4 links Italian pork sausages (or similar, whole or cut into smaller pieces)
1 pound chicken breasts (boneless and skinless, cut into bite size pieces)
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
1 large onion (chopped)
1 medium carrot (chopped)
1 leek (chopped (white and green part))
½ cup white wine (such as a sauvignon blanc or pinot grigio)
2 small shallots (chopped)
4 cloves garlic (minced)
19 ounce cannellini beans ((1 can), drained)
1 teaspoon rosemary (dried)
½ teaspoon herbes de provence
1½ cup water
2 tablespoon parsley (for garnish)

Steps:

  • Preheat your oven to 325 F degrees.
  • Brown the sausage: In a dutch oven or heavy bottomed sauce pan, brown the sausages whole. I prefer a smaller bite so I dice them up in pieces. Remove them once browned.
  • Cook the chicken: Add the chicken breasts to the Dutch oven next, season with salt and pepper, and cook until the chicken is no longer pink and cooked through. Remove and set aside.
  • Saute veggies: Add onion, carrot, and leeks to the pot in the residual sausage fat and cook until tender, about 4 minutes. Then add the shallots and garlic and saute for an additional minute.
  • Deglaze pot: Add the white wine to deglaze the pot, scraping any brown bits from the bottom.
  • Finish the cassoulet: Return the protein to the pot and add beans, herbs, water and seasoning. Bring to a simmer then cover and transfer to the oven to bake for 2 hours.
  • Garnish with parsley and serve.

1 pound dried cannellini beans
3 tablespoons kosher salt; for table salt, use half as much by volume
1 quart homemade or store-bought low-sodium chicken stock
3 packets (3/4 ounce) unflavored gelatin, such as Knox (see note)
2 tablespoons duck fat (optional)
8 ounces salt pork, cut into 3/4-inch cubes
6 to 8 pieces of chicken thighs and drumsticks, or 4 whole chicken leg quarters
Freshly ground black pepper
1 pound garlic sausage (2 to 4 links, depending on size)
1 large onion, finely diced (about 1 cup)
1 carrot, unpeeled, cut into 3-inch sections
2 stalks celery, cut into 3-inch sections
1 whole head garlic
4 sprigs parsley
2 bay leaves
6 cloves

Steps:

  • In a large bowl, cover beans with 3 quarts water and add salt. Stir to combine and let sit at room temperature overnight. Drain and rinse beans and set aside.
  • Adjust oven rack to lower-middle position and preheat oven to 300°F (150°C). Place stock in a large liquid measuring cup and sprinkle gelatin over the top. Set aside. Heat duck fat (if using) in a large Dutch oven over high heat until shimmering. Add salt pork and cook, stirring occasionally, until browned all over, about 8 minutes. Using a slotted spoon, transfer to a large bowl, leaving rendered fat in Dutch oven, and set aside. (If not using duck fat, cook pork with no additional fat.)
  • Season chicken pieces with pepper (do not add salt) and place skin side down in now-empty pan. Cook without moving until well-browned, 6 to 8 minutes. Flip chicken pieces and continue cooking until lightly browned on second side, about 3 minutes longer. Transfer to bowl with salt pork.
  • Add sausages and cook, turning occasionally, until well-browned on both sides. Transfer to bowl with salt pork and chicken. Drain all but 2 tablespoons fat from pot.
  • Add onions to pot and cook, stirring and scraping up browned bits from the bottom of the pot. Cook until onions are translucent but not browned, about 4 minutes. Add drained beans, carrot, celery, garlic, parsley, bay leaves, cloves, and stock/gelatin mixture. Bring to a simmer over high heat. Reduce to low, cover Dutch oven, and cook until beans are almost tender but retain a slight bite, about 45 minutes.
  • Using tongs, remove carrots, celery, parsley, bay leaves, and cloves and discard. Add meats to pot and stir to incorporate, making sure that the chicken pieces end up on top of the beans with the skin facing upwards. Beans should be almost completely submerged. Transfer to oven and cook, uncovered, until a thin crust forms on top, about 2 hours, adding more water by pouring it carefully down the side of the pot, as necessary, to keep beans mostly covered.
  • Break crust with a spoon and shake pot gently to redistribute. Return to oven and continue cooking, stopping to break and shake the crust every 30 minutes until you reach the 4 1/2 hour mark. Return to oven and continue cooking undisturbed until the crust is deep brown and thick, about 5 to 6 hours total. Serve immediately.

