ITALIAN SAUSAGE ROLLS
Steps:
- Preheat oven to 350 degrees F.
- Lay the puff pastry sheets out on a flat work surface. Split the sausage casings lengthwise and turn the mild sausage meat out onto 1 pastry sheet and the hot sausage meat out onto the other pastry sheet. Gently pat the meat out to fit the pastry sheets, being careful to leave a 1/2-inch strip bare on both long sides of each sheet. Top with 3 tablespoons of Romano and 5 basil leaves per sheet. Starting with 1 of the bare strips, roll the pastry tightly around the filling. The bare strip on the far end will stick to itself.
- Place the rolls in the freezer for at least 1 hour; they should be just frozen enough to make slicing easy. (The recipe can be made to this point 1 week in advance.) Slice the rolls into 1/2-inch pieces, place on baking sheets and place in the oven for 20 to 30 minutes, or until golden brown. Remove and let cool 5 minutes before serving.

- Heat the olive oil in a large skillet over medium heat. Add the onions and cook until soft and translucent, 5 minutes. Add the garlic and cook for another 2 minutes. Set aside to cool.
- In a small bowl whisk together the egg and milk. Line a baking sheet with parchment paper.
- In a large bowl combine the pork, potato, breadcrumbs, nutmeg, thyme and the cooled onion-garlic mixture. Sprinkle with salt and pepper. Gently mix until combined. Cover and refrigerate while you roll out the puff pastry.
- Unfold the sheet of puff pastry on a floured work surface. With a rolling pin, roll into a 12-inch square about 1/8-inch thick. With a pizza cutter or knife, cut into four 3-by-12-inch strips. Set the strips on the prepared baking sheet and store in the refrigerator while you proceed.
- Place one of the pastry strips lengthwise in front of you. Divide the pork filling into four equal portions. Form one of the portions into a long, tubular shape and place it on the puff pastry so it reaches from long end to long end. Brush the long side of the puff pastry furthest from you with some egg wash. Roll up the puff pasty away from you and around the pork filling to create a 12-inch-long log. Pinch the seams together and transfer, seam-side down, to the baking sheet. Repeat with the remaining pastry strips and filling. Freeze for 30 minutes to chill before baking.
- Preheat the oven to 400 degrees F.
- Slice each log into six equal portions so that you have 24 rolls in total. Place the rolls on the baking sheet and brush with egg wash. Bake until golden brown, 30 minutes. Let cool for about 10 minutes before serving.

- In a large skillet, cook the sausage, onion and peppers over medium heat until the meat is no longer pink; drain. Combine crust mixes; prepare according to package directions. - Pound chicken flat until very thin.
- I place my chicken in a zip lock bag while pounding to keep the mallet from sticking to the chicken.
- Remove skins from sausage, unless you have bulk sausage.
- In large skillet, cook sausage until done.
- Pour off most of the fat, leaving drippings in pan.
- Spread 1/4 of the sausage on each chicken breast and place a cheese stick at one end of the flattened chicken.
- Roll up the chicken over the cheese, then fold in the sides continuing to roll the chicken breasts like an egg roll,encasing sausage and cheese.
- In a bowl, mix flour, salt and oregano.
- Dredge chicken rolls in mixture.
- In pan drippings, brown chicken on all sides over medium heat.
- You do not have to cook completely, just brown.
- Remove chicken from pan.
- Add olive oil to skillet; then saute onion, peppers, and mushrooms for 1-2 minutes.
- Add chicken rolls to skillet, then tomatoes, red pepper flakes wine, basil and pepper.
- Cover and simmer 25 to 30 minutes.

- Preheat the oven to 375˚F (190˚C).
- Heat olive oil in a pan and add sliced peppers and onions.
- Stir and add Italian seasoning and garlic. Cook until peppers and onions are soft and set aside to cool.
- In the same pan, brown the sausage until it's fully cooked and remove from heat to cool.
- Roll out pizza dough into an oval about 14 inches (35 cm) wide and about 8 inches (20 cm) long. Place rolled-out dough on a piece of parchment paper.
- Along the center of the dough, layer the sausage, peppers, ham, salami, provolone, and mozzarella.
- Fold the longer sides in first, one at a time, and pinch the edges to seal.

