1/4 cup dried cherries
3/4 cup dry red wine or beef broth, divided
1 beef flank steak (1-1/2 pounds)
3/4 teaspoon salt, divided
1/2 teaspoon pepper, divided
1 medium onion, finely chopped
3 tablespoons olive oil, divided
4 garlic cloves, minced
1/2 cup seasoned bread crumbs
1/4 cup pitted Greek olives, halved
1/4 cup grated Parmesan cheese
1/4 cup minced fresh basil
1/2 pound bulk hot Italian sausage
1 jar (24 ounces) marinara sauce
Hot cooked pasta

Steps:

  • In a small bowl, combine cherries and 1/4 cup wine; let stand 10 minutes. Meanwhile, cut steak into four serving-size pieces; flatten to 1/4-in. thickness. Sprinkle both sides with 1/2 teaspoon salt and 1/4 teaspoon pepper. , In a large skillet, saute onion in 1 tablespoon oil until tender. Add garlic; cook 1 minute longer. Transfer to a large bowl; stir in bread crumbs, olives, cheese, basil, cherry mixture and remaining salt and pepper. Crumble sausage over mixture and mix well., Spread 1/2 cup sausage mixture over each steak piece. Roll up jelly-roll style, starting with a long side; tie with kitchen string., In the same skillet, brown meat in remaining oil on all sides. Transfer to a greased 3-qt. slow cooker. Top with marinara sauce and remaining wine. Cook and cook on low for 6-8 hours or until beef is tender. Serve with pasta.

This rolled flank steak is stuffed with all the flavors of Puerto Rico. Sweet plantains, yellow rice and black beans bring the essence of the island, while the roasted garlic seasoning and barbecue sauce amp up the flavor.

3 tablespoons plus 1 teaspoon vegetable oil, plus more for the grill grates
1/2 teaspoon ground turmeric
1/2 cup long-grain white rice
Sea salt
2 tablespoons mayonnaise
1 clove garlic, finely grated
1 small red bell pepper, cut into 1/4-inch-thick strips
1 medium yellow (firm-ripe) plantain, peeled and halved lengthwise
One 15.5-ounce can black beans, drained and rinsed
1/4 cup plus 2 tablespoons barbecue sauce, such as Stubb's® Original Bar-B-Q Sauce, plus more for serving
One 1 1/2- to 2-pound flank steak
2 tablespoons roasted garlic and herb seasoning, such as McCormick® Grill Mates® Roasted Garlic and Herb Seasoning
6 scallions, trimmed and halved lengthwise

Steps:

  • For the rice: Heat 1 teaspoon of the oil in a small saucepan over medium heat. Add the turmeric and cook, stirring, until toasted, about 30 seconds. Add the rice and stir to coat. Add 1 cup water and 1/2 teaspoon salt. Bring to a boil, reduce to a low simmer, cover and cook until all of the water has been absorbed and the rice is tender, about 15 minutes. Remove from the heat and stir in the mayonnaise and garlic. Adjust the seasoning with salt and let cool completely. Set aside.
  • Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.) If your grill has a thermometer, aim to keep the temperature at about 350 degrees F throughout grilling.
  • For the peppers and plantains: Heat 2 tablespoons of the oil in a medium flameproof skillet over the direct-heat side of the grill until hot and shimmering. Add the peppers and cook until softened, about 5 minutes; set aside. Add the plantain halves cut-side down and cook, flipping once, until golden and caramelized, about 5 minutes per side. Let cool, then cut one of the plantain pieces in half lengthwise to make 3 strips total. Set aside.
  • For the beans: Put the beans and 2 tablespoons of the barbecue sauce in a small bowl. Add a pinch of salt and squish the beans with your hands until broken down enough to hold together but not completely a paste. Set aside.
  • For the flank steak: Set the flank steak on a cutting board with a short end facing you. Starting at one long side, slice the steak in half horizontally, leaving 2 inches at the opposite long side uncut so the pieces stay together. Open up the steak like a book so you have 1 big piece. Pound the steak with a meat mallet to an even thickness of about 1/2 inch. Sprinkle both sides of the steak with the roasted garlic and herb seasoning.
  • Position the steak vertically in front of you so the short ends are at the top and bottom of the cutting board. Pat the rice into an even layer all over the steak. Starting a third of the way in from the left side of the steak, lay down one plantain strip vertically on the steak. Moving right, line up 4 scallions next to it, followed by a third of the peppers and a third of the beans. Repeat 2 more times with the remaining ingredients, starting with a plantain strip and ending with the beans. Starting at one of the long ends, roll the steak around the filling like a jelly roll. Tie closed at 1-inch intervals around the circumference with kitchen twine. Tie 1 more piece of twine lengthwise around the meat to secure it. Coat the meat evenly with the remaining 1 tablespoon oil.
  • Lightly oil the grill grates. Grill the steak on the direct-heat side of the grill to brown all 4 sides, about 10 minutes total. Move the steak to the indirect-heat side of the grill, cover the grill and cook, turning occasionally and basting with the remaining 1/4 cup barbecue sauce during the last 5 minutes of grilling; cook, testing the temperature frequently, until the very center registers 115 degrees F on an instant-read thermometer for a steak that is well done on the outside and medium rare in the center, about 30 minutes more. Transfer the steak to a cutting board to rest for 15 minutes.
  • Untie the steak and slice on a slight bias into 6 thick slices. Serve with more barbecue sauce on the side.

