2 1/2 cups raspberries and sliced strawberries
1/3 cup granulated sugar
1 heaping tablespoon cornstarch
1 teaspoon vanilla extract
1 1/2 sticks (12 tablespoons) salted butter, cut into small pieces, plus more for greasing the baking dish
2 cups all-purpose flour
2/3 cup oats
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup pecans
Dash of kosher salt
1 cup heavy cream
1 teaspoon granulated sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • For the berry mixture: In a medium bowl, combine the raspberries and strawberries, granulated sugar, cornstarch and vanilla. Stir and set aside.
  • For the crisp: Butter an 8-inch square baking dish. In a large bowl (or food processor), combine the butter pieces, flour, oats, granulated sugar, brown sugar, pecans and salt. Cut together with a pastry cutter (or pulse in the food processor) until the mixture resembles coarse crumbs.
  • Press half of the crisp mixture into the prepared baking dish. Top with the berry mixture, then sprinkle the remaining crisp over the top. Bake until the topping is golden brown, about 45 minutes. Allow to sit for 10 minutes before serving.
  • For the whipped cream: Add the cream and granulated sugar to the bowl of a mixer and whip until soft peaks form.
  • Scoop out the crisp with a spoon and top with sweetened whipped cream

5 ½ cups mixed frozen berries
¼ cup white sugar
2 tablespoons cornstarch
2 cups brown sugar
¾ cup unsalted butter, melted
1 tablespoon vanilla extract
½ cup all-purpose flour
1 teaspoon ground cinnamon
2 cups rolled oats

Steps:

  • Mix berries, white sugar, and cornstarch together lightly. Set aside.
  • Cream brown sugar, butter, and vanilla extract together in a separate bowl. Mix in flour and cinnamon. Stir in oats just until mixed. Chill topping for 15 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place berries in the bottom of a 9x9-inch baking pan. Place chilled topping on berries, pressing lightly.

3/4 cup old-fashioned oats
1/2 cup packed brown sugar

1/4 cup Gold Medal™ all-purpose flour

Steps:

  • Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.

2 cups blackberries
2 cups raspberries

Crisp topping:
1 cup rolled oats
1/2 cup all-purpose flour
1/2 cup brown sugar
1/2 cup sugar
Pinch of salt
1/2 cup (1 stick) cold unsalted butter, cut into small pieces
Whipped cream or vanilla ice cream, for serving

Steps:

  • 1. Preheat the oven to 350°F. Butter a 9-inch Pyrex pie plate.
  • 2. Gently combine the berries with the sugar, flour and cinnamon; place in the prepared pie plate.
  • 3. Prepare the topping: Combine the oats, flour, both sugars and salt in a bowl. Use a pastry blender or 2 knives to work in the butter until topping resembles coarse meal. Sprinkle evenly over the berries.
  • 4. Place the pie plate on a baking sheet. Bake in the center of the oven until the fruit is bubbling and the topping is golden brown, about 1 hour. Remove the crisp to a rack to cool slightly. Serve in dessert bowls with whipped cream or ice cream.

NORTHWEST MARIONBERRY PIE

6 cups fresh marionberries
¾ cup white sugar
6 tablespoons all-purpose flour
1 tablespoon lemon juice
1 (15 ounce) package pastry for a 9-inch double crust pie
2 teaspoons water, or as needed
2 teaspoons sugar, or to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Mix marionberries, 3/4 cup sugar, flour, and lemon juice together in a large bowl until well-combined.
  • Fit the bottom of a 9-inch pie plate with 1 pie crust. Pour in marionberry mixture. Cover with second crust; crimp edges to seal. Brush pie lightly with water. Sprinkle 2 teaspoons sugar on top. Cut four to eight 1-inch slits in the top crust with a knife.
  • Bake in the preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking until crust is golden, 45 to 50 minutes more. Let cool completely before serving, about 1 hour.

I don't tack the word ultimate onto just any recipe. This berry well may be my favorite summer dessert, with the perfect balance of sweet and tart, tender and crisp, fruit and crumble. Some ice cream on the side is highly recommended.

2 cups all-purpose flour
¼ teaspoon fine salt
¾ teaspoon baking powder
¾ cup white sugar
¾ cup frozen unsalted butter
1 ½ teaspoons vanilla extract
2 large egg yolks
1 teaspoon apple cider vinegar, or as needed
1 cup blueberries
1 cup raspberries
1 cup blackberries
1 teaspoon lemon zest
2 teaspoons fresh lemon juice
⅓ cup white sugar
2 teaspoons cornstarch
1 pinch cayenne pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine flour, salt, baking powder, and sugar in a bowl. Whisk until thoroughly combined. Grate in the frozen butter, stopping occasionally to toss the butter into the flour mixture until coated. Drizzle in vanilla extract; add egg yolks. Stir with a fork until egg is mostly absorbed. Add vinegar; mix briefly. Use your hands to finish mixing, squeezing until clumps but mixture remains mostly dry. Add 1 teaspoon vinegar if needed.
  • Combine blueberries, raspberries, and blackberries in another bowl. Add lemon zest, lemon juice, sugar, and cornstarch. Sprinkle in cayenne pepper. Mix until sugar and cornstarch are mostly dissolved.
  • Place about 1/2 of the crumble mixture into the bottom of a 2-quart baking dish. Press mixture down using a flat cup until well compacted. Spread the berries over the crust. Sprinkle the remaining crumble mixture on top, squeezing some of it into clumps.
  • Bake in the preheated oven until top is beautifully browned and berry syrup bubbles on the surface, 40 to 45 minutes. Let cool to room temperature, about 30 minutes.

Marionberry Cobbler is one of my favorite ways to use my favorite berry. If you don't have marionberries where you live, you can use blackberries.

1 stick butter
1-¼ cup sugar
1 cup self-rising flour (see notes for directions)
1 cup milk
2 cups berries (marionberries,raspberries or blueberries or a combination (frozen or fresh))

Steps:

  • Melt butter in a bowl in the microwave or stovetop
  • Pour 1 cup of sugar and flour into a mixing bowl, whisking in milk and mix well.
  • Pour in melted butter and whisk it all well together
  • Butter a 8 x 8 inch baking dish
  • Now rinse and pat dry the berries
  • Pour the batter into the buttered baking dish
  • Sprinkle berries over the top of the batter; distributing evenly
  • Sprinkle ¼ cup sugar over the top
  • Bake in the oven at 350 degrees F for 45- 60 minutes, or until golden and bubbly
  • If you desire, sprinkle an additional teaspoon of sugar over the cobbler 10 minutes before it's done.