- Lightly grease a large baking sheet.
- Combine the breadcrumbs and milk in a small bowl. Let stand until milk is absorbed, about 5 minute.
- Transfer to a food processor.
- Add the sausage, onion, 1 egg, garlic, and oregano; pulse until blended and season with salt and pepper.
- Unfold the pastry sheet on a floured work surface and roll out into a 12x10-inch rectangle.
- Cut the pastry crosswise into three 10x4-inch strips and brush each strip with the beaten egg.
- Spoon 1/3 of the sausage mixture in a narrow strip lengthwise down the center of each pastry strip.
- Fold the long sides in, covering the filling and overlapping slightly in the center.
- Press the seam down slightly to seal.
- Arrange rolls seam side down on the prepared baking sheet.
- Cover and chill until rolls are firm, and least 10 min and up to 1 hour.
- Preheat the oven to 425ºF while the rolls are chilling.

PUFF PASTRY SAUSAGE ROLLS
Puff Pastry Sausage Rolls are some of the most moreish foodstuffs on the planet. There is a reason Greggs Sausage Rolls are so damn popular you know! But they are super easy to make at home with great sausage meat for an even better version!

- Preheat the oven to 200c fan | 220c | 390c or equivalent.
- Roll 320g Puff Pastry out on a floured surface to about 0.25 inch thickness. Or unroll a sheet of ready rolled pastry.
- Cut the sheet into half lengthways with a sharp knife.
- Skin enough sausages to get 450g Sausage Meat. Or if using ready prepared sausage meat, split it into two and form each half into a long sausage.
- Place the sausage meat around ⅔ of the way along each pastry strip. Make sure it reaches from end to end. You can mold the sausage meat into the right shape. Make sure to press the end of one sausage into the next if you are using skinned sausage.
- Beat 1 Egg in a small bowl. Use a pastry brush to cover the large side of exposed pastry.
- Start to roll the pastry around the sausage meat starting with the unwashed smaller top section. Keep the pastry nice and tight to the sausage meat.
- Continue to roll until the meat is totally sealed. Wet your finger a little and gently press along with pastry seam - this will allow the pastry to meld together and reduce the likelihood of the pastry coming apart as it cooks.
- Using a sharp knife make gentle diagonal slashes down the whole of each roll.
- Use the same sharp knife to cut the end off of each roll to neaten it up if needed. Cut each roll into two and place the 4 rolls next to each other on the board. Use the knife to saw rather than press down or you will squash the rolls.
- Wipe the knife and cut all 4 rolls into 3 equal pieces. Wipe the knife again in between each cut. Don't forget not to press to hard.
- Move each roll to a lined baking tray, seam side down. Make sure the rolls each have ample room to expand.
- Generously egg wash the top and sides of each sausage roll. Make sure to not wash the exposed ends or sausage meat.
- Bake for 15 minutes until light golden brown. They may need slightly longer depending on your oven. Use your eyes and judgement. If your oven does not cook evenly, turn the tray midway through cooking.
- Try to let them cool a bit before serving but I think we all know they're not going to last long!

DAWN'S ITALIAN SAUSAGE ROLLS
Steps:
- Preheat oven to 350 bake. Clear an area on the table or counter then sprinkle with flour. Roll dough out on floured surface to a round shape,like a pizza. Keep the dough around 1/4 inch thick. Flip dough over and repeat. Do not over roll the dough or make it too thin. Once rolled out then rub the dough with the olive oil and crushed garlic. Spread the sausage on the dough but be careful not to rip the dough. Top with the remaining ingredients. Carefully, roll the dough into a log shape. To ensure the log stays closed, you may need to spread a little olive oil so the dough adheres. Then cut into 1 inch pin wheels. Place each wheel flat, on a greased 9x11 baking pan, 2 inches apart. Let stand for 10 minutes then place in the oven and bake for 25-30 minutes or until golden brown. Best served hot. Store in refrigerator, if there's any left. They go fast!!They can be re-heated in the microwave for 10-15 seconds but they are better when re-heated in a toaster oven. It makes them crunchy and tasty! Level: Moderate Mangia!
