This easy Moroccan lamb tagine is a great recipe for using up storecupboard spices - cumin, ginger, coriander and cinnamon. It's low in calories too.

400g lamb leg steaks
2 tbsp olive oil
1 onion
2 garlic cloves
2 tsp ground coriander
2 tsp cumin
1 tsp ground ginger
Pinch of cinnamon
400g can chopped tomatoes

100g pitted prunes
1 tbsp ground almonds
A handful chopped fresh coriander

Steps:

  • Brown 400g lamb leg steaks, cubed, in 2 tbsp olive oil in a pan. Set aside. Add 1 onion, sliced, and 2 garlic cloves, chopped, to the pan and fry for 5 minutes.
  • Add 2 tsp each ground coriander and cumin, 1 tsp ground ginger and a pinch of cinnamon, and fry for 2 minutes.
  • Add the lamb and a 400g can chopped tomatoes and 200ml chicken stock. Add 100g pitted prunes, chopped. Simmer for 40-45 minutes.
  • Stir in 1 tbsp ground almonds and a handful chopped fresh coriander. Serve with herby couscous.

Number Of Ingredients 15

2 tbsp olive oil
1 onion, finely diced
2 carrots, finely diced (about 150g)
500g diced leg of lamb
2 fat cloves garlic, crushed
½ tsp cumin
½ tsp ground ginger
¼ tsp saffron strands
1 tsp ground cinnamon
1 tbsp clear honey
100g soft dried apricot, quartered
1 low-salt vegetable stock cube
1 small butternut squash, peeled, seeds removed and cut into 1cm dice
steamed couscous or rice, to serve
chopped parsley and toasted pine nuts, to serve (optional)

Steps:

  • Heat the olive oil in a heavy-based pan and add the onion and carrot. Cook for 3- 4 mins until softened.
  • Add the diced lamb and brown all over. Stir in the garlic and all the spices and cook for a few mins more or until the aromas are released.
  • Add the honey and apricots, crumble in the stock cube and pour over roughly 500ml boiling water or enough to cover the meat. Give it a good stir and bring to the boil. Turn down to a simmer, put the lid on and cook for 1 hour.
  • Remove the lid and cook for a further 30 mins, then stir in the squash. Cook for 20 - 30 mins more until the squash is soft and the lamb is tender. Serve alongside rice or couscous and sprinkle with parsley and pine nuts, if using.

olive oil
1kg lamb neck fillet, cut into chunks
2 onions, halved and thinly sliced
3cm piece ginger, finely grated
1 tbsp tomato purée
350ml chicken stock
10 cherry tomatoes
1 stick cinnamon
10 ready-to-eat dates, halved
10 green olives, cracked and halved
buttered couscous and coriander to serve
a bunch coriander, finely chopped
2 tsp hot smoked paprika
2 tsp ground cumin
2 tsp ground coriander
2 lemons, juiced
2 cloves garlic, crushed

Steps:

  • Mix the marinade ingredients with 1 tbsp olive oil, season and toss with the lamb. Cover with clingfilm and chill for at least 2 hours (or overnight).
  • Heat the oven to 160C/fan 140C/gas 3. Heat a splash of olive oil in a pan and cook the onion until really soft and golden. Add the ginger and cook for a minute then tip in the lamb and all of its marinade. Cook, turning the lamb around in the onions and spices for about 5 minutes.
  • Add the tomato purée, stock, tomatoes, cinnamon, dates and olives. Bring to a simmer then put on a lid and cook for 2 hours. To freeze, cool completely and spoon into freezer-proof tubs or bags. Defrost before reheating thoroughly. Serve with couscous and scatter with coriander leaves.

1 Tablespoon (6 g) of cinnamon powder
1 Tablespoon (6 g) of turmeric powder
1 Tablespoon (6 g) of ginger powder
1 Tablespoon (6 g) of paprika
1 medium onion, peeled and diced
4 Tablespoons (60 ml) of olive oil
1 can of diced tomatoes (400 g)
1/4 cup (40 g) whole almonds
3 cups (720 ml) of chicken broth
1/4 cup of fresh cilantro (4 g), chopped
1/4 cup of fresh parsley (4 g), chopped
3 cloves of garlic (9 g), peeled and minced
Salt and pepper, to taste

Steps:

  • Toss the lamb with salt and pepper and all the dry spices.
  • Add olive oil to a large pot and brown the lamb and onions.
  • Add in the tomatoes, almonds, and broth. Bring to a boil and then reduce the heat to low and cook for 2 hours with the lid on.
  • Season with additional salt and pepper, to taste, and sprinkle with the chopped herbs for garnish.