This is a delicious flank steak. The stuffing makes it much more filling, but there's never any left over! Can also be cooked in the microwave. Just cover and cook at medium setting (50 per cent) in a microwave-safe dish for 30 minutes, rotating dish halfway through cooking. Serve with sauce from the pan.

2 cups dry stuffing mix
1 cup boiling water
2 tablespoons butter or margarine
1 ½ pounds flank steak, pounded thin for easy rolling
2 green onions, chopped
1 red bell pepper, chopped
1 (10.5 ounce) can mushroom gravy
¼ cup red wine
1 clove garlic, minced
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine the stuffing mix, water and butter or margarine. Mix well and let stand for 5 minutes. Spoon the stuffing onto the steak, leaving a 1 inch border. Add the green onions and the red bell pepper.
  • Roll from the long edge of the steak and secure with wooden toothpicks. Place steak seam side down in a 9x13 inch baking dish.
  • In a separate small bowl, combine the gravy, wine OR apple juice, garlic and cheese. Mix well and pour over the steak.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, remove from oven and let stand before slicing.

For the fall there is nothing like a crock-pot cooking a hearty dish. This recipe is a classic when combined with buttered steamed spinach, oven roasted potatoes, and a full flavored red wine such as Barola, a Rhone, or a California Merlot.

16 large basil leaves
1 1/2 lbs flank steaks
4 slices swiss cheese (thin slices)
2 sweet Italian sausage links
salt & freshly ground black pepper
string, to tie flank steak
3 tablespoons olive oil
1 large onion, thinly sliced
8 garlic cloves
1 cup dry red wine (Burgundy)
1/2 cup beef stock
1/4 cup red wine vinegar
2 bay leaves
2 fresh basil leaves, chopped

Steps:

  • Arrange basil leaves to cover flank steak, leaving a 1/2-inch border.
  • Place Swiss cheese slices on top of basil leaves.
  • Place sausages end to end lengthwise down the center of the steak.
  • Starting on one end of steak, roll the steak over the sausage. Tie with string to secure. Season with salt and pepper.
  • Heat oil in large skillet. Add steak roll and brown on all sides, about five minutes.
  • Transfer steak roll to crock pot, seam side up. Scrape all browned bits & oil into crock.
  • Add onions, garlic, wine, beef broth, red wine vinegar, bay leaves, and chopped basil.
  • Medium setting for 6-8 hours.
  • Drain juices into sauce pan, boil gently for five minutes to reduce. Place in gravy server.
  • Slice steak roll into serving portions. Serve with gravy.

This is one of my favorite ways to cook steak. It looks like it takes hours in the kitchen but is quite easy. A very elegant "roast"; serve it to your company to impress.

1 1/2 lbs flank steaks
3 garlic cloves, minced
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1/2 red bell pepper, sliced thin
30 baby spinach leaves, washed stems removed
1/3 cup mozzarella cheese, shredded
salt and pepper
kitchen twine

Steps:

  • Pound flank steak to about 1/4 thick and as square as possible.
  • Slightly score cross grain with sharp knife (this will help it roll easier).
  • In small bowl add minced garlic, oil and vinegar pour over steak and marinade overnight.
  • Preheat oven to 350°F.
  • Place steak on plastic wrap on counter, scored side down!
  • Place baby spinach on steak followed by thin strips of red bell pepper, sprinkle with cheese,salt and pepper leaving 1/4 diameter around steak.
  • Tightly roll steak and secure with twine or toothpicks.
  • Bake 40-50 minutes or until desired doneness.
  • let sit 10 minute before cutting into 3/4" rounds.
  • This goes well with mashed potatoes and a green veggie.
  • Note: Can be rotisserie grilled about 30 minutes; let sit 10 before slicing.

