1 medium onion, coarsely chopped
1/4 lb small mushroom
1 tablespoon olive oil
3 garlic cloves, minced
1 pint cherry tomatoes
1 cup tomato sauce
1 tablespoon tomato paste
1 teaspoon basil
1/2 teaspoon thyme
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 lb fettuccine
1 small yellow squash
1/2 lb scallops (bay or sea)
1/3 cup sour cream

Steps:

  • Bring a large pot of water to a boil.
  • If mushrooms are small,leave them whole; otherwise, half or quarter them; set aside.
  • Halve the squash lengthwise, then cut crosswise into 1/4-inch half rounds; set aside.
  • In a large skillet warm the olive oil over medium-high heat until hot but not smoking. Add the onion and garlic and cook until the mixture begins to brown, about 5 minutes.
  • Add the mushrooms,cherry tomatoes, tomato sauce, tomato paste, basil, thyme, salt and pepper and bring the mixture to a boil. Reduce the heat to low, cover and simmer for about 30 minutes.
  • Add the pasta to the boiling water and cook until al dente, 8 to 10 minutes.
  • Return the sauce to a boil over medium high-heat. Add the squash scallops and sour cream, and return to a slow boil. Cook, stirring, until the scallops are cooked through and the sauce has thickened slightly, about 4 minutes.
  • Drain the pasta and served topped with scallops and sauce.

1 pound farfalle, penne or fusilli pasta
1/4 cup extra virgin olive oil
1 pound small squash such as zucchini or yellow squash, sliced thinly
1/4 teaspoon red pepper flakes
salt to taste
1/4 cup freshly grated Parmagiano-Reggiano cheese
4 large basil leaves, washed, patted dry and chopped

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook uncovered over high heat.
  • While pasta is cooking, heat olive oil in a large saute pan over medium heat. Add the squash, red pepper and salt. Cook stirring occasionally until squash is starting to soften about 8 minutes.
  • When pasta is cooked to just under al dente reserve 1/2 cup of the pasta cooking water, then drain the pasta.
  • Add the pasta, Parmagiano-Reggiano cheese, half of the chopped basil and the reserved cooking water to the pan with the squash, and stir together over the heat until well combined.
  • Transfer the pasta to serving plates. Sprinkle with remaining basil and serve.

3 1/2 tablespoons butter
1 1/2 cups fresh white breadcrumbs
3 tablespoons plus 1 cup chopped fresh basil
4 teaspoons chopped fresh thyme
1 pound mussels, scrubbed, debearded
1 cup water
3 tablespoons extra-virgin olive oil
1 zucchini, halved lengthwise, slice crosswise
1 yellow summer squash, halved lengthwise, sliced crosswise
1 red bell pepper, cut into matchstick-size strips
4 garlic cloves, minced
8 ounces uncooked large shrimp, peeled, deveined
8 ounces sea scallops
1 pound fettuccine

Steps:

  • Melt 1 1/2 tablespoons butter in large nonstick skillet over medium-high heat. Add breadcrumbs; sauté until golden, about 5 minutes. Mix in 3 tablespoons basil and thyme. Remove from heat.
  • Combine mussels and 1 cup water in large pot. Cover; boil until mussels open, about 7 minutes (discard any mussels that do not open). Using tongs, transfer mussels to bowl. Tent with foil. Strain cooking liquid into small bowl.
  • Heat 1 tablespoon oil in large nonstick skillet over medium-high heat. Add vegetables and sauté until crisp-tender, about 5 minutes. Transfer to bowl. Melt 2 tablespoons butter with 2 tablespoons oil in same skillet. Add garlic; sauté 30 seconds. Add shrimp, scallops and 1/2 cup basil and sauté 3 minutes. Add mussel cooking liquid; simmer until shellfish are cook through, about 3 minutes. Add vegetables; stir to heat through.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain.
  • Pour vegetables and shellfish over pasta; toss to coat. Season with salt and pepper. Sprinkle with 1/2 cup basil. Top with mussels and breadcrumbs.

1 pound dry fettuccine pasta
¼ cup olive oil
3 cloves garlic, minced
2 zucchinis, diced
½ teaspoon salt
½ teaspoon crushed red pepper flakes
1 cup chopped fresh basil
4 roma (plum) tomatoes, chopped
1 pound bay scallops
2 tablespoons grated Parmesan cheese

Steps:

  • In a large pot with boiling salted water cook pasta until al dente. Drain.
  • Meanwhile, in a large skillet heat oil, add garlic and cook until tender. Add the zucchini, salt, red pepper flakes, dried basil (if using) and saute for 10 minutes. Add chopped tomatoes, bay scallops, and fresh basil (if using) and simmer for 5 minutes, or until scallops are opaque.
  • Pour sauce over cooked pasta and serve with grated Parmesan cheese.

4 ounces uncooked fettuccine
1 tablespoon olive oil
1/2 medium sweet red pepper, julienned
1 garlic clove, minced
1/2 teaspoon grated lemon zest
1/4 teaspoon crushed red pepper flakes
1/2 cup reduced-sodium chicken broth
1/4 cup white wine or additional broth
1 tablespoon lemon juice
6 sea scallops (about 3/4 pound)
2 teaspoons grated Parmesan cheese

Steps:

  • Cook fettuccine according to package directions; drain., Meanwhile, in a large skillet, heat oil over medium-high heat. Add red pepper, garlic, lemon zest and pepper flakes; cook and stir 2 minutes. Stir in broth, wine and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, 5-6 minutes or until liquid is reduced by half., Cut each scallop horizontally in half; add to skillet. Cook, covered, 4-5 minutes or until scallops are firm and opaque, stirring occasionally. Serve with fettuccine. Sprinkle with cheese.

6 ounces spaghetti squash, cooked
8 ounces sea scallops
2 teaspoons seasoned rice flour
2 tablespoons fresh lemon juice
3 ounces crushed tomatoes
1 teaspoon olive oil
1 teaspoon garlic, minced
1 teaspoon fresh basil, chiffiande
to taste kosher salt
to taste black pepper
garnish with pecorino romano cheese, grated

Steps:

  • preheat oven to 425 degrees. cut squash in half the long way. place squash, flat side down, on a pan sprayed sheet pan with kosher salt. Add 1/2 cup water and place in over for 40-50 minutes.
  • create sauce by heating olive oil in sauce pot, until just smoking, add garlic and "toast", saute until golden brown.
  • add crushed tomatoes and simmer around 10-15 minutes. season with salt, pepper and fresh basil.
  • Pan sear seasoned rice flour dusted, scallops in a pan with scant amount of oil. Sear for approx, 1 minute on each side.
  • Deglaze wtih 2 T of lemon juice.
  • Remove from pan and add 1/2 cup tomato sacue to pull flavors from pan. add back into the sauce pot of tomato sauce.
  • Remove squash from oven. allow to cool until you are able to handle. using a fork scrap spaghetti squash into a bowl. fluff by using two forks, by pulling apart strands.
  • reheat by sauteing breifly in a heated pan.
  • to plate you will place a nest of squash in the center of the plate. place 6 scallops falling off the nest and top with 1/2 cup or so of tomato basil sauce.
  • sprinkle with fresh grated cheese, optional.