1 pound boneless lamb shoulder, trimmed of excess fat and cut into 1-inch cubes
2 tablespoons all-purpose flour
Coarse salt and ground pepper
1 tablespoon olive oil
2 garlic cloves, chopped
2 tablespoons tomato paste
2 cinnamon sticks
2 pounds butternut squash, peeled, seeded, and cut into 1-inch chunks
1/2 cup pitted dried plums (prunes)
1/2 cup fresh cilantro leaves
1 cup whole-wheat couscous, prepared according to package instructions

Steps:

  • Preheat oven to 350 degrees. In a large bowl, toss lamb with flour; season with salt and pepper. In a Dutch oven or other large, heavy-bottomed saucepan (at least 5 quarts), heat oil over medium-high. In two batches, cook lamb until browned on all sides, about 5 minutes per batch; transfer to a plate.
  • Reduce heat to medium, add onion, garlic, and tomato paste to pot; season with salt and pepper. Cook, stirring frequently, until onion has softened, 3 to 5 minutes. Add cinnamon sticks, 4 cups water, and reserved lamb (with any juices that have accumulated); bring to a boil.
  • Cover pot and transfer to oven; cook until lamb is just tender, about 1 1/2 hours. Add squash, return to oven, and cook until squash is tender, about 30 minutes more. Remove cinnamon sticks, stir in dried plums, and season with salt and pepper. Serve with cilantro and couscous.

3/4 teaspoon freshly ground black pepper, plus more

  • Combine broth and pomegranate juice in a large heavy pot, Dutch oven, or tagine. Whisk in coriander, cumin, paprika, cinnamon, ginger, 1 3/4 tsp. salt, and 3/4 tsp. pepper. Add lamb, onion, and garlic, toss to coat, and gently simmer over low to medium-low heat, mostly covered, until lamb is fork-tender, about 1 1/2 hours. Uncover, increase heat to medium, and continue to cook until juices are thickened, about 15 minutes more; taste and adjust seasonings.
  • Transfer lamb mixture along with any accumulated juices to a serving dish. Top with parsley or cilantro, pomegranate arils, and mint.

  • Tagine can be made 3 days ahead; cover and chill. Rewarm before serving.

2 pounds lamb meat, cut into 1 1/2 inch cubes
2 teaspoons paprika
¼ teaspoon ground turmeric
½ teaspoon ground cumin

¼ teaspoon ground cloves
½ teaspoon ground cardamom
1 teaspoon kosher salt

1 pinch saffron
¾ teaspoon garlic powder

2 medium onions, cut into 1-inch cubes
5 carrots, peeled, cut into fourths, then sliced lengthwise into thin strips
3 cloves garlic, minced
1 tablespoon freshly grated ginger
1 lemon, zested
1 (14.5 ounce) can homemade chicken broth or low-sodium canned broth
1 tablespoon sun-dried tomato paste
1 tablespoon honey
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Place diced lamb in a bowl, toss with 2 tablespoons of the olive oil, and set aside. In a large resealable bag, toss together the paprika, turmeric, cumin, cayenne, cinnamon, cloves, cardamom, salt, ginger, saffron, garlic powder, and coriander; mix well. Add the lamb to the bag, and toss around to coat well. Refrigerate at least 8 hours, preferably overnight.
  • Heat 1 tablespoon of olive oil in a large, heavy bottomed pot over medium-high heat. Add 1/3 of the lamb, and brown well. Remove to a plate, and repeat with remaining lamb. Add onions and carrots to the pot and cook for 5 minutes. Stir in the fresh garlic and ginger; continue cooking for an additional 5 minutes. Return the lamb to the pot and stir in the lemon zest, chicken broth, tomato paste, and honey. Bring to a boil, then reduce heat to low, cover, and simmer for 1 1/2 to 2 hours, stirring occasionally, until the meat is tender.
  • If the consistency of the tagine is too thin, you may thicken it with a mixture of cornstarch and water during the last 5 minutes.