1 1/2 pounds dried great northern beans (or other white beans)
1 tablespoon kosher salt
8 ounces bacon, chopped
1 1/2 pounds boneless pork shoulder, cut into bite sized pieces
6 skin-on, bone-in chicken thighs
black pepper
12 ounces precooked smoked sausage (such as kielbasa), sliced
1 large onion, chopped
2 carrots, peeled and cut in 2 inch pieces
2 stalks celery, cut in 2 inch pieces
4 cloves garlic, smashed
1/4 cup tomato paste
2 1/4 quarts chicken broth
3 sprigs fresh thyme, plus additional for garnish

Steps:

  • Place beans in a bowl or pot and mix in kosher salt. Add enough cold water to cover the beans, plus an extra 2-3 inches of water. Leave at room temperature to soak 8 - 24 hours.
  • In a large Dutch oven or other oven safe pot (at least 6 ¾ quarts, unless you are scaling down the recipe), cook bacon over medium heat until browned, 7-10 minutes, stirring often. Remove bacon with a slotted spoon to a paper-towel lined plate.
  • Season pork shoulder pieces and chicken thighs with black pepper. (I do not use salt due to the salt in the bacon and sausage.)
  • Turn heat to medium-high. Brown the pork shoulder in the pot with the bacon fat, stirring often to get all sides browned. Remove browned pork to a plate.
  • Brown chicken thighs in the pot with the pork fat over medium-high heat, 3-5 minutes per side. Brown in 2 batches if they don't all fit in a single layer. Remove browned chicken to a plate.
  • Cook sausage in the same pot over medium heat, stirring often, until nicely browned. Remove to a plate. Pour out all but 2 tablespoons of fat.
  • Add onion, carrots, and celery, and cook for 7 minutes, stirring frequently. Add garlic and cook 3 more minutes. Add tomato paste and stir to mix. Add chicken broth. Scrape up any browned bits from the bottom of the pan.
  • Drain beans and rinse under cold water. Add beans to pot with onion. Bring to a simmer. Cover and reduce heat to low. Simmer for 1 hour.
  • Meanwhile, preheat oven to 300 degrees.
  • When beans have simmered for 1 hour, add sausage, pork, and bacon to the beans and mix to incorporate. Top with thyme sprigs. Place chicken thighs on top of the mixture, skin side up. Cover and transfer to oven.
  • Bake for 3 ½ hours. Check the liquid level about halfway through. If the beans are not covered, pour in a little water.
  • Let cool for 10 minutes before serving.

4 tbsp fat (lard if you're budgeting, goose or duck fat if you're not)
350g assorted pork , diced (a mixture of bacon, sausage and diced pork works well)
1 large onion , halved and sliced
10 fat garlic cloves , peeled
1 carrot , thinly sliced
1 tsp fennel seeds
2 tbsp red wine vinegar
600ml stock
1 tbsp tomato purée
2 rosemary stalks, leaves picked and chopped
handful of parsley , finely chopped
400g can haricot or cannellini beans , drained
few tbsp fresh or dried breadcrumbs
drizzle of oil , whatever you have
crusty bread , to serve
green vegetables , to serve

Steps:

  • Heat oven to 140C/120C fan/gas 1. Put a large ovenproof pan (with a tight-fitting lid) on a high heat. Add your fat and diced meat, cook for a few mins to seal the edges, giving it a quick stir to cook evenly. Reduce the heat to low, add the sliced onion, whole garlic cloves, carrot and fennel seeds, and cook gently to soften the veg for a few mins.
  • Pour over the red wine vinegar, scraping any meaty bits off the bottom of the pan. Add the stock, tomato purée, and half the rosemary and parsley. Bring to the boil and simmer for 10 mins, then season, cover with a lid and put into the oven for 2 hrs, removing the lid for the final hour of cooking. Stir occasionally and add the beans with 30 mins to go.
  • Remove the pan from the oven and heat the grill. Scatter the top with the remaining herbs and breadcrumbs, drizzle a little oil over the top, and return to the oven for 5-10 mins, until the breadcrumbs are golden. Serve with crusty bread and green veg.

1/2 cup olive oil
10 cloves garlic, diced
1 medium white onion, diced
2 carrots, diced
4 stalks celery, diced
1 herb bouquet tied with kitchen string: 4 stems fresh rosemary, 8 stems fresh oregano, 10 stems fresh thyme
1 dried bay leaf
2 cans cannellini beans, or 3 cups prepared white beans
2 quarts chicken stock
4 links spicy cooked chicken Italian sausage, sliced, recipe follows
1/2 cup Spinach Pesto, recipe follows
Garlic-Parmesan Crostini, recipe follows
1/4 cup olive oil
1/2 teaspoon salt
6 spicy chicken Italian sausage
1/2 pound spinach leaves
5 cloves garlic, smashed and minced
1/2 cup toasted pine nuts
1 1/2 cups extra-virgin olive oil
3/4 cup grated Parmesan
1 teaspoon kosher salt
1/4 teaspoon fresh white pepper
1/2 cup olive oil
1 French style baguette, cut into 24 (1/2-inch thick) slices
10 cloves garlic, minced
1/2 cup shaved Parmesan

Steps:

