on a large roasting pan. If you like, tie the legs together with kitchen string and tuck the wing tips under the body to help prevent them from darkening too much.
  • Roast in the oven for approximately 1 1/2 hours, or until the thickest part of the thigh reaches 165 F on a meat thermometer. If the breast starts to get too dark while roasting, cover loosely with a sheet of aluminum foil.
  • Remove from the oven, cover loosely with aluminum foil, and allow to rest for about 10 minutes before carving.
  • Garnish with orange and lime slices (if using) and serve with rice and black beans.

This Cuban mojo chicken recipe is so flavorful and so easy. The zesty marinade creates juicy chicken legs ready to bake, served with pineapple-avocado salsa.

4 bone-in chicken leg quarters
½ cup orange juice
⅓ lime juice
3 garlic cloves
¼ cup cilantro
1 lime zest
½ tbsp cumin
1 tsp dried oregano
1 tsp salt
½ tsp black ground pepper
½ cup olive oil
1 onion (quartered)
½ avocado
4 ounces pineapple (diced)
1/2 cup cherry tomatoes
½ cup black beans (rinsed & drained (optional))
1 cup steamed rice (optional)

Steps:

  • Preheat oven at 350°F
  • Add to the food processor, orange juice, lime juice, garlic, cilantro, lime zest, cumin, oregano, salt, and black ground pepper.
  • Process for 10 seconds. You don't want the sauce to become too creamy.
  • Add the olive oil and process for 5 seconds, just to combine ever so slightly.
  • Add the chicken and chopped onion in a large bowl.
  • Pour half of the mojo sauce over the chicken and onions. Cover with cling film, and marinate in the fridge for 3 hours.
  • Set aside the remaining half of the mojo sauce for later use.
  • When the chicken is done marinating, add chicken and onions the the baking tray, together with the sauce it marinated in.
  • Bake at 350°F for 35-40 minutes.
  • Meanwhile, chop up the pineapple, avocado, and cherry tomatoes into small pieces and add them in a small bowl. Mix in the remaining half of Mojo sauce you saved earlier. Your salsa is ready!
  • Drizzle pineapple-avocado salsa over baked chicken, serve with steamed rice and beans, and enjoy!

1 cup plus 2 tablespoons vegetable oil
3/4 cup orange juice
1 tablespoon (packed) grated orange peel
1 tablespoon honey
1 tablespoon soy sauce
For chicken
2 teaspoons cumin seeds
6 large garlic cloves, minced
1 large serrano chili, stemmed, minced
1/2 teaspoon salt
3/4 cup olive oil
3 tablespoons orange juice
3 tablespoons fresh lime juice
6 skinless boneless chicken breast halves
2 large firm but ripe mangoes, peeled, pitted, cut into 1/2-inch pieces
2 large avocados, peeled, pitted, cut into 1/2-inch pieces
10 ounces mixed baby lettuces
3/4 cup roasted salted cashews

Steps:

  • Make dressing:
  • Whisk vegetable oil, orange juice, orange peel, honey and soy sauce in small bowl to blend. Season dressing to taste with salt and pepper. (Dressing can be prepared 1 day ahead. Cover and refrigerate.)
  • Make chicken:
  • Stir cumin seeds in heavy medium skillet over medium-high heat until seeds are fragrant and slightly darker in color, about 2 minutes. Transfer seeds to medium bowl. Add minced garlic, minced chili and salt to seeds; mash mixture with back of fork to form coarse paste. Heat olive oil in same skillet over medium-high heat until very hot, about 2 minutes. Pour hot olive oil over garlic mixture; stir to blend. Let stand 15 minutes. Whisk in orange juice and lime juice. Pour marinade into 13x9x2-inch glass baking dish and cool. Add chicken to marinade; turn to cnd cool. Add chicken to marinade; turn to coat. Cover chicken and refrigerate at least 1 hour and up to 3 hours.
  • Combine mangoes and avocados in medium bowl. Add 6 tablespoons dressing and toss to coat.
  • Prepare barbecue (medium-high heat). Remove chicken from marinade; discard marinade. Grill chicken until cooked through, about 5 minutes per side. Transfer chicken to work surface. Let stand 5 minutes. Cut each chicken piece crosswise into 1/3-inch-thick slices.
  • Place lettuces in large bowl. Toss with enough dressing to coat thoroughly. Season to taste with salt and pepper; mound lettuces on 6 plates. Arrange 1 sliced chicken piece atop lettuces on each plate. Spoon mangoes and avocados alongside chicken. Sprinkle salads with cashews. Serve, passing any remaining dressing separately.

