1 French baguette, cut into 1/2 inch thick circles
8 plum tomatoes, diced
1 cup chopped fresh basil
½ red onion, minced
freshly ground black pepper
3 cloves garlic

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Combine tomato, basil, and red onion in a small mixing bowl; stir well. Season with freshly ground black pepper. Set aside.
  • Arrange bread on a baking sheet. Place in oven, and bake until well toasted, approximately 5 minutes.
  • Remove bread from oven, and transfer to a large serving platter. Let bread cool 3 to 5 minutes. Rub garlic into the top of each slice of toast; the toast should glisten with the garlic. Spoon the tomato mixture generously onto each slice, and serve.

  • In a small bowl, combine the first 10 ingredients. , Spread baguette slices with butter; top each with a cheese slice. Place on ungreased baking sheets. Broil 3-4 in. from the heat until cheese is melted, 3-5 minutes. With a slotted spoon, top each slice with about 1 tablespoon tomato mixture.

3 large tomatoes
1 cup packed fresh basil or 1/2 teaspoon dried basil
1/3 cup romano cheese or 1/3 cup parmesan cheese
1/3 cup finely chopped red onion
1/4 cup capers, rinsed
2 tablespoons extra virgin olive oil
1 tablespoon wine vinegar
2 cloves garlic, smashed
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large pot of boiling salted water, cook pasta until tender but firm, about 8 minutes.
  • Reserving 1/3 cup of the cooking liquid, drain and return to pot.
  • Meanwhile, chop tomatoes.
  • Chop basil finely.
  • Add tomatoes and basil to pasta.
  • Add reserved cooking liquid, cheese, red onion, capers, olive oil, vinegar, garlic, salt and pepper.
  • Toss to coat.

1 cup basil leaves, chopped
1/2 head of garlic (about 9 cloves), chopped (not pressed)
3/4 teaspoon red wine vinegar
1/2 cup shredded parmesan cheese
1 teaspoon kosher salt
1/8 teaspoon ground black pepper
1/3 cup olive oil
Melba Toast (or bagel chips)

Steps:

  • Mix tomatoes, basil, garlic and cheese until each bite has a sufficient amount of each. Add more if necessary. Toss in salt and pepper,red wine vinegar and stir. Add olive oil. Should be nice and shiny. Let sit in refrigerator to allow flavors to mingle. Enjoy!
  • To make bruschetta bread, hollow out a loaf of french bread. Spoon in the bruschetta and top with an extra 1/2 cup of shredded parmesan cheese. Bake in a 450 degree oven for about 10 minutes, until cheese is melted and bread is toasted. Cut and enjoy.
  • For pasta, prepare noodles according to package (I like angel hair pasta). Grill chicken with salt and pepper. Slice into thin strips. Heat bruschetta in microwave for about 2-3 minutes, until warmed. Serve over warm pasta with chicken strips and extra parmesan cheese. Enjoy!

20-24 ounces fresh tomatoes ((4-5 roma tomatoes or 3-4 regular tomatoes), diced small)
¼ cup fresh basil (chopped finely)
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 clove garlic (minced)
½ teaspoon each salt & pepper ((or to taste))
1 baguette
2 tablespoons olive oil (or to taste)
1 clove fresh garlic (for toast)

Steps:

1/3 cup olive oil
3 Tablespoons red wine vinegar
2 Tablespoons capers
1 clove minced garlic
salt and pepper
8 ounces fresh mozzarella (cubed or bocconcini)
2 cups cherry tomatoes halved
1/2 cup chopped fresh basil
1/4 cup chopped fresh flat-leaf parsley
1 box orecchiette (or any other tube pasta you have)
1/4 cup reserved cooking liquid
1/3 cup roasted pine nuts
Parmesan cheese

Steps:

  • In a large bowl, combine the olive oil, vinegar, capers, and garlic. Season with salt and pepper.
  • Add the tomatoes and mozzarella.
  • Give a good toss. Let this marinate for 30 minutes if possible. I do this if I have time, if I don't I do this while the water is boiling for the pasta.
  • Toss in the basil and parsley. I reserve a little for adding at the very end.
  • Cook the pasta in a pot of salted water.
  • Make sure to reserve at least 1/4 cup of the cooking liquid.
  • Add the pasta and the reserved pasta water. Toss well. Check for seasoning. Add salt and pepper as needed.
  • Sprinkle the reserved herbs on the top. Add the pine nuts and some Parmesan cheese.

1 pound Roma tomatoes (about 6, seeded and diced)
2 cloves garlic (minced)
½ cup torn fresh basil (plus leaves for garnish if desired)
1 tablespoon balsamic vinegar
Kosher salt
Freshly ground black pepper
1/2 pound angel hair pasta (half of a 16 ounce box)
1-1 ½ pounds boneless, skinless chicken breast ((about 2))
Balsamic glaze (optional)

Steps:

  • Combine ingredients in a medium bowl.
  • Season generously with salt and pepper and let sit for out on the counter while you prep and cook the chicken and pasta.
  • Cook pasta to al dente according to package instructions. Drain the water and return pasta to the pan. Drizzle with a tablespoon of olive oil and toss to keep the pasta from sticking together as it sits. Set aside.
  • Meanwhile, heat 1 tablespoon of olive oil or butter in a large skillet over medium heat.
  • Season chicken breasts with salt and pepper and add them to the skillet. Cook about 4-5 minutes per side or until chicken is no longer pink and registers 165 degrees on a meat thermometer. Depending on the thickness of the breasts it could take up to 8 minutes per side. Transfer to a plate to rest, covered with foil to keep warm.
  • To the skillet, add 1 tablespoon of olive oil and the bruschetta mixture. Cook, stirring often, just long enough to heat through; 1-2 minutes. Turn off the heat and add the pasta to the pan. Toss to coat, adding more olive oil if needed.
  • Slice chicken breasts and add to the pasta.
  • Divide into bowls and serve immediately, garnished with fresh basil. Drizzle with balsamic glaze, and added shredded Parmesan or Mozzarella, if desired.

1 Clove Garlic (minced)
1/2 tsp Oregano
1/4 tsp Fine Sea Salt (more or less to taste)
1/4 tsp Black Pepper
5 tbsp Extra-Virgin Olive Oil (divided)
Parmesan Cheese (Burrata, Crumbled Feta or Goat Cheese, as desired, optional)
3 tbsp Balsamic Vinegar Glaze (as desired)
500 g Spaghetti Pasta (or pasta of choice)

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta (500g) and cook according to package directions or until al dente.
  • In the meantime, make the bruschetta. Dice tomatoes and onion, set aside in a medium bowl. Add fresh basil, minced garlic, oregano, salt, pepper and 3 tbsp olive oil to the serving bowl. Stir to combine, set mixture aside to marinate for 10 to 15 minutes or until pasta has boiled.
  • When the pasta has finished cooking to al dente, drain, drizzle with 2 tbsp olive oil and transfer to a large heatproof serving bowl or skillet. Add bruschetta to the pasta and toss together until well combined; season to taste if needed. Drizzle with balsamic glaze, top with extra basil, cheese (optional), and black pepper if desired and serve immediately!
