5 tablespoons unsalted butter, sliced, plus more for greasing pan
4 cups (6 to 8) sliced peeled nectarines
1 pint raspberries
2/3 cup granulated sugar, divided
2 tablespoons cornstarch
1 tablespoon fresh lemon juice
3/4 teaspoon salt, divided
1 1/4 cups all-purpose flour
1/2 cup fine cornmeal
2 teaspoons baking powder
1/2 teaspoon baking soda
6 tablespoons lowfat buttermilk
1 tablespoon raw sugar

Steps:

  • Heat oven to 375°F. Butter a 9"-square baking pan. In a bowl, toss nectarines and raspberries with 1/3 cup granulated sugar, cornstarch, juice and 1/4 teaspoon salt to combine; add to pan. In another bowl, whisk remaining 1/3 cup granulated sugar, flour, cornmeal, baking powder, baking soda and remaining 1/2 teaspoon salt. In a food processor, pulse sugar-flour mixture 10 seconds; add sliced butter; pulse until dough pieces are the size of peas, 1 minute. Add buttermilk; pulse a few more times until just combined. Use a 1/3-cup measure to portion dough into 10 round biscuits; place on top of fruit. Lightly press biscuits with fingers to flatten tops; sprinkle cobbler with raw sugar. Bake until juices bubble thickly and biscuits are golden brown, 50 minutes. Serve warm or at room temperature.

Wow, what a flavorful fruit cobbler recipe! We don't think we've ever had so many layers of fruit in one cobbler recipe. We love the hint of cinnamon flavor and the added crunch from the nuts. A great summer dessert recipe.

1 1/2 stick(s) butter
1 1/2 cup(s) flour
1 1/2 cup(s) sugar
1 1/2 cup(s) milk
1 1/2 tablespoon(s) baking powder
2 teaspoon(s) vanilla extract
FILLING
2 - ripe peaches
2 - ripe nectarines
2 - crisp apples
10 ounce(s) frozen sweet red cherries
3/4 cup(s) pecan pieces
3/4 cup(s) craisins
1 1/2 teaspoon(s) cinnamon

Steps:

  • Preheat oven to 350 degrees. While preheating, place 9X12 baking dish containing the butter in the oven to melt. Mix flour, sugar, milk, baking powder and vanilla extract until smooth. Remove buttered pan from oven. Pour batter evenly over the butter. Set aside.
  • Into a mixing bowl, cut peaches, nectarines and apples into pieces. Add cherries, pecans, craisins and cinnamon. Stir.
  • Spoon fruit evenly over batter. Place into oven and bake for 55 minutes.
  • Serve with a dollop of cool whip or a scoop of vanilla ice cream.

This receipe uses a Krusteaz crumb cake mix. It is sooo good an so easy. The recipe is written for a berry cobbler, but i like to use 3 cups of canned peaches and one cup frozen berries. The recipe is really flexible and you can use any kind of fruit.

1 (21 ounce) package krusteaz cinnamon crumb cake mix, reserve cinnamon topping pouch
4 cups fruit, of your choice
6 tablespoons butter, cut into pieces
1 cup old fashioned oats
1 tablespoon water

Steps:

  • Preheat oven to 350°F In large bowl, gently toss fruit (I leave in about 1/4 cup syrup from canned peaches) and ½ cup cake mix.
  • Spoon fruit mixture into an ungreased 8-inch square pan (a 10-inch deep-dish pie pan is recommended by the recipe).
  • In separate bowl, place remaining cake mix, full pouch cinnamon topping, butter, oats and water.
  • Using an electric mixer, mix on medium speed until mixture is crumbly.
  • Sprinkle topping over fuit mixture.
  • Bake 25-30 minutes or until golden brown.
  • Serve warm with vanilla ice cream, if desired.

  • Put the fruit in a baking dish. Add the sugar and toss. Sprinkle with the tapioca and toss again. Grate about 2 teaspoons lemon zest into the dish, then squeeze in about 2 tablespoons lemon juice. Toss again. Sprinkle on the black pepper, nutmeg, and cardamom. Toss again. Set aside while you make the topping.
  • Combine the flour, sugar, baking powder, baking soda, and salt in a medium bowl. Cut in the butter in small chunks. Use a fork, pastry cutter, 2 knives, or your fingers to work the butter into the flour until it looks like cornmeal with a chunk or two in it. Stir in the buttermilk. The batter should be loose enough to drop, stir in more buttermilk, 1 tablespoon at a time, if needed.
  • Stir the fruit mixture one more time, then drop the batter in spoonfuls over the top. Sprinkle with the coarse/extra sugar, if using. Set the baking dish on a rimmed baking sheet (to catch drips!). Bake until the biscuit topping is browned and the fruit is bubbling in the center, 50 to 60 minutes.
