GERMAN APPLE CAKE RECIPE
German Apple Cake (Versunkener Apfelkuchen) is a traditional German dessert that is so easy to make even if you aren't totally kitchen confident! This easy coffee cake is the perfect fall dessert that tastes best with a dollop of whipped cream on top. CHECK OUT THE RECIPE VIDEO BELOW!

- Preheat oven to 350°F (175°C) and grease the bottom of a 9- or 10-inch springform or use parchment paper.
- Peel, quarter, and core the apples. Thinly slice each quarter lengthwise without cutting all the way through (like in the image above).
- In the bowl of a stand mixer fitted with the paddle attachment, beat butter until creamy, about 1 minute. Add sugar and mix until light and fluffy, about 2 minutes.
- Add eggs one at a time and beat for 30 seconds on high speed after each addition.
- Add vanilla sugar (or extract) and lemon juice. Beat until combined.
- Combine cake flour, baking powder, and salt. With the mixer running on low speed add half of the flour, then 1 tbsp milk, followed by the remaining flour, and then the remaining milk. Beat until just combined. Don't overmix!
- Transfer batter into prepared pan and smooth the top with a spatula. Distribute the apples with the sliced side up on top (see image above).
- Bake in the lower third of the oven for 45 minutes, until lightly browned and a skewer comes out clean.
- Transfer to a cooling rack and remove the springform ring. Let cake cool on the bottom of the springform pan to room temperature.
- Sprinkle powdered sugar over the cooled cake and serve with sweetened whipped cream.

VERSUNKENER APFELKUCHEN (GERMAN SUNKEN APPLE CAKE)
For this apple cake you need to cut the apples like a fan not only for looks - this little trick makes the cake especially moist. I like to use tart apples. You will need between 5 and 7 apples, depending on their size.

- Beat butter in a large bowl with an electric mixer until creamy. Gradually add sugar and mix until well combined. Add eggs, 1 at a time, mixing well after each addition.
- Mix 1 1/2 cups plus 2 tablespoon flour and baking powder in a separate bowl. Add to batter and mix until batter is smooth.
- Peel and quarter apples. Remove core and cut apples like a fan from the outside towards the inside but do not cut all the way through.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a springform pan with butter.
- Spoon batter into the prepared springform pan and spread out evenly. Set cut apple quarters in a circle into the batter with the round, cut side facing up. Gently push apples into the batter.
- Bake in the preheated oven until cake is golden brown, about 45 minutes.
- Remove from oven, allow to cool, and dust cooled cake with confectioners' sugar.

- Preheat the oven to 350°F Grease a kugelhopf or 10-inch Bundt pan.
- Sift together the flour, baking powder, and salt. Beat the butter until smooth, about 1 minute. Gradually add the sugar and beat until light and fluffy, about 4 minutes. Beat in the egg yolks, one at a time. Stir in the flour mixture and milk.
- Beat the egg whites on low speed until foamy, about 30 seconds. Increase the speed to high and beat until stiff but not dry. Fold one-fourth of the whites into the batter, then gently fold in the remaining whites.
- Pour half of the batter into the prepared pan. Spread with half of the apples. Top with the remaining batter, then the remaining apples.
- Bake until golden brown, 50 to 60 minutes. Let cool in the pan for 20 minutes, then transfer to a rack and let cool completely.
- To make the glaze if using: Combine all the glaze ingredients, stirring until smooth and of pouring consistency. Drizzle over the cake and let stand until set.

APFELKUCHEN
Apfelkuchen is a german apple cake or pie-like dish. It is one of those recipes where every family has a different recipe so there are hundreds of different recipes. This was a recipe that I found on the internet many, many years ago for a project in German class in high school and have not found one similar to it anywhere. I LOVE this Apfelkuchen and being of mostly German heritage I love it even more! It is more of a custard type pie but it is by far one of the best apple dishes I have ever had! I always make sure to make it every year when apples are in season!

- Place pie shell in a round cake pan (not a pie pan). Toss apples with cinnamon and place in pie shell. Cream 2 tablespoons butter, sugar, and eggs together. Add salt, vanilla, and cream cheese. Blend until just smooth and pour over apples. Combine brown sugar, flour, and 2 tablespoons butter, add pecans. Crumble this mixture on top of pie. Bake at 375 degrees for 45 minutes. Reduce heat to 350 degrees and continue to bake for 15 minutes. Allow to cool and serve.

- Prepare the springform pan by greasing it. If not non-stick, line the bottom with parchment paper.
- In a medium mixing bowl, beat butter, sugar, and eggs together until creamy. Stir in flour, baking powder, and vanilla until well mixed. Spread batter in prepared springform pan and smooth the top. Preheat the oven to 325 degrees F.
- Thinly slice apples with a mandolin or paring knife. Either group the apples together (about 1/3 of an apple) and gently press into the cake batter. This results in a soft, slightly firmer apple. Or, fan out the apples around the cake in a single layer for soft, tender apples. Sprinkle the top with 1/3 cup of sugar and cinnamon.
- Bake cake for 50 minutes, until it the top is golden in color. Serve warm. If desired, lightly dust with confectioners sugar before serving.
