HAM AND EGG FRITTATA
Great for breakfast, lunch, or dinner! Feel free to experiment with this original recipe by me. Yummy sauteed meat, potatoes, veggies, with eggs. Ingredient measures are approximate. I had to guess how much I used as I put things in as I went. Love an ingredient, ADD MORE! Don't like one much, ADD LESS! Very versatile recipe.

Steps:
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Beat eggs and milk in a bowl.
- Melt butter in a large, oven-safe skillet over medium heat; cook and stir potatoes, ham, onion, and garlic in melted butter until potatoes are tender, about 15 minutes. Add water if vegetables become dry. Season with salt and pepper.
- Pour egg mixture over vegetable mixture. Cook, without stirring, until eggs are slightly browned on the bottom.
- Broil in the preheated oven until eggs are nearly set, about 5 minutes. Sprinkle Cheddar cheese over eggs and continue broiling until frittata is completely set and cheese is melted, about 5 minutes more.

- Preheat oven to 425°. In a large bowl, combine biscuit mix, cheese, ham and 1/2 teaspoon pepper. Add milk; mix just until moistened., Turn onto a lightly floured surface; knead gently 8-10 times. Pat or roll dough to 1-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place 2 in. apart on an ungreased baking sheet. Brush with melted butter; sprinkle with remaining pepper. Bake 12-14 minutes or until golden brown., Meanwhile, for eggs, in a bowl, whisk eggs, milk, pepper and salt. In a large nonstick skillet, heat butter over medium heat. Pour in egg mixture; cook and stir until eggs are thickened and no liquid egg remains. Stir in cheese; remove from heat., Split warm biscuits in half. Layer bottoms with egg mixture and toppings as desired. Replace tops.

Steps:
- Bake biscuits as directed on can.
- In medium bowl, combine beaten eggs, ham, parsley and milk and mix well.
- Melt butter over medium heat and add egg mixture.
- Cook for 6 to 10 minutes or until egg mixture is set, stirring and turning occasionally.
- Stir in cheese.
- Split biscuits and spoon egg mixture evenly onto bottom halves.
- Cover with top halves.

HAM AND EGG BISCUIT PIZZAS

- In a large skillet cook the bell peppers and the onion in the butter over moderate heat, stirring, until the vegetables are softened, stir in the ham, and remove the skillet from the heat. The bell pepper mixture may be made 1 day in advance and kept covered and chilled.
- Make the biscuit dough:
- In a bowl whisk together the flour, the baking powder, and the salt, add the butter, and blend the mixture until it resembles coarse meal. Add the milk and stir the mixture until it just forms a dough. Gather the dough into a ball, on a lightly floured surface knead it gently 6 times, and cut it into 6 equal pieces. Roll each piece of dough into a 7-inch round, for a 1/2-inch-high rim on each round by turning in the edge of the dough and pinching it until the shell measures 5 inches, and transfer the shells to a buttered large baking sheet.
- Divide the Münster among the shells and top it with the bell pepper mixture, making a well in the center. Crack and drop an egg carefully into the well of each shell. Bake the pizzas in the middle of a preheated 425°F. oven for 12 to 15 minutes, or until the egg yolks are just set, and garnish them with the watercress.

HAM, EGG CHEESE BISCUITS
I was looking for a recipe to make a portable breakfast the night before. This keeps us from needing to buy breakfast out. I've tested this recipe a few times and the nice thing is how quick and easy it is. It is great for lots of company, or to pack up and take away the next morning. The general idea is 1 egg per two biscuits. Sprinkle the other stuff evenly over the top, so your proportions can vary to your tastes or ingredients available. I liked hard cooked eggs (nothing slimy). I enjoy these eggs very much.

- Spray a glass pan with cooking spray.
- Split the flaky layer biscuits in half. If you use two cans, just put one can on the bottom, one can on the top.
- Soft scramble the eggs. (they will finish cooking hard enough in the oven).
- Evenly spread eggs over layer of biscuits.
- Evenly spread diced ham and shredded cheese on top.
- Split second can of flaky layer biscuits and place on top.
- Bake at 325 until biscuits are done. Takes approximately 20-25 minutes, but I start checking them at 15.

- Make the biscuits:
- Into a bowl sift together the flour, the baking powder, and a pinch of salt, add the butter, and blend the mixture until it resembles coarse meal. Stir in the Cheddar and add the milk, stirring, to form a soft sticky dough. On a floured surface pat the dough out into a 6-inch square and cut out 4 rounds with a 2 3/4-inch round cutter dipped in flour. Put 2 of the rounds on top of the remaining 2 rounds, press them together gently, and bake the biscuits on a buttered baking sheet in the middle of a preheated 425°F. oven for 15 minutes, or until they are pale golden (Makes 2 large biscuits).
- Making ham and eggs:
- While the biscuits are baking, in a large skillet heat the butter over moderate heat, swirling the skillet, until it just begins to turn golden brown, slide the eggs carefully into the skillet, and cook them, basting them with the butter, until the yolks are just set and the whites are slightly crisp around the edges. Halve the biscuits horizontally, arrange a ham slice, folding it, on each lower half, and top it with an egg. Drizzle the butter over the eggs, sprinkle the eggs with the scallion, and top them with the upper biscuit halves. Serve the sandwiches hot.
HAM AND CHEESE BUTTERMILK BISCUITS
They are wonderfully tender, flavorful buttermilk biscuits, and so deliciously easy to whip up! They are also incredibly versatile. You can use pretty much any type of cheese you'd like in these - since the cheese offers the main flavor, if you have a bunch of something else besides pepper Jack you'd like to use up, feel free to change it up however you'd like.

- Preheat the oven to 400 degrees F (200 degrees C).
- Combine flour, baking powder, salt, baking soda, and garlic powder in a bowl. Whisk to combine.
- Dice the cold butter up into chunks, and cut it into the dry mixture with your fingers, a fork, or a pastry cutter, until the mixture resembles coarse sand, and butter is well blended in. Stir in cheese and ham, gently stirring to evenly coat all the cheese and ham pieces with the flour mixture.
- Use a fork and stir in 1 cup buttermilk. If the mixture is still dry, add a little more liquid at a time until the dough just comes together (it should be a little bit sticky, but not "wet").
- Shape dough into a ball by hand, handling the dough gently. Then pat the dough out on a lightly floured surface to 1/2- to 3/4-inch thickness. Use a small biscuit cutter to cut 12 to 15 biscuits out, and arrange them on a baking sheet with sides just barely touching.
- Bake in the preheated oven until just golden brown around the edges/tops/bottoms and cooked through in the center, 12 to 15 minutes.
- Cool briefly on the baking sheet before moving to a platter or cooling rack. Best served warm!
