My husband is not much of a fish lover but when I made this recipe with halibut he very much enjoyed it. It's very simple.

1 clove garlic, minced
6 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley
2 (6 ounce) fillets halibut

Steps:

  • In a stainless steel or glass bowl, combine garlic, olive oil, basil, salt, pepper, lemon juice, and parsley.
  • Place the halibut filets in a shallow glass dish or a resealable plastic bag, and pour the marinade over the fish. Cover or seal and place in the refrigerator for 1 hour, turning occasionally.
  • Preheat an outdoor grill for high heat and lightly oil grate. Set grate 4 inches from the heat.
  • Remove halibut filets from marinade and drain off the excess. Grill filets 5 minutes per side or until fish is done when easily flaked with a fork.

1/8 teaspoon cayenne pepper
1-1/4 pounds beef top sirloin steak

Steps:

  • In a small bowl, combine the first 7 ingredients; set aside 1/3 cup for basting., Broil steak 4-6 in. from the heat for 8-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), basting with some of the reserved sauce. Let stand for 5 minutes before slicing. Serve with the remaining sauce.

3/4 cup orange juice
1/4 cup honey
1 tablespoon lime juice
1 tablespoon soy sauce
1 teaspoon minced garlic
1/2 teaspoon coarsely ground pepper
1 tablespoon canola oil
1 teaspoon minced fresh gingerroot
1 beef flank steak (1 pound)

Steps:

  • In a small bowl, combine first six ingredients. Reserve 1/2 cup mixture for serving. Add oil and ginger to remaining orange sauce; pour into a shallow dish. Add flank steak and turn to coat. Cover and refrigerate at least 1 hour or overnight. Cover and refrigerate reserved marinade., Drain and discard marinade from steak. Place steak on a broiler pan. 6 fish steaks, such as halibut or salmon, each about one-half inch thick with skin on and center bone left intact, about 2 1/4 pounds total weight
1/2 cup flour
Salt to taste, if desired
Freshly ground pepper to taste
1/2 cup olive oil
1 large clove garlic, peeled
1/2 cup freshly squeezed orange juice
1 tablespoon vinaigrette sauce (see recipe)
Avocado slices for garnish
Maltaise sauce (see recipe)

Steps:

  • Dredge each fish steak on both sides in flour seasoned with salt and pepper. Shake off excess.
  • Heat the oil in a skillet large enough to hold the steaks in one layer without crowding. Crush the garlic and add it. Add the fish steaks and cook on one side until nicely browned, about two to three minutes. Turn the pieces and cook about two to three minutes or until the steaks are cooked through.
  • Transfer the steaks to a serving dish.
  • Combine the orange juice with the vinaigrette and stir. Pour over the fish steaks and let stand at room temperature. Arrange the avocado slices around the fish steaks, spooning the orange juice mixture over the slices.
  • Serve with maltaise sauce on the side.

4 8- to 9-ounce fish steaks (such as halibut or salmon; each 1 inch thick)

Extra-virgin olive oil

Steps:

  • Heat 2 tablespoons olive oil in heavy large saucepan over medium-high heat. Add onion and bell pepper. Sauté until onion is translucent, about 12 minutes. Add garlic and stir 1 minute. Add olives, lemons, and wine and bring to boil.
  • Meanwhile, heat 2 tablespoons olive oil in heavy large skillet over high heat. Sprinkle fish steaks with salt and pepper. Add to skillet and sauté until first side browns, about 2 minutes.
  • Turn fish over. Add bell pepper mixture and juices; add parsley. Reduce heat to medium; simmer uncovered until fish is just opaque in center, about 5 minutes. Season with salt and pepper.
  • Divide fish and sauce among shallow bowls; drizzle with extra-virgin olive oil.

4 teaspoons kosher salt
4 teaspoons ground black pepper
4 rib eye steaks
16 ounces sour cream
6 tablespoons prepared horseradish
4 teaspoons orange zest

Steps:

  • Prepare a gas or charcoal grill for direct, high heat. (you can hold your hand 1 to 2 inches above the grate for only 2-3 seconds).
  • Rub steaks with olive oil then sprinkle with salt and pepper. Place on grill and cook, turning once, to your desired level of doneness.
  • While steaks are grilling, combine sour cream, horseradish and orange zest.
  • Remove steaks from grill, loosely tent with foil and let rest for 10 minutes.
  • Serve with a large dollop of sauce.
  • Serves 4.

1/2 cup orange juice
1/4 cup honey
1/4 cup soy sauce
2 tablespoons fresh lemon juice
1 teaspoon garlic powder
1/2 teaspoon ground ginger
4 6-ounce swordfish steaks (each about 3/4 inch thick)
Cooked white rice

Steps:

  • Combine orange juice, honey, soy sauce, lemon juice, garlic powder and ginger in 8x8x2-inch glass baking dish and stir. Add fish and turn to coat. Let marinate at room temperature 1 hour, turning occasionally.
  • Preheat broiler. Remove fish from marinade; place on broiler rack. Transfer marinade to small saucepan and boil 1 minute. Broil fish until just opaque in center, basting occasionally with marinade, about 4 minutes per side. Transfer fish to plates and serve with rice.

  • In a non-reactive shallow dish, combine the swordfish with the orange juice, ginger, sesame oil, and soy sauce and marinate for 30 minutes.
  • Prepare an outside grill with an oiled rack set 6 inches above the heat source.
  • Drain and reserve the marinade. Grill the swordfish for 6 to 7 minutes per side until the swordfish is opaque in the center.

2 swordfish steaks (about 2 to 2 1/2 pounds in all)
3 tablespoons olive oil
2 tablespoons unsalted butter
1 shallot, minced
1 clove garlic, minced
2 medium-ripe tomatoes, peeled, seeded and chopped
1/4 cup fresh thyme leaves
2/3 cup fresh orange juice
1/4 to1/2 cup dry white wine
Coarse salt and freshly ground pepper to taste

Steps:

  • Wipe the swordfish steaks dry with paper towels. Coat on both sides with two tablespoons olive oil. Set aside.
  • Heat the remaining olive oil in a skillet with one tablespoon butter. Add the shallots and garlic and cook until soft. Add the tomatoes and thyme and cook for three minutes.
  • Add the orange juice and white wine and reduce slightly, cooking for five more minutes. Season with salt and pepper and set aside until the fish is about to be grilled.
  • Preheat coals for grilling. Cook the fish about five minutes on each side, depending on the thickness of the steaks. Meanwhile, bring the sauce to a boil. Off heat, stir in the remaining butter. Pour the sauce over the steaks and serve.
