- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine sausage, biscuit baking mix and cheese. Form into walnut size balls and place on baking sheets.
- Bake in preheated oven for 20 to 25 minutes, until golden brown and sausage is cooked through.

Steps:
- Heat oven to 400 degrees. Combine ingredients in a bowl and mix with your hands until there are no dry crumbs. Form into balls about one inch in diameter and place on a baking sheet. If you have the time, the sausage balls hold their shape better if refrigerated overnight before baking. (They also freeze extremely well. Bake them straight out of the freezer, adding a few more minutes to the baking time.)
- Bake until the balls are golden brown, about 8 to 10 minutes. Serve immediately.

SAUSAGE BALLS
Sausage balls are a classic party appetizer for a crowd and they couldn't be simpler--just mix, shape and bake. We've included thinly sliced scallions in our version for subtle onion flavor and a touch of color.

- Preheat the oven to 350 degrees F and line 2 baking sheets with parchment.
- Combine the sausage, baking mix and scallions if using in a large bowl and gently knead with your hands until the baking mix is fully incorporated. Add the Cheddar and continue to mix until the cheese is evenly distributed.
- Using a tablespoon to scoop, divide the mixture into walnut-size pieces and shape into balls with your hands. Arrange on the lined baking sheets about 2 inches apart, about 20 balls per baking sheet.
- Bake until the sausage balls are golden brown and cooked through, about 26 minutes. Serve warm or at room temperature.

- Preheat the oven to 375 degrees F. Spray a baking sheet with vegetable oil cooking spray.
- Combine all ingredients in a large glass bowl. Mix well with your fingers. The mixture will be very crumbly. Form into 1 inch balls, squeezing the mixture so it holds together, then rolling it between the palms of your hands to form balls.
- Place the balls on the baking sheet. Bake for 18 to 20 minutes or until golden brown. To prevent sticking, move the balls with a spatula halfway through cooking.
- To make the dip, combine the mayonnaise and mustard. Serve with sausage balls.

GOLDEN SAUSAGES
This is an old family recipe that my Mother and Grandmother used to make... I have no idea where they got it from, it's scribbled in Gran's writing in my Mothers' cookbook :) We love it and it's a favourite weekend "easy meal".This recipe was a huge childhood favourite of mine, I adored it to bits, as did my cousins... now that I have made it as an adult again I see that my tastes must have changed.. and a perfect example of how your memory can play tricks on you... this a relatively bland recipe, far more than I remember... so now the light dawns why my Gran made it so often, My grandfather was the King of Bland and hated anything too spiced up... so if you are cooking for people like my Granddad and for kids, this recipe will hit the spot :)

- Boil sausages and cut into thirds.
- Grate the apple, onion and carrots.
- Mix the flour, sugar, vinegar, Worcestershire sauce and tomato sauce into a paste.
- Add the boiling water to paste and mix well.
- Add paste mixture to sausages and apple, onion and carrots.
- Cook at 180°C / 360°F in oven for 1 1/2 hours.
GOLDEN SESAME BALLS
A Chinese pastry with lotus paste filling.

- Combine sugar and shortening in a bowl to make a paste. Add rice flour, baking powder, and ice water and mix everything into a dough ball. Wrap in plastic film and refrigerate for 30 minutes.
- Remove dough from fridge and separate into 6 equal portions. Roll into balls and flatten the balls into thin disks. Portion lotus paste into 6 equal parts and roll into small balls. Set a lotus paste ball in the center of the flattened dough disks and wrap dough around the lotus paste. Roll between the palms of your hands until all the seams are gone and no lotus paste is showing.
- Pour sesame seeds onto a saucer and roll finished balls in the sesame seeds. Roll balls between your palms one more time to make sure sesame seeds stick.
- Pour oil into a pot and heat to 350 degrees F (175 degrees C). Drop balls into the hot oil and fry until golden brown, 5 to 6 minutes. Remove from the hot oil with a slotted spoon and drain on a paper towel-lined plate to absorb the excess oil
- Serve - be careful! The lotus paste inside the balls will be very hot.