  • Heat the oil in a medium stock pot. Add the vegetables to the oil, stir frequently, and cook until lightly brown around the edges. Add remaining ingredients, except sausage, 1 at a time. Bring to a boil and simmer for 45 minutes to 1 hour. Stir in sausage and allow to cook for 10 more minutes. Place in bowls, spoon 1 tablespoon of pesto and 1/4 to 1/2 cup of sausage into each bowl. Serve with Garlic-Parmesan Crostini.
  • Heat the olive oil in a large skillet over high heat. Season the sausage with salt, to taste, and carefully place in a single layer across the skillet. Cook the sausage for 3 to 5 minutes over medium-high heat or until browned. Turn the sausages and repeat on opposite side. Remove from heat and allow to rest for 5 minutes. Slice into 1/4-inch slices.
  • Combine all ingredients in a food processor and puree until smooth.
  • Preheat the oven to 400 degrees F.
  • Heat the oil in a small skillet. Add the garlic and cook for 5 minutes or until garlic begins to brown. Remove from heat. Brush the garlic oil on the top and bottom of each slice of bread. Place the bread in a single layer over a sheet pan. Sprinkle each slice with parmesan. Bake for 10 to 15 minutes on the middle oven rack until bread browns over the top. Serve.

2 pounds country-style spareribs (or pork shoulder, cut into 1-inch-thick slices)
2 medium onions, peeled and chopped
2 garlic cloves, minced, plus 1 whole clove
2 whole sprigs fresh thyme, plus 2 tablespoons thyme leaves
1 pound bacon (slab is best), cut into 2-inch pieces
1 large stalk celery, chopped
1/2 medium carrot, peeled and chopped
Kosher salt and freshly ground black pepper to taste
4 cups chicken broth
1 cup white wine
1 (14-ounce) can diced tomatoes, with their juice
2 bay leaves
2 (14-ounce) cans white beans, drained and rinsed
2 tablespoons olive oil
1 cup coarse bread crumbs
2 tablespoons chopped parsley

Steps:

  • 1. Preheat oven to 375°F.
  • 2. Place the spareribs in a heavy pot with half the onion, half the minced garlic, and the thyme sprigs.
  • 3. Cover with a lid or foil and bake for 1 1/2 hours.
  • 4. Remove the ribs; set aside.
  • 5. In the same pot, over medium heat, brown the bacon.
  • 6. Remove all but about 2 tablespoons of the fat and add the celery, carrot, salt, pepper, thyme leaves, and the remaining onion and garlic (minced and whole) and cook for 1 to 2 minutes.
  • 7. Add the broth, wine, tomatoes, bay leaves, and beans. Bring to a simmer, then add the cooked ribs.
  • 8. Meanwhile, in a small bowl, mix the olive oil, bread crumbs, and parsley.
  • 9. Sprinkle the bread-crumb mixture over the cassoulet and bake for 1 hour, uncovered, occasionally pressing the bread crumbs into the cassoulet to thicken it.
  • 10. Let cool and serve.

140g pork rind
140g smoked streaky bacon
300g garlic sausage
600g dried haricot bean, soaked overnight in 3 times their volume of water
1 celery stick
1 small onion, preferably a white skinned mild one
1 large carrot
6 garlic cloves
2 ripe plum tomatoes
25g goose fat or 2 tbsp olive oil
1 bouquet garni
8 pinches of sea salt
2 pinches of freshly ground black pepper
1 clove, lightly crushed
2 tsp lemon juice
4 confit ducks legs
60g goose fat or 2 tbsp olive oil
40g dried breadcrumb
1 garlic clove, finely chopped
a handful of fresh flatleaf parsley, coarsely chopped

Steps:

  • To cut the meats, roll up the pork rind like a Swiss roll. With the seam underneath, use a very sharp knife to cut the roll across into thin slices, then chop the rolled-up slices across into dice. Chop the bacon into small cubes (lardons). Cut the garlic sausage into 1cm thick slices.
  • Drain the soaked beans and discard the soaking water. Tip the beans into a large saucepan, add the diced pork rind and lardons and cover with fresh cold water. Bring to the boil and blanch for 15-20 minutes. Drain the beans, rind and lardons into a colander, and discard the cooking water.
  • Roughly chop the celery, onion and carrot. Peel the garlic cloves but leave them whole. Cut each tomato into eight wedges. (You never see tomatoes in a traditional cassoulet, but chef Raymond Blanc likes them for their colour and sweetness, so he puts a couple in.) Preheat the oven to 120C/fan 100C. (If cooking in a gas oven, use mark 2.)
  • Heat the goose fat or olive oil in a 26cm flameproof casserole or deep overproof sauté pan over a low heat and sweat the celery, onion, carrot and garlic for 5 minutes. Add the tomatoes and bouquet garni and cook slowly to get a sugary caramelisation (about 5 minutes). Add the sausage, beans, pork rind and lardons and pour in 1.2 litres/2 pints water. Bring to the boil, skim off the scum, then add the salt, pepper, clove and lemon juice.
  • Transfer the casserole to the oven and cook, uncovered, for 2 hours, stirring every hour. At the end of this time, the beans will be soft and creamy in texture and the juices should have thickened. You may need to cook it for longer than 2 hours (say up to 2½ hours) to get to this stage - it depends
  • Remove the cassoulet from the oven. Bury the duck legs in the beans and sprinkle over the goose fat or olive oil, breadcrumbs and garlic. Return to the oven and cook for a further 2 hours. Serve the cassoulet in bowls, sprinkled with chopped parsley.
