Apricot-Fig Trifle With Caramel Sauce image

Provided by Molly O'Neill

Categories     brunch, dessert

Time 3h45m

Yield Eight servings

Number Of Ingredients 13

1/4 cup plus 1 1/2 teaspoons cornstarch
1/2 cup sugar
1/4 teaspoon kosher salt
3 cups whole milk
1 1/2 teaspoons vanilla extract
4 1/2 teaspoons unsalted butter
2/3 cup dried apricots, quartered
2/3 cup dried figs, quartered
8 thin slices pound cake (about 1/8 inch)
2 tablespoons dark rum
2/3 cup sugar
3 tablespoons water
1/2 cup heavy cream

Steps:

  • To make the pudding, combine the cornstarch, sugar and salt in a medium saucepan and slowly stir in just enough milk to make a thick paste. Gradually stir in the remaining milk. Cook over medium-low heat, stirring constantly, until thick, about 20 minutes. Remove from heat and stir in the vanilla and butter. Pour into a bowl, cover with plastic wrap and refrigerate until cold.
  • Place the apricots and figs in a small bowl and cover with boiling water. Let stand for 20 minutes; drain.
  • Meanwhile, to make the caramel sauce, combine the sugar and water in a medium saucepan. Use a pastry brush dipped in water to wash down any sugar crystals on the side of the pan. Cook over medium-low heat, without stirring, until the sugar is melted and turns a light amber color. Remove the caramel from the heat and carefully stir in the cream. Return to the heat and stir until the caramel is dissolved.
  • To assemble, place 4 slices of pound cake in the bottom of an 8-inch square glass baking dish. Brush the cake with 1 tablespoon of rum and drizzle with 1/3 of the sauce. Scatter half of the fruit over the cake. Spread with half of the pudding. Make another layer with the remaining cake, rum, 1/3 of the sauce and the remaining fruit and pudding.
  • Drizzle the remaining caramel sauce over the top and refrigerate until cold, at least 3 hours. Cut the trifle into 8 squares and serve.

APRICOT CRèME BRûLéE TART

Apricot crème brûlée tart image

A fresh, fruity and creamy dessert

Provided by Barney Desmazery

Categories     Buffet, Dessert, Dinner

Time 3h

Yield Cuts into 10 slices

Number Of Ingredients 11

140g butter
100g golden caster sugar
250g plain flour
25g ground almond
1 egg , beaten
250g pack ready-to-eat dried apricot
175ml sweet dessert wine , such as Sauternes (one small glass)
100g golden caster sugar , plus 4 tbsp to top brûlee
1 vanilla pod , split and seeds scraped
284ml carton double cream
4 eggs

Steps:

  • For the pastry, beat the butter and sugar together until pale, mix in flour and almonds then stir in the egg until the pastry just comes together. Shape into a ball, wrap in cling film and chill for at least 30 mins.
  • While the pastry is chilling, make the filling. Tip the apricots into a bowl. Bring the wine and the sugar to a rolling boil, then pour over the apricots and leave to steep in the liquid. In the same saucepan (there's no need to wash it) bring the vanilla and cream to the boil. Turn off the heat and leave the cream to infuse.
  • Heat oven to 220C/fan 200C/gas 7. Roll the pastry to fit a 23cm fluted tart tin and leave it to chill in the freezer for 10 mins. Line the tart case with foil or greaseproof paper and fill the tart with baking beans. Bake the tart for 20 mins until the edges become biscuity, then remove the beans and foil or greaseproof paper and cook for a few more mins until the base starts to brown. Remove the tart from the oven and lower the heat to 160C/fan 140C/gas 3.
  • While the tart case is cooking, whisk the eggs in a large bowl. Strain the vanilla cream over the eggs and whisk, then drain the apricots and mix the liquid in with the vanilla cream and the eggs to make a custard. Pull the apricots apart and press them sticky side down into the tart case. Pour the custard over the apricots and bake for about 20-30 mins until the filling is just set. Remove the tart from the oven and leave to cool. To serve, scatter the remaining sugar over the tart and blast with a blowtorch to caramelise it, leave it to harden for a minute and cut into slices and serve. As there are so many lovely flavours in the tart already it needs no accompaniment

APRICOT-RASPBERRY FRANGIPANE TART

Apricot-Raspberry Frangipane Tart image

A custardy almond filling is studded with jewel-like fresh apricots and raspberries in this showstopping tart. It's best eaten the day it's made.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Pie & Tarts Recipes

