1/2 cup Lavender Honey
4 large egg yolks
2 pinches salt
1 cup heavy cream
20 fresh figs (black, green, or both), halved lengthwise or quartered if large
1 pint raspberries (about 2 1/2 cups)
Crinkled Lace Cookies, for serving

Steps:

  • Whisk honey, egg yolks, and salt in a large heatproof bowl set over a pan of simmering water until pale and thick, 3 to 5 minutes. Cool slightly. Whip cream to soft peaks. Whisk into honey mixture. Serve with figs and berries.

For crust:
1 1/4 cups all-purpose flour
1/4 cup sugar
1/2 teaspoon salt
7 tablespoons cold unsalted butter, cut into 1/2-inch cubes
1 large egg
For filling:
4 oz cream cheese, softened
1/4 cup crème frache
3 1/2 tablespoons lavender honey
4 cups raspberries (18 ounces)
Special Equipment
9-inch fluted round tart pan (1 inch deep) with a removable bottom; heavy-duty foil; pie weights or raw rice
Accompaniment: warm lavender honey

Steps:

  • Make crust:
  • Pulse together all crust ingredients in a food processor just until mixture resembles coarse crumbs. Put tart pan on a baking sheet and press dough evenly onto bottom and up side of tart pan with your fingertips. Chill shell, covered, on baking sheet until firm, about 30 minutes.
  • Put oven rack in middle position and preheat oven to 350°F. Line shell with a buttered sheet of heavy-duty foil (buttered side down) and fill shell one third of the way up with pie weights.
  • Bake (on sheet) until edge is pale golden, 20 to 25 minutes. Carefully remove pie weights and foil, then bake until edge and bottom are golden, about 20 minutes more. Cool completely in pan on a rack.
  • Make filling:
  • Beat cream cheese in a bowl with a handheld electric mixer at high speed until smooth, then add crème frache and 1 1/2 tablespoons honey and beat until combined well. Spread filling evenly in shell, then top with raspberries. Heat remaining 2 tablespoons honey in a very small saucepan over moderately low heat, stirring constantly, until liquefied, then drizzle over raspberries. Serve with additional melted honey on the side.

10 fresh figs (about 1 pound), halved lengthwise
6 dried figs, thinly sliced
1 cup fresh raspberries
1/2 cup all-purpose flour
2 1/4 cups heavy cream
1/2 cup sugar
3 eggs
Pinch salt
1/3 cup sliced almonds
2 teaspoons confectioners' sugar
1/4 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F. Arrange the fresh figs, cut side up, in a buttered 2-quart baking or gratin dish. Sprinkle the dried figs and raspberries around and on top of the fresh figs. Set aside. In a blender or food processor, combine the flour, 1 1/4 cups of the cream, the sugar, eggs, and salt. Process until well-mixed, about 30 seconds. Pour the batter over the fruit. Sprinkle the top with the sliced almonds. Bake in the middle of the oven until the top is golden and the batter is slightly firm to the touch, 25 to 30 minutes. Transfer the pan to a rack and let it cool for 15 minutes. In the meantime, combine the remaining 1-cup cream with the confectioners' sugar and the vanilla, and whip until soft peaks form. Spoon the clafoutis onto individual plates, and serve with whipped cream.

Nothing is better on a bagel that a thick layer of this fruity shmear. I like mine a bit chunky so that you get random bursts of tangy raspberry flavor mixed in with the cream cheese and sweet honey. If you prefer it smoother, place all ingredients into a mini food chopper or processor and blend until desired consistency. If you like things a little sweeter, add another tablespoon of honey.

1 teaspoon grated lemon zest
2 teaspoons dried lavender blossoms
8 fresh figs, cut in half lengthwise
1 tablespoon fresh lemon juice
1/4 cup heavy whipping cream

Steps:

  • Combine honey, lemon zest, and lavender in small saucepan and bring to a gentle simmer.
  • Continue simmering for 1-2 minutes stirring occasionally.
  • Remove from heat and let stand for 10-15 minutes.
  • Meanwhile arrange fig halves in a cake pan or on a baking sheet and broil, 4-6 inches from the flame, for 5-8 minutes or until they are bubbling and just slightly brown on top.
  • Strain honey mixture into a small bowl and add the lemon juice.
  • Pour heavy cream into a medium bowl and whisk until just slightly thickened.
  • The cream should still be runny--you don't want to make whipped cream.
  • Place approximately 1 tablespoon of the cream in the center of each dessert plate, arrange four fig halves on top of the cream and spoon the strained honey mixture over them.
  • Garnish with fresh mint if desired.

1 tablespoon dried lavender
1 tablespoon sugar
4 lbs fresh figs, 8 cups washed
1 cup sugar
1 cup honey
1 cup sweet red wine (I used home made with Marechal, Alcante, Seyval, Ravat grapes. 8/26/12 I used a tawny port)
2 lemons, juice and zest of or 1/2 cup bottled lemon juice

Steps:

  • In a coffee grinder place 1 tablespoon sugar and lavender, and process to make the lavender into fine bits. The sugar will become somewhat powdered.
  • Place into a large heavy bottom pot.
  • Place the figs and remaining sugar, into the processor and pulse 5 to 6 times just to a coarse chop: add to large pot with honey, wine, lemon juice and zest.
  • Heating to a slow boil then raise heat to a fast rolling boil for 15 minutes stirring most the time. At this point you`ll see the juice turn vibrant red.
  • Spoon into sterilized jars.
  • Process for 10 minutes in a hot water bath.
