SKINNY FROZEN MINT CHOCOLATE CHIP PIE

Skinny Frozen Mint Chocolate Chip Pie image

A lightened-up frozen mint chocolate chip pie with a cool minty Oreo crust. No baking!

Provided by Sally

Categories     Frozen Desserts

Time 4h30m

Number Of Ingredients 9

20 Cool Mint Creme Oreos (or regular Oreos)
1/4 cup (60g) unsalted butter, melted
8 oz cream cheese, softened to room temperature
8 oz frozen whipped topping (such as Cool Whip)*
1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
1/4 cup milk
1/4 cup chocolate syrup
1 cup Andes Mints Creme de Menthe Baking Chips or chopped Andes Mints

Steps:

  • First, make the Oreo cookie crust: Crush the mint Oreos into a fine crumb using a food processor or blender. Using a rubber spatula or wooden spoon, mix the crushed Oreo crumbs and melted butter together. It may look like there is not enough butter, but it will come together. Place into a 9-inch pie pan, pressing the crumbs onto the bottom and up the sides as much as it will fit. Try to make the crust 1/8 inch thick all around. It does not have to be perfect. Set in the freezer as you make the filling.
  • Mix the softened cream cheese, milk, sugar, and cocoa powder together in a large bowl. I used an electric mixer for ease, but a rubber spatula or wooden spoon would do the trick. Mix until the mixture is completely smooth. Gently fold in the whipped topping.
  • Remove pie crust from the freezer and layer 1/2 of the pie filling onto the crust. Sprinkle with 1/2 of the Andes Mint baking chips. Layer with the rest of the pie filling, swirling to make it completely smooth on top. Top with chocolate syrup and remaining Andes Mint baking chips.
  • Freeze for at least 4 hours or overnight. 20 minutes before serving, remove from the freezer and let sit out to gently thaw. This made the pie much easier to cut. I topped with more chocolate syrup before serving, but that is completely optional.

FROZEN MINT CHOCOLATE CHIP PIE

Frozen Mint Chocolate Chip Pie image

Frozen Mint Chocolate Chip Pie is perfect for summer! Mint Oreo crust, easy homemade mint chocolate chip ice cream, and a thick layer of chocolate ganache.

Provided by Tessa Arias

Categories     Dessert

Time 4h35m

Number Of Ingredients 14

20 (226 grams) mint Oreo cookies ((keep feeling intact))
4 tablespoons (57 grams) unsalted butter, (melted and cooled)
2 cups heavy cream, (chilled)
2 cups whole milk, (chilled)
3/4 cup (150 grams) granulated sugar
1 tablespoon corn syrup
1/4 teaspoon fine salt
1/2 teaspoon vanilla extract
1 teaspoon peppermint extract
3 to 4 drops green gel food coloring ((optional))
1 cup (224 grams) miniature chocolate chips
4 ounces (113 grams) semisweet chocolate, (chopped)
1/2 cup heavy cream
1 tablespoon unsalted butter

Steps:

  • Preheat the oven to 350°F. Spray a 9-inch spring-form pan with nonstick cooking spray.
  • In the bowl of a food processor, pulse the cookies until finely ground. Add the melted butter and pulse until moistened. Press the crumb mixture into the prepared pan, using the bottom of a measuring cup to press firmly into the bottom and up the sides of the pan. Bake for 10 minutes then cool completely. Cover and freeze the crust until ready to use.
  • In a large mixing bowl, whisk together all of the ice cream ingredients except the chocolate chips until the sugar is dissolved. Pour into an ice cream maker and freeze according to the manufacturer's directions. About 5 minutes before the ice cream is done churning, add the chocolate chips.
  • Spread the ice cream into the pie crust. Press plastic wrap against the surface of the ice cream and freeze for at least one hour, or until firmed.
  • Place the chocolate in a medium heatproof bowl. Place the cream in a small saucepan over medium heat and bring to a gentle simmer. Pour the cream over the chocolate and add the butter. Let stand for 3 minutes before stirring until smooth and shiny. Let cool slightly before pouring over the ice cream. Freeze until firmed, about 3 hours or overnight.
  • The pie can be stored wrapped in plastic in the freezer for up to 1 week. The colder the pie is, the easier to will be to cut nice clean pieces of pie.

BREATH MINT PIE

Breath Mint Pie image

Provided by Guy Fieri Bio & Top Recipes

Categories     dessert

Time 3h15m

Yield 12 servings

Number Of Ingredients 7

6 ounces (1 1/4 sticks or 10 tablespoons) butter
6 cups chocolate sandwich cookie crumbs (recommended: Oreo(r))
1 quart mint chocolate chip ice cream, slightly softened
1 pound dark chocolate covered mint candy, frozen (recommended: Junior Mint)
1 cup whipped cream
1 cup chocolate syrup
12 mint sprigs

Steps:

  • In saute pan, heat butter over medium-low heat until softened. Remove from heat, add cookie crumbs to pan and stir until butter is evenly distributed through the crumbs.
  • Line a "half sheet" size pan (approximately 13 by 18 by 2 inches deep) with plastic wrap. Spread half the cookie crumb mixture over the plastic.
  • With a mixer on lowest speed (or by hand), combine ice cream and mint candy, mixing slowly and trying to avoid breaking up the mints.
  • Pour the ice cream mixture over the cookie crumbs and spread gently throughout the pan, trying not to break the cookie crumb base. Top evenly with remaining cookie crumb mixture, cover with plastic wrap and re-freeze for a few hours.
  • Cut into 12 triangular pieces, by cutting in half lengthwise, then thirds crosswise, and cutting each resulting rectangle into right triangles. Serve each triangle topped with whipped cream, chocolate syrup, and mint sprigs.

FROZEN CHOCOLATE PIE

Frozen Chocolate Pie image

Extraordinarily rich and decadent, this pie is a chocolate lover's dream. Like many of my favorite recipes, it is from the Betty Crocker Recipe Card Library. You can use a traditional, graham cracker or cookie crumb pie crust, but my favorite is a chocolate cookie crumb crust (that I will sometimes mix with some very well-dried and finely chopped maraschino cherries).

Provided by Charmed

Categories     Pie

Time 6h15m

Yield 8 serving(s)

Number Of Ingredients 10

1 cup confectioners' sugar
1/2 cup butter, softened
6 ounces semisweet chocolate or 1 cup semi-sweet chocolate chips, melted and cooled
1 teaspoon vanilla
4 eggs
1 9-inch baked pie crust (traditional, graham cracker, or cookie crumb crust)
1 cup whipping cream, well-chilled
2 tablespoons confectioners' sugar
chocolate curls (optional)
chocolate chips (optional)

Steps:

  • In small bowl, combine 1 cup of confectioner's sugar with the butter on the low speed of a mixer until fluffy.
  • Blend in the chocolate and vanilla.
  • Then, on high speed, beat in the eggs, one at a time, beating thoroughly after each addition.
  • Pour into the prepared pie shell and cover with plastic wrap.
  • Freeze for at least 6 hours or until firm.
  • For easier cutting, remove the pie from the freezer 10 to 15 minutes before serving.
  • When ready to serve, remove the plastic wrap.
  • Then, in a chilled bowl, beat the whipping cream and 2 tablespoons of confectioner's sugar until stiff.
  • Pile decoratively onto the pie, and top with garnish if desired.
  • NOTE: I have found my small hand-held mixer works better for this than my stronger tabletop model.
  • If you use a tabletop mixer, be careful you don't overmix.
  • This pie should be thick, dense and creamy, and overbeating the eggs will give it a more mousse-like texture.
  • It's by no means bad that way, but it is much better when the consistency is thick.