Time 4h10m

Yield Makes one 10-inch tart; Serves 8 to 10

Number Of Ingredients 17

1 large egg yolk
2 tablespoons ice water
1 1/4 cups all-purpose flour
4 1/2 teaspoons sugar
Large pinch of fine salt
1 stick cold unsalted butter, cut into small pieces
7 ounces almond paste (3/4 cup packed)
1/4 cup sugar
1/4 teaspoon fine salt
1 stick unsalted butter, lightly softened
2 large eggs
1 teaspoon pure vanilla extract
1/3 cup cake flour (not self-rising)
4 small fresh apricots, quartered, or 8 apricot halves (in juice), each halved and drained on paper towels
1 cup raspberries (20 to 25)
2 tablespoons apricot preserves
1 tablespoon water

Steps:

  • Make the pate sucree: Lightly beat together egg yolk and ice water in a small bowl until combined.
  • Pulse flour, sugar, and salt in food processor until combined. Add butter; process until mixture resembles coarse meal, about 20 seconds. With machine running, add yolk mixture in a slow, steady stream. Process until mixture just begins to hold together (no longer than 30 seconds).
  • Shape dough into a disk, and wrap in plastic wrap. Refrigerate until firm, at least 30 minutes and up to overnight.
  • Preheat oven to 375 degrees. Roll out dough to a 13-inch circle, about 1/8 inch thick. Fit into a 10-inch fluted tart pan with a removable bottom, folding excess dough into side of pan. Press dough into pan, making sure side is of an even thickness and dough comes up slightly over edge. Trim dough flush with top. Patch any holes or gaps in dough with extra dough if necessary. Using your thumb, press around edge of dough in pan so that dough extends just slightly above rim of pan (to help minimize shrinkage). Prick bottom with fork, and freeze until completely firm, 20 minutes.
  • Place pan on a rimmed baking sheet, and line tart shell with parchment, pressing parchment deep into corners of pan so it is flush with dough, leaving 3 inches overhang; fold overhang over dough edge so that it is not exposed. Fill with pie weights or dried beans, and bake until edge begins to turn golden, about 30 minutes, rotating halfway through. Remove weights and parchment.
  • Reduce temperature to 325 degrees. Tent edge with foil, and bake until golden brown, 25 to 30 minutes, rotating halfway through. Let cool on a wire rack 30 minutes. Raise oven temperature to 375 degrees.
  • Make the filling: Meanwhile, beat together almond paste, sugar, and salt with a mixer on medium speed until combined and mixture forms small clumps. Beat in butter on high speed until light and fluffy, about 2 minutes. Beat in eggs, 1 at a time, then vanilla. Scrape down bowl, and beat in flour until just combined.
  • Return tart shell to baking sheet. Spread frangipane into cooled tart shell, top with apricots, and scatter with raspberries. Tent edges with foil. Bake until frangipane is puffed and golden and a toothpick inserted into center comes out clean, about 45 minutes, rotating halfway through. Let cool 15 minutes.
  • To finish: Heat preserves and water in a small saucepan over medium heat, stirring often, until preserves are melted. Pour through a fine sieve into a small bowl, and lightly brush tart with strained preserves. Let tart cool completely.

HOMEMADE RASPBERRY APRICOT JAM

Homemade Raspberry Apricot Jam image

Tart apricots temper raspberry's richness, enhancing the flavor of each. This jam is sure to become a family favorite.

Provided by Renee Pottle

Categories     Preserves

Time 1h5m

Yield 7 half-pints

Number Of Ingredients 3

7 cups raspberries
2 cups chopped apricots
6 cups sugar

Steps:

  • Add the apricots, raspberries, and sugar to a large Dutch oven.
  • TIP: At this point rub some butter around the top of the Dutch oven. The fat (butter) keeps the jam from boiling over. Boiled over jam is a real mess!
  • Slowly bring the mixture to a boil over medium heat (it took me about 30 minutes to get to this point), stirring until the sugar is dissolved.
  • Turn the heat up a little and cook rapidly (stirring often to prevent sticking) until the jam reaches the gelling point. For me this took about 17 more minutes.
  • TIP: Watch out for spitting. The closer the jam gets to the gelling point, the further it will spit - and it's hot!
  • Use the plate method to check for gelling or use a digital thermometer. Gelling is reached at 220 degrees or 8 degrees above the boiling point of water.
  • Spoon the hot jam into prepared jars, leaving ¼ inch headspace.
  • Wipe the lip of each jar with a damp paper towel, top the jars with a lid and a lid ring.
  • Process the jars in a water bath canner for 15 minutes. Remove and let cool completely.
