BAKED APPLE FRENCH TOAST



Baked Apple French Toast image

A lovely mash-up of French toast and apple pie, this prep-ahead baked apple French toast has all the makings of a special holiday brunch dish.

One 1-lb challah or raisin challah
5 large eggs
1½ cups half & half
3 tablespoons maple syrup
2 tablespoons bourbon (optional; replace with apple cider or half-&-half if desired)
1 teaspoon vanilla extract
Heaping ¼ teaspoon salt
4 tablespoons unsalted butter
4 large Granny Smith apples, peeled and thinly sliced
¼ cup + 2 tablespoons packed dark brown sugar
6 tablespoons maple syrup
1 teaspoon ground cinnamon
Confectioners' sugar and/or maple syrup

Steps:

  • Butter a 9 x 13-inch or 3-QT baking dish. Slice the bread into ¾-inch-thick slices.
  • In a large bowl, whisk together the eggs, half & half, maple syrup, bourbon, vanilla, and salt.
  • Dip each slice of challah into the custard mixture for about 5 seconds, then arrange in an overlapping pattern in the prepared baking dish. Be sure the entire bottom of the dish is covered with the bread. Pour any remaining custard over the bread. Set aside.
  • In a large sauté pan, melt the butter over medium-high heat. Add the apples, brown sugar, maple syrup, and cinnamon. Cook, stirring frequently, until the apples are softened and the sugar-syrup is thickened, about 8 minutes. Spoon the apples and sugar-syrup evenly over the bread, making sure not to leave any of the syrup behind. If not baking immediately, cover the dish with plastic wrap and refrigerate overnight. Otherwise, proceed with the recipe.
  • Preheat the oven to 350°F and set an oven rack in the middle position.
  • Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and continue baking until puffed and golden, about 20 minutes more. Remove from the oven and, using a fine sieve, dust with the confectioners' sugar. Serve with maple syrup.

½ cup half-and-half
½ cup milk
1 tablespoon white sugar

1 (8 ounce) loaf French bread, cut into small cubes
¼ cup butter
3 Granny Smith apples - peeled, cored, and cut into small dice
¼ cup brown sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a 7x11-inch baking dish with cooking spray.
  • Beat eggs, half-and-half, milk, white sugar, and vanilla extract together in a large bowl; add bread cubes and stir to coat. Let soak until bread is moist, at least 10 minutes.
  • Melt butter in a skillet over medium heat. Stir apples and brown sugar into the melted butter to moisten the sugar completely; add cinnamon and cook, stirring regularly, until the apples are warmed yet still firm, 5 to 7 minutes.
  • Stir apple mixture into the bread mixture; pour into the prepared baking dish.
  • Bake in preheated oven until golden on top and still somewhat soft in the center, 35 to 45 minutes.

1 cooking spray
8 slices cinnamon bread
2 each Golden Delicious apples - peeled, cored, and chopped
4 large eggs, lightly whisked
1 cup half-and-half
½ cup milk
1 tablespoon white sugar
1 teaspoon vanilla extract
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ cup unsalted butter, at room temperature
½ cup packed light brown sugar
½ cup chopped pecans
2 tablespoons maple syrup
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg

Steps:

  • Spray an 8x8-inch baking dish with cooking spray to coat. Layer 4 slices bread on the bottom of the baking dish; sprinkle with 1/2 of the apples. Repeat layers.
  • Combine eggs, half-and-half, milk, sugar, vanilla extract, cinnamon, and nutmeg in a bowl. Mix well. Pour over the bread. Cover with foil and refrigerate, 8 hours to overnight.
  • Pull out of the refrigerator 1 hour before baking.
  • Preheat the oven to 400 degrees F (200 degrees C). Mix butter, brown sugar, pecans, maple syrup, cinnamon, and nutmeg together in a bowl. Spread over the top layer of apples.
  • Bake in the preheated oven until puffed and golden, 30 to 40 minutes.

This is a great make-ahead breakfast that will fill your home with the holiday aromas of cinnamon, spice and apples. It is a "soak overnight" casserole that mimics the flavors of french toast. Call it bread pudding if you like, but I know you'll call it delicious. It makes holiday morning cooking a breeze. I think I must have gotten this recipe from Taste of Home.

5 tablespoons butter
2 large apples, baking kind, cored, peeled and sliced
1 cup firmly packed dark brown sugar
2 tablespoons dark corn syrup
1 teaspoon ground cinnamon
8 slices French bread, 1-inch thick large-diameter
3 large eggs
1 cup milk
1 teaspoon vanilla
1/2 teaspoon salt

Steps:

  • In a skillet over medium heat, melt butter and add apples. Stir occasionally until tender.
  • Add brown sugar and corn syrup.
  • Cook over low heat until sugar is dissolved.
  • Pour into buttered 9-by-13-inch baking pan.
  • Arrange bread slices over apple mixture.
  • In bowl, beat eggs, milk, vanilla, salt and cinnamon until blended.
  • Pour mixture evenly over mixture in pan.
  • Cover with foil or plastic wrap and refrigerate overnight.
  • Next morning, preheat oven to 375 degrees.
  • Remove cover and bake for 35-45 minutes or until firm and brown.
  • Cool for 5 minutes, then flip onto large platter or foil covered cookie sheet with 1-inch edge.