BAKED FLANK STEAK ROULADE STUFFED WITH BACON AND CHEESE



Baked Flank Steak Roulade Stuffed with Bacon and Cheese image

Flank steak is tenderized and marinated, before being stuffed, rolled, and baked. Quick and easy to prepare with gourmet results.

2 (1 pound) flank steaks
2 tablespoons olive oil
1 ½ tablespoons Italian seasoning
½ teaspoon ground black pepper
2 cloves garlic, crushed
10 slices bacon
½ (8 ounce) package cream cheese, softened
½ cup shredded Italian cheese blend
¼ cup cooked chopped spinach, squeezed very dry
1 clove garlic, crushed

Steps:

  • Sandwich the flank steaks between waxed paper and pound with a kitchen mallet to tenderize.
  • Whisk olive oil, Italian seasoning, pepper, and garlic for marinade together in a small bowl. Pour into the bottom of a baking dish that's large enough to hold both steaks in a single layer. Add steaks so that one side is touching the marinade; do not flip to coat. Let sit while you prepare the filling.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until slightly browned and not yet crispy, about 8 minutes. Drain bacon slices on paper towels.
  • Mix cream cheese, Italian cheese, spinach, and garlic together in a bowl. Spread cheese mixture on the unmarinated side of the steaks. Place 5 bacon strips on top the cheese on each steak. Roll steaks up and pin with toothpicks to secure.
  • Bake, uncovered, in the preheated oven until an instant-read thermometer inserted into the center reads 135 to 140 degrees F (57 to 60 degrees C), about 45 minutes. Remove from the oven, cover, and let sit for 5 minutes before slicing.

4 medium garlic cloves , minced or 2 Tablespoons for garlic paste
2 Tablespoons diced shallot or onion
2 tablespoons fresh parsley leaves , minced
1 teaspoon sage leaves , minced
2 tablespoons olive oil , plus extra for oiling grill
1 flank steak - 2- to 2 1/2-pounds, butterfly cut
4 ounces thinly sliced prosciutto
4 ounces sliced provolone
12 skewers
Kitchen string
Salt
Black pepper

Steps:

  • In a small bowl, combine garlic, shallot, parsley, sage, and olive oil. Set aside. Lay out two long pieces of plastic wrap side by side and place flank steak on plastic wrap. Butterfly cut steak. (Lay flank stake out flat and slice in half horizontal, from side to side, stopping before you get to the edge. Open it up and your steak will suddenly be twice as the size). Ask your butcher or store butcher to do this to save you time! Place two more pieces of plastic wrap on top of steak. Pound flank steak into rough rectangle with a meat hammer or gently with a clean nail hammer so as to not pound a hole in it . Remove top plastic wrap. Spread garlic and herb oil over steak. Top with prosciutto. Place provolone on top of prosciutto, leaving a boarder around steak without cheese. Like cinnamon rolls, working with the wide end, roll up steak into a pinwheel. Cut 12 (8 inch) pieces of string. Tie up each end of steak roll. Then use the remaining string to tie up the steak into 1 inch pieces, working from outside edges to inside. Once steak is tied up, then roll log so that the seam is facing you. Place a skewer between each of the strings and on each end, making sure to skewer the edges to secure them. Slice the steak between the skewers and snip off the strings. Salt and pepper each side of the pinwheels. Cook on a preheated and oiled grill for approximately 4 - 5 minutes per side, depending on how done you want your steaks. You can also cook these on foil or a grilling mat. Once cooked, remove from grill, and let sit for 3 - 5 minutes. You can cover them with foil if you wish. Remove the skewers and devour!

  • Have your flank steak butterflied and get butcher's string to tie off. I marinate the flank steak with Good Seasonings dressing...Garlic Cheese, follow instructions on package but use olive oil not any other kind and add grated parmasean cheese, shake and pour over flank steak, cover and marinade all day.
  • Remove and open up get ready to stuff. Have sausage cooked and chopped up, steam your fresh spinach and cool before stuffing. Lay your spinach on top of the flank steak, next sausage, next provolone on top. Start rolling up and tie put back in marinade and bake in oven 325 for 1 hour, it will be medium, let rest and slice.
