APPLE PIE I
This is my mother's apple pie. This is the recipe I use all the time and I love it. I also use a dash of nutmeg so if you wish you can put that in too.

Steps:
- Prepare your pastry for a two crust pie. Wipe, quarter, core, peel, and slice apples; measure to 6 cups.
- Combine sugar and cinnamon. The amount of sugar used depends on how tart your apples are.
- Arrange apples in layers in pastry lined pie plate. Sprinkle each layer with sugar and cinnamon. Dot top layer with small pieces of butter or margarine. Cover with top crust.
- Place on lowest rack in oven preheated to 450 degrees F (230 degrees C). Bake for 10 minutes, then reduce oven temperature to 350 degrees F (175 degrees C). Bake for 30 to 35 minutes longer. Serve warm or cold.

DRIED APPLE PIE
Another easy to make recipe (my favorite kind). I love good recipe, but I like them to be easy. Prep time includes standing time for apples and juice. All else can be mixed while waiting on the apples to stand in the juice.

Steps:
- Heat juice or cider to a boil and pour over dried apples; let stand for 1 hour.
- Cook apples in juice for 10 to 15 minutes or till tender.
- Stir remaining ingredients together.
- Add to apples and mix well.
- Put prepared pie crust in a 9-inch pie pan.
- Pour prepared apple mixture into crust.
- Top with 2nd crust.
- Brush with milk and sprinkle with sugar.
- Bake at 400° for 50 minutes or till done.
DRIED APPLE PIE
"During the hard winter of 1880 and 1881, the supply trains could not get through to De Smet until May. Then Pa bought white flour, sugar, dried apples and other badly needed supplies. The Ingalls family decided to invite Mr. and Mrs. Boast to have Christmas dinner in May. While Ma stewed the dried apples, Laura and Mary picked the stems from some dried raisins to put in the pie. Try adding some raisins to this old recipe for dried apple pie."

- Preheat oven to 350 degrees.
- Soak the dried apples in water overnight.
- Drain off the water and mix the apples with the sugar, cinnamon, and allspice.
- Line an 8-inch pan with one of the pie crusts and add the apple mixture.
- Dot with the butter and cover with the second crust.
- Slash the top of the pie for ventilation.
- Bake in the oven for about an hour, or until the crust turns golden brown.

EASY AS APPLE PIE
Steps:
- Place bottom crust in pan. Add apples, sprinkle with sugar and nutmeg. Top with butter, place top crust over and vent with a few holes poked in pastry top. Bake 375 degrees for one hour.

- Gather the ingredients. Heat the oven to its lowest setting, usually between 140 F and 150 F.
- In a nonreactive bowl, mix water and vinegar (or lemon juice ).
- Use a vegetable peeler to remove the skin off the apples.
- Core apples with an apple corer or slice each apple into quarters. Cut off tough center of each piece.
- Using a sharp knife, cut apples into 1/4-inch-thick slices. As you slice apples, drop pieces into prepared acidulated water to prevent browning. Let slices soak while you finish slicing remaining apples.
- Drain apple slices in a colander , letting them sit for 2 to 3 minutes to drain off as much water as possible. If apple pieces are too moist, they will steam instead of dry in oven. To remove excess moisture, place slices on top of a clean kitchen towel and pat dry with a paper towel.
- Place cooling racks inside baking sheets and arrange apples on racks so slices are not touching.
- Place baking sheets in the oven. If you don't have a convection oven, prop oven door open with the handle of a wooden spoon to let steam and moisture escape. Let apples dry until they are a leathery or crispy texture, depending on your preference; this can take anywhere from 6 to 10 hours. If your oven is hotter in some spots than others, turn baking sheets around occasionally so that pieces dry evenly. Once apples have the desired texture, remove from the oven. You won't be completely sure if the apple pieces are fully dehydrated until they have cooled. Let apples cool on trays for 20 minutes.
- After 20 minutes, tear a piece of the fruit in half. There should be no visible moisture along the surface of the break. If the apple is still soft, return to oven for a bit longer. Start with 30 minutes and check for moisture again.

- Preheat oven to 425 degrees F (220 degrees C).
- In a bowl combine apples, sugar, flour, cinnamon, nutmeg and salt. Place mixture in a pastry-lined 9 inch pie plate. Dot with butter and adjust top crust that has been vented.

- Turn out 1 piece of dough onto a lightly floured work surface. Roll into a 13-inch round, about 1/8 inch thick. Fit into 9-inch pie plate. Trim edges flush with rim. Freeze until firm, about 30 minutes.
- Roll out remaining dough on parchment paper to a 13-inch round, about 1/8 inch thick. Transfer to a baking sheet; refrigerate until firm, about 30 minutes.
- Preheat oven to 400 degrees. Whisk egg yolk and cream in a small bowl; set egg wash aside. Put apples, lemon juice, granulated sugar, flour, cinnamon, nutmeg, and salt in a large bowl; toss to combine. Fill pie shell with apple mixture, and dot with butter. Lightly brush edge of pie with a wet pastry brush. Place dough round on top of pie. Trim edges flush with rim; press to seal. Crimp edges as desired. Make four 1/2-inch slits in center of pie. Brush top with egg wash; sprinkle with sanding sugar. Freeze 30 minutes.
- Place pie on a baking sheet. Bake until crust begins to turn golden brown, about 20 minutes. Reduce oven temperature to 350 degrees. Bake until crust is golden brown and juices are bubbling, about 35 minutes. Cover with foil if browning too quickly. Let cool completely on a rack.
