Steps:
- Melt butter in a large skillet over medium heat.
- Cook and stir carrots and parsnips in melted butter until lightly browned on edges, 8 to 10 minutes.
- Stir orange juice, chicken stock, lemon juice, salt, and black pepper into carrots and parsnips. Bring to a boil, reduce heat to low, and cover. Simmer until liquid reduces to a syrup, about 10 minutes. Stir often.
- Season with more salt and black pepper if needed; sprinkle with chives.

Steps:
- In a large nonstick skillet combine parsnips, carrots, orange juice, dried cranberries, and ginger.
- Bring to boiling; reduce heat to medium.
- Cook, uncovered, for 7 to 8 minutes or until vegetables are crisp-tender and most of the liquid has evaporated, stirring occasionally.
- Stir pears, pecans, brown sugar, and butter into mixture in skillet.
- Cook, uncovered, for 2 to 3 minutes more or until vegetables are glazed.

GLAZED CARROTS, PARSNIPS AND PEARL ONIONS

- In a medium hot skillet, add 1/2 tablespoon of butter and cook the garlic and ginger until soft, about 1 minute. Add the carrots, parsnips and onions and season. Cook 5 minutes to soften then add the stock, soy sauce and simmer. Reduce by 50 percent, about 12 to 15 minutes and check for seasoning. Lift with the butter and reserve hot.

GLAZED CARROTS & PARSNIPS WITH CHESTNUTS
Steps:
- 1. In a large skillet, arrange carrots & parsnips in single layer. Add salt and barely cover with water. Bring to a boil, reduce heat and simmer covered until crisp-tender, about 6-8 minutes. 2. Remove veggies and set aside to drain well. Empty skillet and wipe clean. 3. In skillet, add butter, brown sugar, honey, ginger, chiles, rosemary sprigs. Heat on medium high until bubbling, stirring ofter until slightly reduced, about 5 minutes. 4. Add chestnuts. Simmer on medium high about 3 minutes, stirring often. 5. Add carrot & parsnips. Simmer, stirring often, until vegetables are slightly caramelized and sauce is a glaze, about 5 minutes. Season with salt & pepper and serve.
ROASTED CARROTS AND PARSNIPS WITH THYME
Steps:
- Preheat the oven to 350 degrees F.
- Peel the carrots and parsnips and cut them in half lengthwise, larger ones can be quartered. Place them on a large rimmed baking sheet.
- Drizzle the carrots and parsnips with the olive oil and honey. Season with salt and pepper and toss to coat. Scatter the thyme sprigs on top. Place them in the preheated oven.
- After 10 minutes, give the veggies a toss and put back in the oven for another 10 minutes until the vegetables are soft and slightly caramelized. Serve warm.
