FRIED PEPPERS & ONIONS
Fried peppers and onions are a crowd-pleasing side dish for just about any meal!

Steps:
- Heat a large nonstick or cast iron skillet over medium-high heat.
- Add olive oil, and once sizzling, add sliced bell peppers and sliced onions.
- Add in the salt, red pepper flakes, black pepper and dried oregano.
- Stir to coat the vegetables with the olive oil and seasonings.
- Cook, stirring occasionally, for about 15 minutes until the peppers and onions have softened and started to caramelize.
- Add the garlic and cook another minute or two until fragrant.
- Add in the red wine vinegar.
- Taste and season with more salt if necessary.
- Remove the peppers and onions from the heat, stir in chopped parsley, and serve warm or at room temperature.

SAUTEED ONIONS AND PEPPERS
Steps:
- Cut the onions in half, and then slice them into 1/8-inch-thick half-rounds. (You will have about 10 cups of onions.)
- Heat the olive oil in a large saute pan over medium heat. Add the onions and saute for 15 to 20 minutes. Add the peppers, garlic, vinegar, tomato puree, pepper flakes, salt and pepper and continue cooking an additional 10 minutes.
AIR-FRIED ROASTED SWEET PEPPERS AND ONIONS
Serve these sweet peppers and onions with grilled steak, chicken, or fish. They also work well with tacos and fajitas.

- Heat oil in large skillet over medium heat.
- Add peppers, onion, garlic and vinegar and saute 10 minutes.
- Cover and cook until tender, about 5 minutes longer.
- Season to taste.

- Preheat the fryer. In a mixing bowl, add the onions. Season the onions with salt. Add the hot sauce and toss the onions in the sauce to coat each ring completely. Marinate the onions for at least 1 hour. In another mixing bowl, add the flour. Season the flour with Essence. Dredge the onion rings in the season flour, coating each ring evenly. Shake off the excess flour and fry the rings in batches. Fry the onion rings until golden brown, about 3 to 4 minutes. Remove the onion rings from the oil and drain on a paper-lined plate. Season the rings with Essence. Continue the frying process until all of the onions are fried. Serve the onion rings hot.
- Combine all ingredients thoroughly.

FRIED MUSHROOMS, ONIONS AND PEPPERS
This is an easy side dish. It goes well with steak, this recipe is, as far as I know, my own. It was created by my mother, who when she married my father, hadn't had onions while my father hadn't had mushrooms. The pepper part is a latter addition, by me. As with any recipe calling for any type of pepper, feel free to substitute. For instance, if you like jalapenos, substitute 2 to 3 jalapeno peppers for the bell pepper(s).

Steps:
- Put 1 to 1 1/2 tablespoons bacon grease in the bottom of a medium fry pan, over medium heat.
- Once grease has melted, add mushrooms and onion.
- Cook over medium heat until onion is translucent, and mushrooms have given up most of their liquid, stirring approximately every 5 minutes.
