Steps:
- Soften the butter in a bowl.
- Crush the garlic and peppercorns.
- Mix together the garlic, peppercorns and mustard with the butter.
- Rolls like a fat cigar and place in fridge to set hard.
- Preheat the oven to 220°C (fan 200°C/425°F/gas 7).
- Season the fillets with salt and pepper and sear in a really hot pan with melted butter and a little cooking oil.
- When the fillet is brown all round place in the oven for between 5 [rare] to 12 [well done] minutes depending on level of doneness.
- Get your fillet out, rest it properly then serve with a slice of two of flavoured butter on top.

GARLIC-MUSTARD GRILLED BEEF SKEWERS

- Heat grill to high. Skewer 2 pieces of the beef onto 2 skewers so that the meat lies flat. Brush the meat liberally on both sides with the Garlic-Mustard Glaze. Grill the meat for 2 to 3 minutes per side until golden brown and cooked to medium-rare doneness, brushing with the remaining glaze while grilling. Remove from grill and serve.
- Whisk together all ingredients in a small bowl. Cover and let sit at room temperature for 30 minutes before using.
GARLIC ROAST BEEF

Steps:
- Preheat the oven to 475 degrees F.
- Place the beef in a roasting pan with a rack. Sprinkle with salt and pepper all over.
- Add the garlic, oil, mustard and honey to a food processor. Pulse until the garlic is finely chopped. Rub the mixture evenly all over the beef. Pour the beef broth in the bottom of the roasting pan.
- Bake until the internal temperature is 130 to 135 degrees F, 30 to 35 minutes.
- Transfer the beef to a carving board and allow to rest for 30 minutes. Heat the roasting pan over medium heat and scrape up any browned bits. Pour any pan drippings onto a rimmed platter. Carve the beef into thick slices and transfer to the platter. Sprinkle with the parsley. Serve warm or at room temperature.
MUSTARD-ROASTED BEEF TENDERLOIN
If your meat is not a thick center cut, the cooking time will be less. Letting the roast rest allows the juices to distribute.

- Preheat oven to 425 degrees. Season beef all over with salt and pepper. Whisk together butter and mustards; coat beef all over with mixture. - Whisk together all ingredients for glaze in a small bowl. Cover and let sit at room temperature for 30 minutes before using.

- Heat grill to high.
- Skewer 2 pieces of beef onto each skewer, keeping them together at one end of the skewer. Place the skewers in a baking dish or on a baking sheet, pour half of the glaze over the meat, and turn to coat.

GARLIC-MUSTARD GRILLED BEEF SKEWERS
Yum, perfect for Father's Day or any warm, summer night! Be sure to leave the skewers on the grill long enough to get the beef nice and crusty on both sides. This means you have to be patient, and remember: Don't turn them often. Can also add grape tomatoes, mushrooms and chunks of red onion to the skewers. Sometimes I grill the veggies on separate skewers because they can cook quicker than the meat. Then I put all on a platter and let guests choose what they want. Plan ahead, needs to marinade for 30 minutes up to 4 hours. This is adapted from a Bobby Flay recipe. Prep time does not include marinade time.

- 1. Preheat oven to 375° F. 2. Melt half the butter in large frying pan. Fry onion and garlic over medium heat for 4 minutes until softened. Spoon into a bowl, set aside. 3. Cut a pocket along the center of the beef fillet, approximately 1/4-inch deep. Season with pepper. Melt remaining butter in pan, brown beef on all sides. Pour in wine, cook 1 minute to deglaze pan. Remove beef onto a sheet of foil. 3. Mix remaining ingredients into onion mixture. Fill the beef pocket with stuffing. Wrap up in foil loosely. Place on a tray and bake in preheated oven for 30-35 minutes for medium doneness or as desired. 4. Stand for 10 minutes then cut into 8 slices. - In a pestle and mortar, crush peppercorns and garlic with a pinch of salt until you have a smooth-ish paste, then stir in the vinegar. Sit the beef in a non-metallic dish, then rub all over with the paste. Leave in the fridge for a few hrs, but no longer.
- To cook, place a griddle pan over a very hot heat. Rub the marinade off the meat, then season with a little more salt. Cook meat until charred on each side - about 5 mins on each side for rare; if the cut is very thick, you may want to roast it in a hot oven for 5 mins after searing. Lift onto a chopping board, then rest for 5 mins before carving into slices and serving with chips, if you like.