1 teaspoon cumin seed
3 cloves garlic, chopped
1 fresh red chile pepper, chopped
¼ teaspoon salt
2 tablespoons olive oil
5 teaspoons orange juice
5 teaspoons lemon juice
2 (8 ounce) boneless, skinless chicken breast halves
2 tablespoons olive oil
½ cup orange juice
1 teaspoon lime zest
1 teaspoon honey
1 teaspoon sweet soy sauce
¼ cup cold, unsalted butter, cut into pieces
½ cup diced mango
½ avocado
chopped fresh cilantro to taste
chopped fresh parsley to taste

Steps:

  • Toast the cumin seeds in a dry skillet over medium-high heat until fragrant, about 2 minutes. Place the cumin seeds, garlic, chile pepper, salt, olive oil, orange juice, and lemon juice into the bowl of a blender; grind to a coarse paste. Toss the chicken with the marinade, then place into the refrigerator, and allow to marinate for about 2 1/2 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a skillet over medium-high heat. Cook the chicken for 2 to 3 minutes on each side until browned. Place into the oven, and cook until the juices run clear, about 8 minutes. When the chicken is done, remove, cover with foil, and allow to rest for 3 to 5 minutes.
  • While the chicken is in the oven, whisk together the olive oil, orange juice, lime zest, honey, and soy sauce in a skillet over medium-high heat. Simmer until the orange juice has reduced to 1/3 of original volume and is beginning to get thick and syrupy. Once thick, remove from heat, and whisk in the butter pieces one at a time until melted; set aside.
  • To serve, place chicken on the plate and sprinkle with mango and avocado. Drizzle with the sauce, and garnish with cilantro and parsley.

1/2 cup canola oil
2 medium red onions, halved lengthwise and thinly sliced
2/3 cup sherry wine vinegar
3 tablespoons freshly squeezed lime juice
1/2 cup extra virgin olive oil
4 medium ripe tomatoes, cut into sixths
4 medium ripe avocados, halved lengthwise and cut crosswise into sixths
1 head romaine lettuce, torn into bite-size pieces
1 head bibb lettuce, torn into bite-size pieces
1 head boston lettuce, torn into bite-size pieces
1 cup cooked black beans

Steps:

  • Heat 1/4 cup of the canola oil in a large frying pan over medium heat. When oil shimmers, add onions and cook, stirring occasionally, until golden brown and soft, about 10 minutes.
  • Add 1/3 cup of the sherry vinegar, and scrape up any browned bits that have adhered to the bottom of the pan. Remove from heat and allow to cool.
  • Meanwhile, make the vinaigrette. Combine remaining 1/3 cup sherry vinegar and lime juice in a medium nonreactive bowl, and season with salt and freshly ground black pepper. While constantly whisking, pour in remaining 1/4 cup canola oil and olive oil in a slow, thin stream until dressing is well combined; set aside.
  • To serve, combine cooled onions, tomatoes, avocados, lettuces, and black beans in a large bowl and toss. Add 3/4 of the vinaigrette and toss until greens are well coated. Taste, add more vinaigrette as desired, and season with salt and freshly ground black pepper.

  • Trim the fat and slice large breasts in half widthwise. Pound chicken to even thickness (ensures the best grilling!) Set aside in a large plastic sealable bag. For the marinade: place the cilantro leaves, minced garlic (or 3-4 garlic cloves), 1 teaspoon orange zest, 1/2 cup freshly squeezed orange juice, 1/4 cup freshly squeezed lime juice, dried oregano flakes, cumin powder, 1 teaspoon salt and 1/2 teaspoon pepper, and fresh mint leaves in a food processor. Cover and pulse until cilantro, mint, and garlic is finely chopped. Drizzle in the olive oil and pulse until just combined. Do not blend vigorously with the olive oil. Reserve 1/3 cup of this marinade and set aside.
  • Pour remaining marinade over chicken. Knead to coat chicken and place in the fridge for at least 1 hour up to 12 hours. The longer the chicken marinades, the more flavorful it will be.
  • Lightly oil the grill grate and then place the marinated chicken (discard marinade in bag) on the grill. Cook for 10-12 minutes turning as needed (depending on the size of your pieces) or until chicken juices run clear and internal temperature is at 165 degrees F. As you flip and cook the chicken, brush it generously with 1/4 cup of the the reserved marinade. Add the last tablespoon or so of the marinade to finished chicken after removing from the grill. Tent with foil and allow to rest for 5 minutes before slicing/chopping.
  • Prepare cilantro-lime rice: combine the rice, chicken stock or broth, and minced garlic in a pot over high heat. As soon as the mixture begins to boil, reduce the heat, and cover with a lid until the rice is cooked through. Once the rice is cooked through, tender, and no liquid remains, stir in 3 tablespoons (1 large) lime juice and 3 tablespoons packed & finely chopped cilantro. Season to taste with salt and pepper.

  • Place the raw chicken in a sealable container or bag and pour 2/3 cup of the mojo marinade over the chicken (or more if necessary), reserving the remaining sauce for serving the bowls. Seal and allow chicken to marinate 1 hour, up to 8 hours.
  • Heat the oil to medium high in an 8 to 10-inch skillet (I've found cast iron works great). Note: You want enough oil to allow the plantains to float while they're frying, but they don't need to be fully submerged.
  • Run a knife along the length of each plantain in order to peel them. Note: plantains are much more difficult to peel than bananas. I've found choosing ripe plantains and making a deep cut down the full length of the peel, cutting just as deep as the peel until you reach the flesh, is helpful in getting the peel off easily. Ripe plantains should be fairly easy to peel. The greener, less ripe plantains will be difficult and often the peel will be stuck to the flesh.
