Steps:
- Bring a large saucepan of salted water to a boil. Add the peas and cook for 1 minute. Drain and immediately rinse under cold water until room temperature. Drain well, then transfer to a food processor. Pulse until almost smooth. Add the avocado, lime zest and juice, and cilantro. Pulse until almost smooth. Add the scallion and jalapeno and pulse until well incorporated. Season to taste with salt. Transfer to a serving bowl and garnish with cilantro. Serve with the cucumber slices.
OUR FAVORITE MOST AMAZING GUACAMOLE
My husband and I tried a ridiculous amount of guacamole over our decades together, but no recipe ever hit home for us. After much experimenting, I finally created a recipe we can't get enough of. It even beats every restaurant we've ever been to. The two of us can eat this whole bowl in one sitting, and enjoy every bite. I'm so happy to share it with you. Now Taco Tuesday can be any night of the week! Serve it with tortilla chips, or use it to top tacos, quesadillas, fajitas, burritos, and more.

- Pit and spoon avocados into a small bowl and add cream cheese. Mash together until well blended.

- Smash 3 avocados and a pinch of salt in a medium bowl. Stir in 3 diced tomatillos (husked and rinsed), 1/2 cup diced cucumber, 2 chopped scallions, 3 tablespoons each chopped cilantro and pickled jalapeños and the juice of 1 lime; season with salt. Top with more cilantro.

- Using fork, mash avocado, lime juice, garlic and jalapeño in small bowl until almost smooth. Season guacamole with salt and pepper.
- Divide guacamole among all bread slices, spreading evenly (guacamole will be thinly spread). Place 5 tomato slices atop guacamole on each of 4 bread slices. Top each with 4 cucumber slices, then 2 onion slices, then cilantro. Top with remaining 4 bread slices, guacamole side down, pressing lightly. Cut sandwiches in half. (Can be prepared 3 hours ahead. Wrap in plastic; chill.)
GUACAMOLE
Providing a framework to build on as you wish, this pared-down guacamole lets the avocado shine. If you want more lime, add more lime. Seed the jalapeño, if you prefer its fruity heat without the spice, or leave the seeds in, if you enjoy living life on the edge. Letting the diced onion sit in lime juice for a couple of minutes will help temper its pungent bite before imbuing the dish with its oniony savoriness. Chopped cilantro and diced tomatoes are welcome additions to this Mexican staple, if you'd like. It's your guacamole. Serve with tortilla chips, or as a condiment alongside your meal, and double or triple this recipe for a party.

- In a medium bowl, combine the onion and lime juice, and season with salt and pepper. Let that sit as you chop the jalapeño.
- Cut the hard stem end off of the jalapeño and discard, then slice the chile in half lengthwise. If you don't want the spice, use your knife or a spoon to remove the inner seeds and white membrane (this is where most of the chile's heat resides). If you enjoy the heat, then leave all of that in. Chop the jalapeño as finely as you can and add to the bowl with the onion and lime juice. Be sure to wash your hands very well with soap after handling spicy chiles like jalapeños, and whatever you do, do not touch your eyes after handling them.
- Cut the avocados in half lengthwise and pull the halves apart. You can use your knife to pit the avocados, but a safer way is to hold the avocado half in one hand so that your thumb is touching the skin side where the pit is and your index and middle fingers are touching the flesh side around the pit. Gently press your fingers into each other to pop the pit out; with a ripe avocado, it should come out very easily. Use your hands to squeeze the avocado flesh out into the bowl with the other ingredients, or scoop it out with a spoon.
- Using a fork, gently mash the avocados against the side of the bowl until they are mashed to your desired consistency, then stir them into the other ingredients until well combined. Taste and add more salt if desired.
- Contrary to popular belief, adding avocado pits to guacamole does nothing to prevent oxidation, but if you press a good layer of plastic wrap or parchment paper directly over the guacamole and store it in the refrigerator, it will keep well for up to 2 days.
CUCUMBER GUACAMOLE
A refreshing dip that is a perfect accompaniment for a fiery Mexican meal or just a simple dip to enjoy with some toasted pitta bread in front of the TV.

- Peel and remove the stone from the avocado. Place in a bowl and mash with a fork to lumpy consistency.
- Peel the cucumber and grate on to a plate, you can leave a few bits of the skin on as this will add colour. The excess water now needs to be squeezed out of the grated cucumber, do this by placing it between sheets of kitchen paper which will absorb the liquid and squeezing! do this a few times until most of the moisture is removed. Put in the bowl with the mashed avocado.
- Add the lemon or lime juice and chilli (if using) and perfunctorally mix together. Add olive oil (if needed) to loosen the mixture and season to taste with salt.
- Serve as a snack with toasted pitta bread/tortilla chips or as a side to a Mexican meal.
